1 spaghetti squash, halved and seeded
1 tablespoon olive oil
1 ½ cups shredded extra-sharp Cheddar cheese, divided
¾ cup bacon bits
4 tablespoons butter
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Coat the inside of squash with about 1 tablespoon olive oil. Place squash, cut-side down, on a baking sheet.
  • Bake in the preheated oven until squash is tender, about 30 minutes. Cool squash for 10 minutes.
  • Grease a casserole dish.
  • Shred the inside of squash with a fork and transfer to a bowl. Add 1/2 the shredded Cheddar cheese, bacon bits, butter, salt, and black pepper; mix until well blended. Transfer mixture to the prepared casserole dish.
  • Bake in the preheated oven until heated through, about 45 minutes.
  • Remove casserole from oven. Sprinkle with remaining Cheddar cheese and return to the hot oven. Bake until cheese is browned and bubbly, 15 to 20 minutes more.

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente., In a large skillet, cook bacon and onion over medium heat until bacon is crisp, stirring occasionally; drain. 1 large spaghetti squash (about 4 1/2 pounds)
1 pound bacon
1/4 cup butter . cut into pieces (1 cube - 8 tablespoons)
1 cup shredded parmesan cheese
Salt and pepper (to taste)

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Carefully cut stem end off of the spaghetti squash and discard. Cut squash into approximate 1″ rings, width-wise. With a spoon or tip of a knife, gently remove seeds and pulp from each ring; discard.
  • Place spaghetti squash rings laying down on prepared baking sheet. Bake in oven for about 40-45 minutes or until strands separate easily when scraped with a fork.
  • While the spaghetti squash is baking, cut your bacon into pieces and cook in a large skillet over medium heat, moving and turning frequently, until bacon is fully cooked and crispy. With a slotted spoon, remove bacon pieces from skillet and set aside.
  • Remove the spaghetti squash from the oven and allow to cool slightly. Remove shells of each ring and separate stands with a fork. Place strands in a large bowl.
  • Add butter to your warm spaghetti squash (if your strands have cooled too much, heat in the microwave a bit) and toss with the strands until the butter is fully melted and incorporated. Stir in parmesan cheese and bacon crumbles. Season with salt and pepper and serve.

1/4 teaspoon garlic powder
olive oil
3 slices cooked bacon, crumbled

Steps:

  • Cut the squash in half and carefully remove the seeds.
  • You might want to use a kitchen scissors to cut around the edge because you don't want to dig into the squash itself (which is easy to do).
  • Turn upside down in a baking pan.
  • Bake at 375-degrees until the inside is somewhat soft (about 45 minutes for this sized squash).
  • Let cool until the squash can be handled and then carefully remove the inside of the squash.
  • They will come out in threads that look and act much like cooked spaghetti (thus, the name).
  • There will be a much larger volume of strands than you think!
  • Cook several pieces of bacon very crisp and chop into bacon bits.
  • In a skillet, heat some olive oil and/or butter.

1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
1/4 teaspoon kosher salt

Steps:

Steps:

  • Bake the squash. Heat the oven to 400 degrees Fahrenheit. Cut the spaghetti squash in half, scoop out the pits and discard. Brush the squash with half of the olive oil, season lightly with salt and pepper and place on a baking sheet, skin side up. the skin with a fork a couple times. Bake for 40-45 minutes. Take the squash out of the oven, let cool slightly and take the flesh out fluffing it with a fork. Set aside.
  • While the squash is baking, place the cherry tomatoes on another baking tray. Drizzle the cherry tomatoes with remaining oil and mix or shake to coat. Bake in the oven for 20 minutes in 400F.
  • Cut the bacon into small pieces and cook in a large skillet stirring occasionally until crispy. Using a slotted spoon remove the bacon bits and set aside. Discard bacon fat leaving about 1 tbsp in the now empty skillet.
  • Place the spinach in the skillet, top with crushed garlic, cover and cook on low heat for a couple minutes until wilted. Uncover, cook for another minute stirring.
  • Add spaghetti squash, roasted cherry tomatoes and bacon bits. Crumble goat cheese into the mixture and stir everything gently.

  • 1. Preheat oven to 400. LIne a large rimmed baking sheet with parchment paper. 2. Cut about half inch off the top and bottom of the spaghetti squash. Discarded these pieces. Cut the squash lengthwise into rings about 1-inch thick. Run a paring knife along the inside of the ring to cut the seeds out. Drizzle olive oil over the baking sheet, then spread the squash rings over it. Move them around in the oil so the undersides are covered in oil. Season with salt and pepper. Flip the rings and repeat on the other side. 3. Roast the squash in the often until tender. About 30 minutes. When it is done, set it aside on the counter to cool. About 10 minutes. 4. When the bacon is done, add the red wine vinegar. Stir and scrap the bottom of the skillet (get all the bacon bits off the bottom of the pan). Turn the heat down and add the maple syrup. Stir to combine. Add spinach one handful at a time. When all the spinach is wilted, turn the burner off. Let it rest until you finish the squash. 6. After the squash has cooled, using a paring knife to pull away the skin ring. Use a fork or your hands to pull the strands apart. Add the squash to the skillet. 7. Toss everything together.   • Remove squash from oven and carefully cut in half to allow the steam to escape. Scoop out and discard the seeds in the center, then use a fork to fluff out the "spaghetti". Measure out 3 cups and set aside, and store any leftovers for other uses.

  • Heat butter over medium heat in a large skillet. Add the onion and cook until soft and fragrant. Add the garlic cloves and cook for 1-2 more minutes. Add the measured squash and chopped bacon to the skillet and mix it all together. Remove from heat.

Cheesy baked spaghetti squash and baby spinach - a comforting, cheesy dish, without the guilt. Perfect for Meatless Mondays or any day of the week!

5 1/2 cups cooked spaghetti squash (from about 2 small see directions below:)
1 tbsp butter
1 tbsp olive oil
1/4 cup minced onion
1/4 cup flour (use ap gluten-free flour for GF)
2 cups skim milk
1 cup fat free chicken broth (vegetable broth for vegetarian)
2 cups 8 oz Sargento 2% reduced fat mild cheddar
salt and pepper (to taste)
4 cups about 4 oz baby spinach
1/8 cup grated parmesan

Steps:

  • Preheat the oven to 375ºF.
  • Cut the squash in half lengthwise; remove and discard seeds. Place squash on a baking sheet cut side down. Bake until tender, about 1 hour.
  • Separate the strands of squash with a fork and place in a medium bowl; discard shells. Squeeze out any excess liquid from the squash if watery.
  • Maintain the oven temperature.
  • Heat butter and oil in a large saucepan over medium heat. Add onions and cook about 2 minutes.
  • Stir in flour. Reduce heat to low and cook, stirring continually 3 - 4 minutes.
  • Add milk and chicken broth and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick, about 2 minutes stirring; season with salt and pepper.
  • Once it becomes thick, remove from heat, add cheddar cheese and mix well until cheese is melted.
  • Adjust salt and pepper to taste, add cooked spaghetti squash and baby spinach, pour into a baking dish and sprinkle parmesan cheese on top.
  • Bake until bubbly and golden 25 to 30 minutes.
