LOADED BAKED POTATO ROUNDS
This twist on baked potatoes will be a new family favorite!

Steps:
- Wash your green onions and chop them. Mince your garlic. Set aside.
- Wash and scrub your potatoes. Slice into rounds.
- Add potatoes in a bowl and pour 2 tablespoons of melted butter over them.
- Sprinkle your salt and pepper. Stir. Microwave for 2 minutes, stir, microwave for another 2-3 minutes.
- Place potato rounds on a baking sheet and sprinkle with garlic. Bake in the oven at 350° for 20 minutes.
- Cook your bacon. Drain the strips, cut pieces on a towel lined plate.
- When the potatoes are tender and starting to crisp around the edges remove them from the oven and brush on more melted butter.
- Sprinkle your shredded cheddar cheese, bacon, and green onions.
- Bake at 350° until the cheese is melted. Top with sour cream (if you like that kind of thing) Serve and enjoy!

- Preheat oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper.
- Place potato slices in a single layer on the prepared baking sheet. Drizzle olive oil over the tops and brush to coat. Place in a single layer on the prepared baking sheet. Sprinkle with salt. Bake in the preheated oven for 30 minutes.
- Remove from oven and top with cheese and bacon. Bake for another 5 minutes, or until cheese has melted. Serve warm, finger-food style.

I was trying to create an appetizer that could be served at my teenaged daughters birthday party that the kids would love but that would appear elegant enough for the adults to be interested as well. These are made with simple ingredients yet yield a sophisticated result. Feel free to get creative with the flavors. Steps:
- Scrub the sweet potatoes, leave unpeeled, and cut into fries or rounds. (Trust me, rounds are much easier!).
- Combine olive oil and melted butter.
- Arrange the potato slices, not touching, in rows on a baking sheet.
- Lightly brush the potatoes with the oil mixture; being careful to not use too much or the fries get mushy.
- Roast at 450°F for 18 to 22 minutes, or until they are golden and crisp, turning them once with a spatula.
- Transfer the potatoes to paper towels to drain, sprinkle them with the salt to taste, and serve them warm.
- Note: can be sprinkled with cinnamon sugar instead of salt.

- Place the potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender when pierced with a fork, about 20 minutes. Drain, and cool.
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Cook bacon in a large skillet over medium-high heat until crisp. Drain, cool, and crumble.
- Slice the potatoes into 1/4 inch rounds, and arrange them in a single layer on the baking sheet. Sprinkle a few crumbles of bacon onto each round, then top with some shredded Cheddar cheese.

- Using a rubber brush, spread a thin layer of olive oil over both sides of the potato slices

EASY BAKED PARMESAN POTATO ROUNDS
Steps:
- Pre heat oven to 375°, line a large cookie sheet or two with parchment paper.
- Peel and slice potatoes into thick slices, then place slices in a large bowl of cold water, let sit for 20 minutes. Then drain well and towel dry.
- On a small plate whisk together the flour, parmesan cheese, parsley and salt.
- Brush one side of the potato slices with olive oil and then coat in parmesan cheese mixture place on prepared cookie sheet coating side down.
- Brush top side of slices with olive oil and sprinkle with remaining parmesan mixture. Spray or drizzle with a little extra olive oil.
- Bake in oven for approximately 25 minutes, the last 3-6 minutes place under the broiler if desired (for extra browning). Sprinkle with a little salt and serve immediately. Enjoy.
