- Cook noodles al dente as per package directions.
- Combine mushroom soup and milk in a 10 x 10 casserole dish ( or similar in size).

- Preheat oven to 425 degrees F.
- Place bread in food processor and pulse for 30 seconds into bread crumbs (makes about 2 1/2 to 3 cups crumbs).
- Heat oil in a large skillet over medium heat. Add onions and cook, stirring, until onions are soft and translucent, 8 minutes. Add celery and cook, stirring, until just tender, 6 minutes. Add mushrooms and cook, stirring, until mushrooms release their water, 5 to 7 minutes. Add flour all at once and stir immediately and vigorously with a wooden spoon until flour is completely incorporated into vegetable mixture until there are no flour lumps. Add milk and broth, stir to combine and bring mixture to a boil, stirring frequently. Reduce heat to a vigorous simmer and cook, stirring, until liquid has thicke ned and reduced by about 1/2 cup, 7 to 8 minutes. Add salt and pepper and stir to combine. Combine cooked pasta, vegetable-liquid mixture, broccoli, peas and tuna and toss to incorporate. Pour into a 9 by 13-inch casserole. Top with bread crumbs. - In a 5-quart stove-top pot, bring water to a boil. Add pasta and hold at a boil until tender (usually once water starts to boil turn heat down to medium heat and let cook for ten minutes). Then turn off the heat and drain pasta in the 5-quart pot.
- Add tuna, peas, and can of soup. Stir gently to not break the pasta. Pour mixture into a 9x12-inch baking dish or an 8x8 baking dish. Distribute cheese evenly over the pasta mix.
- At this point, you can let it cool and cover it after 20 minutes, refrigerate and prepare for dinner the following evening, or put it directly into a 350°F oven and bake uncovered for 30 minutes.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.

This recipe was handed to my mother by her mother, from about a hundred years ago. I have over the years adapted it to my own tastes, and I personally believe that the cheese is the key. This is great favorite for when you are not well, and need something simple and light.

Steps:
- Preheat oven to 350°F.
- Cook macaroni according to package instructions.
- Then separately, simmer onion and celery together (I have quit using the celery altogether, myself).
- When onion is tender, add mushroom soup, with either half a can of water or milk (I use water).
- I have begun adding the drained tuna into this mixture at this point.
- When macaroni is ready, (approx 8- 10 minutes).
- Combine in casserole dish, with the soup mixture, and tuna if not already in soup mixture.
- Then stir in the shredded cheese.
- Layer on the top, the slices of American cheese, so that the entire top is covered.
- Bake in oven for about 10 minutes or until cheese is nicely melted over the top.
- Serve and enjoy.
