8 oz Whole Wheat Penne (or gluten-free)
2-3 Celery Stalks (chopped)
1 Cup Frozen Green Peas (thawed)
6.7 oz Tuna in Olive Oil (1 jar, drained and flaked)
½ Red Onion (thinly sliced, to garnish)
1 Avocado (very ripe )
1 Cup Plain Greek Yogurt
2 Tbsp Chopped Fresh Dill (plus more to garnish)
½ Lemon (juiced)
1 Tbsp Dijon Mustard
1-2 Garlic Cloves (minced)
1 Tsp Chili Flakes (or to taste)
Kosher salt and pepper, to taste

Steps:

  • Cook the pasta according to package directions, then drain and set aside in a large bowl to cool.
  • Place all sauce/dressing ingredients into a blender or food processor and pulse until smooth and well combined. Taste and adjust the seasoning.
  • Pour the sauce over the pasta, and stir in the celery, peas, and tuna. Mix with a spatula until nicely coated. Divide into bowls and enjoy!

8 ounces cavatappi (or elbow macaroni), cooked and drained
1 (6-ounce) can tuna (drained and flaked)
3 tablespoons red onion (finely chopped)
2 cloves garlic (mashed and finely minced)
1/4 cup finely chopped red bell pepper
3 tablespoons fresh dill (chopped)
4 teaspoons lemon juice
3/4 to 1 cup mayonnaise
3 tablespoons sour cream
1/2 to 1 cup grape tomatoes (sliced or halved)
Salt (to taste)
Black pepper (to taste)

Steps:

  • Gather the ingredients.
  • In a large bowl, combine the tuna, finely chopped onion, minced garlic, bell pepper, dill, and lemon juice.

1 cup frozen peas
1/2 cup diced red or white onion
3/4 cup diced dill pickle
2-5 oz. cans tuna, drained {I used albacore tuna packed in water}
1/2 lemon, juiced
1 cup real mayonnaise
1 tablespoon dried dill
salt & pepper, to taste

Steps:

  • Bring large pot of water to boil. Salt water and cook pasta until al dente. Stir in frozen peas and cook 30 seconds. Drain pasta and peas. If you want room temperature pasta salad, don't rinse. If you want cold pasta salad, rinse with cold water. In a large bowl, stir cooked pasta and peas together with remaining ingredients until everything is evenly coated in sauce {made from mayonnaise and lemon juice}. Serve or refrigerate covered until ready to serve.

My own recipe for a delicious, cold salad made with multicolored rotini, canned tuna, onions, celery and carrots. It's wonderful in the summer as a light dinner served with blueberry or pineapple muffins. The secret is to used canned tuna in vegetable oil rather than water--it makes a more moist, delicate salad overall.

1 (12 ounce) can tuna in vegetable oil
1 (16 ounce) bag tri-colored rotini pasta
1 1/2 cups hellman's or duke's mayonnaise
1 (14 ounce) can chicken broth
1/2 cup chopped celery
1/2 cup chopped carrot
1/2 cup chopped yellow sweet onion (finely)
2 teaspoons dried dill weed
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon lemon juice

Steps:

  • In a large 3 qt pot, mix can of chicken broth with enough water to cook pasta. Add 2 t. salt to pot. Put in package of rotini and follow package directions for MINIMUM cook time. Drain pasta immediately and flush with cold water until all pasta is cool and has stopped cooking entirely. Set aside.
  • In a large mixing bowl, combine mayonnaise with dill, pepper, and lemon juice.
  • Add pasta to mayonnaise mixture.
  • Drain can of tuna completely and add to pasta.
  • Add chopped onions, celery, and carrots.
  • Stir well until everything is combined.
  • Refrigerate for at least two hours; add salt to taste and stir.

I've never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S.

Fresh basil is essential to this recipe and we just have some fancy fresh breads and butter with it. I don't recall which of my magazines I got this from but it's favorite of mine.

2 cups dried tri-colored fusilli or 2 cups rotini pasta
3/4 cup cheddar cheese or 3/4 cup provolone cheese
2/3 cup frozen peas
1/2 cup celery
2 tablespoons thinly sliced fresh basil leaves
1/2 cup creamy roasted garlic salad dressing or 1/2 cup peppercorn ranch dressing
7 ounces chunk tuna in water, drained
1 (7 ounce) jar roasted red peppers, drained and coarsely chopped
romaine lettuce leaf

  • Cook pasta according to package directions; drain.
  • Rinse with cold water; drain again.

10 ounces macaroni (small shell)
1 cup frozen peas
1/2 cup chopped sweet onion
3/4 cup chopped celery
2 -3 tablespoons sweet pickle relish, to taste
2 -3 medium dill pickles, chopped
2 hard-boiled eggs, chopped
1 cup hellman's light mayonnaise (may add more)
2 tablespoons cider vinegar
salt and pepper (We all like this with a lot of pepper)

Steps:

  • Cook pasta according to directions.
  • Add the frozen peas to the pasta just before you take it off the stove to drain in the colander.
