Start the Thanksgiving festivities with a cute Turkey Cheese Ball! This Turkey Cheese Ball with peppers and nuts is shaped like everyone's favorite dinner fowl.

Steps:
- Chop enough nuts to measure 1/2 cup; place in large bowl. Add cream cheese, cheddar, bacon, onions, dressing mix and Worcestershire sauce; beat with mixer until blended.
- Refrigerate 45 min. or until firm.
- Reserve 1 tsp. cream cheese mixture. Shape remaining cream cheese mixture into oblong-shaped ball for the turkey's body.
- Cut small piece off 1 yellow pepper strip; reserve along with 2 red pepper strips for the turkey's beak and waddle. Starting at back end of cheese ball, insert ends of half the remaining pepper strips into cheese ball for the turkey's tail feathers as shown in photo. Fan remaining pepper strips around back bottom edge of cheese ball for second row of feathers, inserting ends of peppers into cheese ball to secure.
- Insert remaining nuts into top of cheese ball as shown in photo. Insert reserved red pepper strips into front of cheese ball for the turkey's waddle, then use reserved cream cheese mixture to attach reserved yellow pepper piece to top of 1 pepper strip for the turkey's beak.

- In a small bowl, beat the first six ingredients until combined. Shape into a ball; wrap in plastic. Refrigerate for 1 hour or until firm. , In another small bowl, beat cream cheese and milk until smooth. Divide among four small bowls. With food coloring, tint one bowl brown, one dark orange and one light orange (using yellow and orange); leave one bowl plain. , Transfer each mixture to a heavy-duty resealable plastic bag; cut a small hole in a corner of each bag. , For turkey tail feathers, decorate the top halves of large oval crackers with tinted cream cheese. , Using the red pepper, form the turkey head, neck and wattle. - Mix cream cheese, Cheddar cheese, and dressing mix together in a large bowl. Form into a large ball. Roll in chopped pecans to coat surface. Refrigerate for at least 2 hours, or overnight.
- Arrange a row of whole-wheat crackers in the back of the cheese ball for the turkey tail feathers. Stick pecans evenly into the cheese ball for the body.
- Cut out 2 strips of red bell pepper for the head and neck. Cut out 2 "eyes" from the black olive using a small pastry tip. Place 2 small dollops of cream cheese on one of the 2 bell pepper strips for the turkey head and stick the black olive circles into it as pupils. Cut a small triangular slice out of the yellow zucchini for the turkey beak and stick to the red pepper with cream cheese. Stick the undecorated red bell pepper strip on the front of the cheese ball. Stick the red bell pepper stick with the face into the top of the cheese ball for the head.

- Refer to picture frequently!
- Begin with a round cereal bowl which will fit on a decorative plate. Cover the bottom of the bowl with the port wine cheese spread and place it in the middle of your decorative plate. Make sure you don't use all of the cheese.
- Break one of the pretzel rods in half and insert the broken end in the cheese at the 6:00 position. This will be the turkey's neck and head. Cover the rod with cheese mounding the end a bit to suggest a head. If it wants to flop, prop it up in the back with a small cracker.
- Cover the turkey's throat and part of the back with almonds applying them in rows and slightly overlaping like shingles.
- Cover the lower neck with small crackers.
- Use the larger crackers and remaining pretzel rods as the turkey's feathers.
- Add the cloves as eyes, the cashew as beak and pimento as wattle.
- Serve with extra crackers.

TURKEY MEATBALLS
Steps:
- Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.
TURKEY BALLS
Steps:
- Preheat the oven to 400 degrees F.
- Coat the turkey with the olive oil, season with salt and pepper and put into a roasting pan. Transfer to the oven and roast until warmed through. Let cool. Combine the celery, onion, sage leave and thyme in a stockpot and sweat in a little olive oil. Add the bread and the stock and cook for 10 minutes. Remove from the heat and cool. Transfer to a large bowl.
- Heat the oil in a deep-fryer.
- Dice the turkey and add, along with the mashed potatoes, to the stuffing bowl. Form the mixture into medium-sized balls and fry in the deep-fryer until golden brown. Drain on paper towels and serve on a serving platter.
PIMIENTO CHEESEBALL

- Add the Cheddar, mayonnaise, hot sauce and garlic to a food processor and pulse to combine, making sure the cheese remains coarse. Add the cream cheese and pulse until combined. Add the chopped pimientos and pulse twice, just to incorporate into the mixture.
- Line a small bowl with plastic wrap then press the cheese mixture into the bowl. Cover the top with the overhanging plastic wrap and refrigerate for at least 2 hours or overnight.
CHEESE BALLS
Steps:
- In a large pot of boiling salted water, cook the pasta to al dente according to the package directions.
- Meanwhile, bring the heavy cream to a simmer in a large saucepan and slowly add in the Cheddar, mozzarella, Swiss cheese, American cheese and white Cheddar, stirring, until smooth and creamy. Season with salt and pepper.
- Drain the pasta and add to the cheese mixture. Stir until all the pasta is well-coated. Place in the refrigerator for 10 to 15 minutes.
- Scoop the pasta into balls, rolling until uniform and about 3 inches in diameter. Set aside.
- Place the flour, beaten eggs and panko into separate shallow bowls. Roll each individual pasta ball first into the flour, then the eggs, then the panko.
- Fill a deep saucepan with 3 inches of canola oil and heat to 350 degrees F. Line a sheet pan or platter with paper towels. Carefully drop several pasta balls into the oil (do not crowd; fry in batches) and fry until golden, about 3 1/2 minutes. Remove and drain the balls on the paper towels. While still hot, sprinkle with the Parmesan and serve.

- Soften the cream cheese and add to a bowl. Slice the smoked turkey into small pieces and add to the cream cheese mixture. Add the 2 tsp of liquid smoke to the cheese mixture and form into a ball.
- On a sheet of waxed paper, mix the ground pecans and the dried parsley.
