¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

SEARED TUNA STEAK

When buying tuna you should look for meat that is evenly coloured, dark red and has a fine, tight grain free of large sinews. Generally you get better tuna in good fishmongers than in supermarkets, but sometimes the supermarkets get a good batch in, so keep your eyes peeled. There is a bit of a thing about it being fashionable to serve tuna pink; if you buy good-quality fresh tuna the last thing you want to do is cook it all the way through and make it taste like tinned tuna, so yes, good-quality fresh tuna should be served rare or very pink.

1 small dried red chilli
1 tablespoon coriander seeds
½ a clove of garlic
1 good handful of fresh basil
1 good handful of fresh coriander
olive oil
1 lemon
4 x 225 g tuna steaks, ideally 2cm thick, from sustainable sources

Steps:

  • Smash up the chilli and the coriander seeds in a pestle and mortar.
  • Peel and chop the garlic, pick and finely chop the herb leaves and add it all to the pestle and mortar with a drizzle of oil and lemon juice, to taste. Mix together, and season with sea salt and black pepper.
  • Lay out your tuna steaks on a tray, season both sides and rub all over with the herb mixture.
  • There are two nice ways to cook it: I prefer to cook it on a griddle pan or in a frying pan.
  • Your pan should be very, very hot. Put in the tuna and what you want to do is sear it so that it toasts, fries and browns (about 45 to 60 seconds on each side).
  • Once cooked, I like to rip the steaks in half and serve with salad and chips or boiled potatoes and a big wedge of lemon. It's quite sexy sometimes with some marinated sun-dried tomatoes, olives, basil... The possibilities are endless.

MARINATED SEARED TUNA

1/2 cup soy sauce
1/4 to 1/2 cup rice wine vinegar
2 teaspoons sambal oelek
4 scallions, white and light green sliced and finely chopped, dark green sliced on an extreme bias for garnish
2 cloves garlic, smashed and finely chopped
1 1/2 inches ginger, peeled and grated
Four 6-ounce sushi-grade tuna steaks, preferably in logs about 2- by 2- by 4-inches
Peanut oil, for searing

Steps:

  • In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
  • Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
  • When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
  • Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
  • Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
  • Serve immediately with a little extra soy on the side if desired.

  • In a medium bowl, whisk together the soy sauce, vegetable oil, sesame oil, honey, sambal oelek, ginger, and scallions. Add the tuna and toss. Let the mixture sit in the fridge for at least 15 minutes or up to 1 hour.
  • To serve, scoop rice into bowls, top with tuna poke and desired toppings. You will have extra sauce for drizzling over the toppings; serve on the side.
  • Note: Sambal Oelek can be found in the Asian section of most supermarkets. It is sometimes labeled Chile Garlic Sauce.

The secret to a perfect tuna steak is to cook it as you would a rare or medium-rare steak, overcooking will produce a tough dry fish, the center needs to be pink -- plan ahead the steaks need to marinade for 8-24 hours, prep time includes refrigeration time --- I have made this in the past many times it is *very* good!

3 (4 ounce) fresh tuna steaks
ground black pepper (to taste) or lemon pepper (to taste)
1/4 cup orange juice
1/4 cup low sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon lemon juice or 1 tablespoon lime juice
3 tablespoons oil
2 tablespoons chopped fresh parsley
3 fresh garlic cloves, minced (can use less if desired)

Steps:

  • In a bowl combine all marinade ingredients until well blended.
  • Place the tuna steaks into a shallow glass dish (I use an 11 x 7-inch baking pan for this).
  • Pour the marinade over the tuna steaks and turn to coat.
  • Cover with plastic wrap.
  • Refrigerate 8-24 hours (turning a couple of times during chilling).
  • Preheat the grill to HIGH heat.
  • Oil the grill grate.
  • Remove the steaks from marinade (discard any marinade) and place on a plate.
  • Season lightly with freshly ground black pepper on both sides.
  • Grill the steaks for 5 minutes per side or until rare or medium-rare (DO NOT overcook the tuna or it will be dry!).
  • Delicious!

SESAME TUNA MARINADE

1-1/2 to 2 lb tuna fillets or steaks (fresh if available)
1/4 c packed brown sugar
2 Tbsp canola oil
3 Tbsp burbon whiskey
3 Tbsp dried chopped onions
2 Tbsp soy sauce
1 tsp curry powder
1 tsp ground ginger
1/3 c toasted sesame seeds (to add just before serving)

Steps:

  • 1. Cut Tuna into serving size portions remove skin, rinse in cold water and pat dry.
  • 2. In a gallon size zip lock type bag combine marinade ingredients and mix well. Add Tuna and squeeze out excess air. Zip it closed and message to coat evenly. Place in refrigerator overnight or at least a few hours before cooking.
  • 3. Bring to room temperature before cooking. Grill, broil or pan-fry Tuna over medium high heat until done. Don't over cook! Tuna can be served rare or medium and will be done in less than 10 minutes on a hot grill. Any longer and the meat will dry out and lose flavor. It's not necessary to grill or broil both sides, the marinade will brown quickly because of the sugar. In fact, a light charring makes it taste even better.
  • 4. Just before serving, sprinkle with toasted sesame seeds. Add rice pilaf, steamed asparagus and crisp salad greens with vinaigrette dressing for a perfect gourmet meal.
  • 5. Note, this is a wonderful recipe that works equally well with Salmon, Swordfish, Halibut, or any firm flavorful fish.

1/4 cup picholine olive brine
1/3 cup freshly squeezed Meyer lemon juice
1 pound sushi-quality yellow fin tuna, thinly sliced across the grain
3 ounces (about 18) picholine olives, pitted and slivered
Freshly ground black pepper
1 bulb fennel, thinly sliced
2 Meyer lemons, zested

Steps:

  • In a glass baking dish or a wide, shallow, nonreactive bowl, mix together olive brine and lemon juice. Gently toss in tuna slices and olive slivers. Cover and refrigerate for 2 hours, occasionally moving tuna slices around gently in marinade to ensure that slices cure evenly.
  • Just before serving, strain the tuna slices from marinade. Divide tuna between 4 to 6 appetizer plates. Spoon a little marinade (with olive slivers) over the tuna. Grind black pepper, to taste, over each serving. Garnish with fennel and lemon zest, and serve immediately.

2 TB freshly squeezed lemon juice
1 TB Asian toasted sesame oil (found in the Asian aisle)
2 tsp garlic powder

2 to 21/2 lbs fresh ahi tuna steaks (about 1 1/2-1 2/3 inches thick)
oil for cooking

Steps:

  • Marinade: In a bowl, whisk together the first 7 ingredients to make a marinade. Towel dry tuna steaks and place in a glass or ceramic dish. Pour marinade over the fish, turning to coat well throughout. Cover tightly and chill several hours to overnight; turn fish over at least once in the middle of marinade time.
  • Sear: Heat 3 TB oil in a large heavy skillet (aluminum or stainless steel; not nonstick) until oil is smoking. Sear ahi steaks 1 1/2 minutes per side on high heat, taking care to flip carefully with a flat, steel spatula. (If your tuna is less than 1 1/2 inches thick, sear for only 1 minute per side.)
  • Rest/Cool: Transfer seared ahi to a large cutting board and let rest/cool 10 minutes. Use a very sharp (serrated works well) knife to slice thinly across the grain.

2 ahi tuna (yellowfin tuna) steaks ((about 4 oz. each, 1" thick - see notes for thinner or thicker))
2 tablespoons soy sauce
1 tablespoon toasted sesame oil (see notes)
1 tablespoon honey (see notes)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper (to taste)
1/4 teaspoon cayenne pepper ((optional))
1 tablespoon canola oil (or olive oil)
green onions, toasted sesame seeds, and lime wedges (for serving (optional))

Steps:

  • Pat the ahi tuna steaks dry with a paper towel. Place on a plate or inside a plastic bag.
  • Mix the soy sauce (2 tablespoons), toasted sesame oil (1 tablespoon), honey (1 tablespoon) kosher salt (1/2 teaspoon- OMIT if marinating for more than a couple hours, see notes), pepper (1/4 teaspoon), and cayenne pepper (1/4 teaspoon) until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Optional: allow to marinate for at least 10 minutes, or up to overnight in the refrigerator. Also optional: Reserve a spoonful or two of the marinade before coating the fish for drizzling on top after you've cooked it.
  • Heat a medium skillet (preferably non-stick or a well-seasoned cast iron skillet) on medium-high to high until very hot ( or medium medium-high for nonstick). I recommend giving cast iron 3-5 minutes to get hot and nonstick about 1 minute, depending on how thick it is.
  • Add the canola oil (1 tablespoon) to the hot pan. Sear the tuna for 1 - 1½ minutes on each side for medium rare ( 2 -2½ minutes for medium-well to well, 30 seconds for very rare. See notes - this will vary based on thickness of the tuna steaks). (Note: different burners get hotter depending on your stove. Use your best judgement whether you use medium, medium-high, or high heat, as the marinade may burn if too high heat is used)
  • Remove to a cutting board. Slice into 1/2 inch slices and serve garnished with green onions, toasted sesame seeds, and a squeeze of fresh lime juice, if desired.

Serve these grilled tuna steaks with rice or slice and serve on fresh dressed greens. The tuna steaks are flavored with a honey mustard marinade.

1 to 1 1/2 pounds tuna medallions (or tuna steaks)
2 tablespoons Dijon honey mustard
1 tablespoon extra virgin olive oil
2 teaspoons soy sauce
2 tablespoons rice wine vinegar (or white vinegar)

Steps:

  • Gather the ingredients.
  • About 1 to 2 hours before grilling, place the tuna in a glass bowl.
  • Combine the Dijon honey mustard, olive oil, soy sauce, and rice wine or white vinegar in a small bowl.
  • Pour over tuna and turn to make sure all pieces are well coated.
  • Cover the bowl with plastic wrap and refrigerate until it's time to grill.
  • Spray a clean grill or grilling pan with nonstick cooking spray or brush it with vegetable oil.
  • Grill the tuna over hot coals for about 5 to 7 minutes, or until nicely charred on the outside and still a bit pink in the middle.
  • Slice, serve, and enjoy.

3/4 cup teriyaki sauce
2 tablespoons soy sauce
2 tablespoons firmly packed brown sugar
1 tablespoon Sherry or white wine
1 tablespoon rice vinegar
1 tablespoon vegetable oil
1 teaspoon Asian sesame oil
3 garlic cloves, minced
a 1-inch piece fresh gingerroot, peeled and chopped fine
2 scallions, chopped fine
a pinch dried hot red pepper flakes, or to taste
four 8-ounce tuna or swordfish steaks

Steps:

  • In a large shallow dish stir together all ingredients except fish until combined well and add fish. Marinate fish, covered and chilled, turning occasionally, at least 1 hour and up to 2.
  • Prepare grill.
  • Grill fish on an oiled rack set 5 to 6 inches over glowing coals about 5 minutes on each side for medium-rare, or until desired doneness. (Alternatively, fish may be broiled.)

Steps:

  • Prick tuna steaks all over with a fork and place in a shallow dish.
  • Mix all other ingredients together and pour over steaks. Cover and put in fridge for 1 to 3 hours.
  • Remove tuna from the marinade. Shake excess moisture from the steaks. Pre-heat oiled griddle pan.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.
  • Cook tuna on preheated griddle pan, basting with boiled marinade, until cooked through, 5 to 6 minutes per side. Serve with lemon wedges if required and salad and/or couscous.

2 cups cooked grains
1 mango, diced
10 baby carrots or 1 big carrot, cut into match sticks
1/4 head of red cabbage, chopped
2 cups of edamame
1 Tbsp sesame seeds
2 Tbsp oil
1/3 cup soy sauce
1 tsp ginger, finely chopped
2 tsp sesame oil
2 Tbsp olive oil
1 Tbsp lime juice
1 Tbsp honey
1/4 tsp red chili flakes
1lb Albacore tuna steak

Steps:

  • Mix all the ingredients of marinade. Reserve 2 tbsp of this marinade as dressing in a small bowl. Use rest to marinate tuna. You can marinate at least 30 minutes to couple of hours in refrigerator.
  • Cook the grains according to the instruction on packet.
  • Chop and dice the veggies and fruit.
  • Heat oil to smoking hot in a pan. Pat dry the fish and place it in a pan.
  • Watch closely as you are searing the fish. Cook 30-45 seconds per side to make it cooked outside and rare in the middle.
  • Rest for couple of minutes and cut into thin slices with sharp knife.
  • Place cooked rice in a bowl. Arrange fish slices along with diced mangoes, chopped red cabbage, edamame. Drizzle the dressing over all of your bowl. Sprinkle sesame seeds generously.
