2 (10 ounce) packages frozen broccoli spears
¼ cup margarine
6 tablespoons all-purpose flour
salt and ground black pepper to taste
2 cups chicken broth
½ cup heavy whipping cream
3 tablespoons white wine
3 cups cooked turkey breast, sliced
¼ cup shredded Monterey Jack cheese

Steps:

  • Place broccoli in a saucepan with 4 cups of water. Bring to a boil; reduce heat, cover, and simmer until tender, 5 to 8 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt margarine in a saucepan over medium heat; stir in flour, salt, and pepper and mix well. Pour in chicken broth; cook and stir until sauce thickens and bubbles, about 10 minutes. Add cream and wine; stir until well-combined.
  • Arrange broccoli on the bottom of a 7x12-inch baking dish. Pour half of the sauce over the broccoli. Top sauce with sliced turkey. Stir Monterey Jack cheese into the remaining sauce in the saucepan. Pour cheese sauce over the turkey.
  • Bake the turkey divan in the preheated oven until bubbly, about 20 minutes. Broil until the cheese sauce is golden, about 5 minutes.

1/4 cup MIRACLE WHIP Dressing
1/4 cup milk
1 pkg. (10 oz.) frozen broccoli spears, cooked, drained
3/4 lb. cooked turkey, cut into 4 slices

Steps:

  • Heat oven to 350°F.
  • Cook VELVEETA, dressing and milk in saucepan on low heat until VELVEETA is completely melted and mixture is well blended, stirring frequently.
  • Place broccoli in 10x6-inch baking dish; top with turkey and VELVEETA sauce.
  • Bake 20 to 25 min. or until heated through.

  • In a saucepan, cook broccoli until crisp-tender. Meanwhile, in another saucepan, melt butter; stir in flour and bouillon until smooth. Gradually add milk. There are a few similar recipes on Zaar to this one, but none exactly the same. This is the one that my mom served when I was a child. The only change I have made is to use broccoli florets instead of frozen spears, which are difficult to cut when serving this up. I've also made this without the broccoli in a smaller dish. My mom always made this recipe with the chicken created when making chicken stock. Feel free to substitute cooked leftover turkey in place of the chicken.

2 teaspoons unsalted butter
1 tablespoon chopped fresh shiitake mushroom
1 shallot, finely chopped
¼ teaspoon salt
1 fresh sage leaf, minced

¼ cup shredded cooked turkey
1 teaspoon dry vermouth
2 eggs, chilled
1 pinch ground white pepper
2 teaspoons olive oil
1 tablespoon creme fraiche

Steps:

  • Heat 1 tablespoon of olive oil and butter in a skillet over medium-low heat, and stir in the shiitake mushroom, shallot, salt, red pepper flakes, and sage. Cook and stir until the shallot is translucent, about 5 minutes. Mix in the turkey and vermouth, and stir for a minute or two just to heat; remove from heat.
  • Beat the eggs with a fork in a bowl until well blended, and season with a pinch of salt and white pepper. Heat 2 teaspoons of olive oil in an omelette pan over medium heat until hot, and pour the beaten eggs into the pan. Use a spatula to gently stir the eggs just until they begin to set, 1 to 2 minutes; shake the pan to cover the bottom completely with egg. Smooth out the top of the partially set eggs with the spatula, cook just until the bottom is firm and the top is still slightly soft, and turn off the heat.
  • Spoon turkey filling into the center of the omelette, filling about the middle third of the omelette; dot with small dollops of creme fraiche. Do not overfill omelet. 2 green onions, sliced
5 eggs or 1 1/4 cups egg substitute
2 tablespoons milk
1/2 teaspoon salt

  • Spray a 10-9nch skillet with cooking spray and heat over medium heat.

2 -4 cups turkey, bite-size chunks
1 (10 ounce) can cream of mushroom soup (or chicken)

Steps:

  • Preheat oven to 350; grease a 13x9 pan.
  • Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
  • In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
