THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Steps:
- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.

Steps:
- Preheat the oven to 350°F.
- Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
- Remove the melted butter from the oven after a few minutes and set it aside.
- Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
- In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)
- Add the cornstarch to the cold water and stir until smooth.
- Pour the cornstarch mixture into the peach mixture.
- Stir the peach mixture to combine the ingredients and then set aside.
- In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
- Pour the Bisquick mixture over the melted butter in the baking pan.
- Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
- Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
- To test if the cobbler is done, insert a toothpick into the center of the cobbler dough. If it comes out clean, then it is done.
- Serve Black folks Southern peach cobbler recipe warm, and enjoy!

Steps:
- Preheat oven to 375ºF. In a large bowl, combine peaches, peach schnapps, brown sugar, lemon juice, cornstarch, cinnamon and nutmeg; stir to coat and set aside.
- In a medium bowl, add flour, baking powder, sugar and salt; whisk until mixed. Add ¾ cup butter and with a dough blender, cut butter in until mixture is crumbly; set aside.
- In a large saucepan over medium-low heat, add the remaining 2 tablespoons butter and when melted, add peach mixture. Stir well and simmer gently for 5 minutes. Transfer the mixture to a 2-quart casserole.
- Pour in ½ cup heavy cream in the dough and stir just enough so the liquid is absorbed - don't overdo it. Spoon dough over the peach mixture and gently spread it out with a spatula. Pour 2 tablespoons heavy cream over and brush on evenly.
- In a small bowl, combine sugar and ground cinnamon; sprinkle over the cobbler. Place small pieces of butter all over the top. Place casserole on a baking sheet in case it overflows and transfer to the preheated oven; bake for 40 to 45 minutes or until the fruit is bubbling and the top is nice and golden brown.
- Remove from the heat and let it sit for 5 minutes before serving with vanilla ice cream. Serves 8.

SOUTHERN PEACH COBBLER
My little cousin calls this dish "Peach Cobblet" because when he was younger, he couldn't pronounce "Cobbler." This cobbler is a spin-off of my mother's recipe. The crust is buttery and flaky (I use a butter+shortening mix), it's not too thick and not too thin, and it's a FLAVORED crust, so it boasts a lot more than just butter and flour. The filling is perfect and can be adjusted to your taste. This is a REAL, TRADITIONAL STYLE COBBLER, the way it was meant to be. No biscuit-topping and no lattice-style crust here. Serve warm with premium vanilla bean ice cream or serve with whipped topping, drizzled caramel, and a sprinkle of nutmeg.

Steps:
- Sift flour and salt into a large bowl. Mix in sugar, nutmeg, and cinnamon.
- Cut in shortening and butter until the texture is grainy and crumbly.
- Add 5-6 tablespoons of water at a time and gradually squeeze in the orange juice, stirring with a fork and adding touches of flour until your dough is smooth and semi-dry. Form dough into ball.
- Preheat oven to 350 degrees.
- Cut the dough in half. Sprinkle a dry, clean surface with a small 1 tablespoons of the flour.
- Roll out one half of the dough in the shape of your dish and place in a small butter-greased 8x8 or 9x9 glass, square/rectangular cobbler or casserole dish.
- Re-sprinkle surface with second tablespoon of flour and roll out second half in the same shape and set aside.
- In a medium-sized bowl, combine peaches, butter, sugar, nutmeg, cinnamon, salt, lemon juice, and cornstarch. Taste and add more sugar, cinnamon, or nutmeg if desired.
- Pour peaches mixture into crust and smooth over.
- Top the baking dish with the second crust and fold bottom and top crusts over onto the cobbler to seal the cobbler.
- Bake in center of oven at 350 degrees for 45 minutes or until golden brown.
- Cool for at least 25 minutes before serving, allowing filling to thicken.

SOUTHERN PEACH COBBLER
I didn't have enough peaches so I added some cut apple and pineapple. I also added oats to the mixture because I think cobbler is better with oats. Good stuff! Recipe posted as written from aeposey and allrecipes.com

- Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven. This cobbler overflows a bit almost every time I make it. The baking pan will catch the drips and prevent a mess in the oven.
- In a large bowl, combine the peaches and the lemon juice and then add the rest of the filling ingredients. Stir to coat and then pour into a 9x13 baking dish.
- Bake the peach mixture in the preheated oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine. Toss the grated butter in the flour mixture. Stir in the boiling water, just until combined, leaving plenty of little lumps of butter.
- Remove the peaches from the oven and drop the topping over them in spoonfuls. (I like to use my smallest cookie scoop to do this.) Sprinkle the cobbler topping with the cinnamon sugar topping. Bake until the crust is golden and a toothpick inserted into the crust comes out clean, about 28 minutes. Serve warm or at room temperature. Enjoy!
