¼ teaspoon hot pepper sauce (such as Tabasco®)
1 (5 ounce) can albacore tuna packed in water, drained and flaked
8 (6 inch) corn, flour, or whole wheat tortillas, slightly warmed
1 leaf Finely shredded green cabbage
1 tablespoon Shredded Monterey Jack cheese
1 wedge Lime wedges

Steps:

  • Prepare Salsa: In medium bowl combine chopped peaches, green chiles, red onion, parsley, lime juice and Tabasco sauce. Cover and refrigerate until ready to serve.
  • Prepare Tacos: Fill tortillas with flaked tuna; top with peach salsa. Serve with shredded cabbage and cheese if desired. Garnish with lime wedges if desired.

Tuna tacos sounds funny, but these are delicious. I threw these together for dinner one night and now they're our favorite! If desired, serve with sour cream, fresh cilantro, and more hot sauce.

1 tablespoon olive oil
4 Roma tomatoes, diced
4 green onions, sliced
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon dried oregano
3 dashes hot sauce (such as Tabasco®)
4 (6 ounce) cans solid white tuna packed in water, drained
1 pinch red pepper flakes
salt and ground black pepper to taste
12 corn tortillas

Steps:

  • Heat olive oil in a skillet over medium heat. Add tomatoes, green onions, garlic, cumin, and oregano; saute until tomatoes are very soft, about 5 minutes. Reduce heat to low. Add drained tuna; gently break into bite-sized pieces and mix in. Season with red pepper flakes, salt, and pepper. Cover and cook until tuna is warmed through, 2 to 3 minutes more.
  • Stack 6 tortillas on a microwave-safe plate and cover with a damp paper towel. Heat in the microwave until pliable, 15 to 20 seconds. Repeat with remaining tortillas. Spoon tuna mixture over warm tortillas.

1 small yellow onion
1 jalapeno pepper
2 plum tomatoes
1 fresh lime
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1/4 tablespoon garlic powder
1/4 tablespoon onion power
2 cups corn flour, such as Maseca
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup room temperature water
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon smoked paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon ground white pepper
2 small fish fillets (We use tuna, but you can substitute with whatever your family's favorite fish is. Total weight should be about 1 1/2 pounds.)
1 tablespoon vegetable oil
1 clove garlic, minced
1 tablespoon crisp chardonnay (if you have to cook with it, make it something that you will enjoy finishing your meal!)
1 tablespoon chopped fresh cilantro

Steps:

  • For the pico de "guyo": Remove the thin outer layers of the onion and chop into 1/8- by 1/8-inch pieces. Chop the jalapeno in half and remove the seeds and inner membrane (use gloves when handling the jalapeno). Dice the jalapeno into small pieces. Cut the tomatoes into 1/8- by 1/8-inch pieces. Cut the lime in half and squeeze the juice into the mix. Add the salt and pepper. Let all the ingredients sit and marinate for at least 30 minutes.
  • For the cilantro lime sauce: Mix the mayonnaise, sour cream, cilantro, lime juice, garlic powder and onion powder together and let marinate for at least 30 minutes.
  • For the corn tortillas: Place the corn flour in a mixing bowl. Add the salt and pepper. Slowly add the water while mixing the dough with your hands until it becomes a tad bit softer than a "play dough" consistency. Break off the dough into twenty-four 1/4-inch round balls. Flatten the dough using a tortilla press that has been lined with a ziptop bag on each side. Remove the dough and place directly onto a skillet that has been lightly oiled and heated to 350 degrees F. When you notice the dough just beginning to show stress cracks, about 3 minutes, flip it and cook an additional 5 minutes. Remove from the heat and stack with paper towels in between each tortilla.
  • For the blackening seasoning: Combine the oregano, thyme, smoked paprika, cayenne pepper and white pepper in a bowl and mix together.
  • For the fish: Cut your fresh fish into small cubes about 1/4- by 1/4-inch. Sprinkle liberally with 1/2 tablespoon of the blackening seasoning. Heat the oil in a pan over medium-high heat. Add the fish to the pan and saute for 1 minute. Add the garlic to the pan and continue to saute for about 45 more seconds. Add the wine and cilantro. Finish cooking about 1 more minute.
  • Reheat the tortillas if necessary, remove from the heat and add some lettuce, cooked fish, cilantro lime sauce and pico de "guyo". Serve 3 per plate. Enjoy!

1 pound white flaky fish, such as mahi mahi or orata
1/4 cup canola oil
1 lime, juiced
1 tablespoons ancho chili powder
1 jalapeno, coarsely chopped
1/4 cup chopped fresh cilantro leaves
8 flour tortillas
Shredded white cabbage
Hot sauce
Crema or sour cream
Thinly sliced red onion
Thinly sliced green onion
Chopped cilantro leaves
Pureed Tomato Salsa, recipe follows
2 tablespoon peanut oil
1 small red onion, coarsely chopped
4 cloves garlic, coarsely chopped
4 large ripe tomatoes, chopped
1 serrano chile
1 jalapeno, sliced
1 tablespoon chipotle hot sauce
1 tablespoon Mexican oregano
1/4 cup chopped fresh cilantro leaves
Salt and pepper

Steps:

  • Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.
  • Remove the fish from the marinade place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.
  • Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes.
  • Preheat grill or use side burners of the grill. Heat oil in medium saucepan, add onions and garlic and cook until soft. Add tomatoes, serrano and jalapeno and cook until tomatoes are soft, about 15 to 20 minutes. Puree the mixture with a hand-held immersion blender until smooth and cook for an additional 10 to 15 minutes. Add the hot sauce, oregano, cilantro and lime juice and season with salt and pepper, to taste.

1/4 cup reduced-fat sour cream
2 tablespoons fresh lime juice
Coarse salt and ground pepper
1/4 small red cabbage, thinly shredded (about 2 1/2 cups)
4 scallions, thinly sliced (about 1/2 cup)
1 jalapeno chile, halved lengthwise, one half minced
2 tablespoons olive oil
1 pound tilapia fillets (or other firm white fish), cut into 16 equal strips
8 flour tortillas (6-inch)
1/2 cup fresh cilantro leaves

Steps:

  • In a large bowl, combine sour cream and lime juice; season with salt and pepper. Transfer half the mixture to another container; set aside for serving. Toss cabbage, scallions, and minced jalapeno with remaining sour-cream mixture. Season again with salt and pepper.
  • In a large nonstick skillet, heat oil and remaining jalapeno half over medium-high heat; swirl to coat bottom of pan. Season fish on both sides with salt and pepper. In two batches (starting with larger pieces), cook fish until golden brown on all sides, 5 to 6 minutes. Discard jalapeno.
  • Meanwhile, warm tortillas according to package instructions.
  • To make tacos, fill tortillas with slaw, fish, and fresh cilantro leaves. Drizzle with reserved sour-cream mixture. Serve immediately.

1/4 cup fresh lime juice
1 1/2 tablespoons cabo wabo tequila
1/2 teaspoon Mexican oregano (dried)
1 1/2 teaspoons minced fresh garlic
1 teaspoon onion powder
1/4 teaspoon ground cumin
1 tablespoon chopped fresh cilantro
1 lb fresh yellowfin tuna fillet
20 corn tortillas
4 -5 cups shredded cabbage
1 cup chopped fresh cilantro
1 large lime, sliced into 10 wedges
3 -4 chipotle chiles, canned,julienned (optional)
5 ounces fat-free cheddar cheese or 5 ounces fat-free monterey jack cheese (optional)

Steps:

  • Mix together lime juice, tequila, mexican oregano, minced garlic, onion powder, ground cumin, and 1 tablespoon of fresh cilantro in a small bowl.
  • Place tuna fillet in a ziploc bag and pour marinade over fish.
  • Remove excess air from bag and seal.
  • Refrigerate for one hour, while you prepare your grill.
  • Prepare grill by spraying grill surface with non-stick cooking spray BEFORE applying heat.
  • Over medium-hot grill (gas, charcoal, electric) cook tuna, turning once, until cooked through (you may just cook on exterior if you prefer).
  • (The cooking time will depend upon the thickness of your fillet; tuna can be eaten rare. I suggest a fillet that is slightly pink in the center so it flakes easily without being overdone. Do not overcook your fillet, however.) Set aside.
  • Briefly heat corn tortillas carefully on grill.
  • Do not overcook, or they will get hard.
  • Break tuna into small chunks or shredded pieces and place about 1 1/2 ounces on a double layer of corn tortilla for each taco.
  • Add shredded cabbage and chopped cilantro and squeeze a wedge of lime over the taco contents.
  • If you wish a spicier taste, add the chilies.
  • Serve.

Use the freshest fish possible in these tacos. Instead of tuna, you could use fresh or smoked salmon, sliced scallops, picked white crabmeat, or chopped cooked king prawns

400g fresh line-caught tuna
3 tbsp olive oil
2 limes , zested, 1 juiced
1 tbsp cumin seeds
1 tbsp coriander seeds
½ tsp chilli flakes
3 ripe avocados , de-stoned and peeled
3 tbsp coriander leaves
1 tbsp pickle liquor from the pickled jalapeño chillies
8small soft flour tacos
vegetable oil , for brushing and drizzling
pickled jalapeño chillies
50g pomegranate seeds
1bunch coriander , chopped, with a few leaves left whole
4 shredded spring onions
2 limes , cut into wedges

Steps:

  • Slice the tuna into 1cm strips, then dice into rough 1cm cubes. Drizzle over the olive oil and scatter over the lime zest, stir and put in the fridge for 20 mins or so. Gently toast the cumin and coriander in a small frying pan, then tip into a pestle and mortar with a pinch of salt and the chilli flakes and crush to a coarse powder. Stir the spice mix into the tuna with the lime juice and put the bowl back in the fridge for at least 10 mins or up to 1 hr.
  • To make the avocado purée, put all the ingredients in a food processor with a pinch of salt and blitz until you have a smooth purée, adding a little oil if it's too thick to blitz. Spoon the mixture into a container.
  • If you like your tacos crispy, heat oven to 180C/160C fan/gas 4, brush them with a little oil, place on a baking sheet and cook for 10-15 mins. To build each taco, spoon on some avocado purée and spread out to the edge. Spoon on the spiced tuna and sprinkle over the chillies, pomegranate seeds, coriander and spring onions, drizzle with more oil and add a lime wedge to the plate. Eat with your hands, if soft, or a knife and fork if crispy.

2 (7 ounce) cans tuna fish, drained and flaked
4 chopped green onions, including some tender green parts
2 tablespoons canned diced green chiles (or to taste)
1 diced tomatoes
8 taco shells
shredded lettuce
grated cheddar cheese
salsa or taco sauce

Steps:

  • Mix together the drained tuna, onions, chilies and tomato. The amounts of onions, chilies, and tomatoes used may vary according to your own tastes.
  • Thoroughly warm on the stovetop or in the microwave.
  • Meanwhile, prepare taco shells according to package directions. Spoon filling generously into prepared taco shells. Sprinkle with lettuce, cheese and salsa as desired.
  • Note: Make a delicious salad by combining the tuna, onions, chilies, and tomatoes as above; do not warm. Add some salsa to taste to mayonnaise and combine with salad ingredients. Serve on shredded lettuce and garnigh with grated Cheddar cheese, sliced black olives, and tortilla chips or Fritos.

Add tuna; sauté to desired doneness, about 3 minutes for medium. Reduce heat to medium-low. Stir in sour cream mixture. Cook just until heated through, stirring frequently, about 2 minutes (do not boil).
  • Heat taco shells in microwave 20 seconds. Fill taco shells with tuna mixture.
  • *Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.
