BAKED POTATOES WITH CREAMY HERB TOPPING

- Preheat the oven to 450 degrees F.
- Poke each potato with a fork a few times. Place on a baking sheet lined with foil and bake for 45 to 50 minutes, until they are easily pierced with a knife. Wrap them loosely in the foil for 5 minutes or until ready to serve.
- If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
- Combine the Greek-style yogurt or regular thickened yogurt, the oil, parsley and chives of the in a small bowl.
- Slice the potatoes in half lengthwise and dollop a tablespoon of the creamy herb topping on each half.

A yummy topping for your baked potatoes, or anything that needs a savory sauce! All three sauces are meant to be served on each potato. Yield really depends on if slather your spuds in the savory sauces or if you daintily dab on the delious sauces.

- Topping number 1:.
- Combine all ingredients in a sauce pan on the stove top until heated thru, or nuke in the microwave until heated thru and top over baked spuds.
- Topper number 2:.
- Melt butter and sugar on the stove top in a sauce pan over med low to med heat. Add peeled shallots and stir to coat.
- Add wine and bring to a low simmer for about 15 minutes covered.
- Remove cover and contine simmering for about 10-15 minutes or until tender and caramelized then spoon over spuds!
- Topping number 3:.
- Melt butter on the stove top then blend in flour and stir until mixture is very smooth.
- Add nutmeg if you choose so and cook for about one minute until the flour flavor is cooked out.
- off of the heat add in milk in a slow stream stirring non stop until like milk takes on the butter/flour mixture.
- Return pan to heat and simmer until thickend then add you cheese and stir until melted then spoon onto spuds!

SHRIMP-STUFFED BAKED POTATOES
Instead of a baked potato side, with the usual toppings, add some shrimp and a lovely sauce to create a tasty main dish. We like this served with steamed broccoli and French bread.

- Preheat the oven to 400 degrees F (200 degrees C). Scrub potatoes and dry.
- Place potatoes directly on the center oven rack and bake for 1 hour. During the last 20 minutes of baking time, make the sauce.
- Combine 2 cups milk and heavy cream in a microwave-safe container and microwave on high power for 45 seconds; set aside.
- Melt butter in a large nonstick skillet over medium heat until bubbly. Stir in garlic, salt, pepper, and nutmeg and cook, stirring, about 1 minute. Stir in flour and cook, stirring continually, until the flour mixture is bubbly. Stir in hot milk and cream, and cook, stirring continually, until mixture comes to a boil, 3 to 5 minutes.
- Remove from heat and stir in Gruyere and Parmesan cheeses until melted, about 1 minute. If the sauce is too thick, stir in more milk, in 2 tablespoon increments, until sauce reaches the desired consistency.
- To assemble, cut open each potato and gently flake the flesh of each potato with a fork. Place 1/4 of cooked shrimp on top of each potato and cover with sauce. Sprinkle with chopped parsley and serve.

TWICE BAKED POTATOES WITH SEAFOOD TOPPING
These can be prepared ahead of time and baked when needed. They are delicious served with grilled beef tenderloin steak. A half a potato per person is ample. My husband loves them as leftovers with breakfast the next morning! They're easy to make and very impressive when served.

- POTATOES: Wash potatoes thoroughly, poke with a fork (I use a kebab skewer) and microwave until completely cooked and soft to the touch.
- While they are still warm, cut them in half lengthwise then carefully scoop out centres leaving a shell of the skin about 1/4 inch thick.
- Place the scooped out centres into a separate bowl and mash potato together with sour cream, buttermilk and salt and pepper.
- Stuff the potato shells with the mashed potato and place in a sprayed 8 inch square casserole dish. Set aside. Prepare the topping.
- TOPPING: In a saucepan on low heat combine and stir with a wire whisk: flour, cream cheese, milk, garlic, salt, nutmeg, pepper and heat gently until cream cheese is no longer lumpy.
- Stir in mayonnaise, lemon juice, parmesan cheese and green onion.
- Remove from heat and fold in crab meat and shrimp gently with a rubber spatula.
- Cover and allow to cool to room temperature.
- Spoon the topping mixture over the stuffed potatoes and sprinkle with cheddar cheese and extra Parmesan cheese.
- At this point you can cover the dish with plastic wrap and store in the fridge overnight if you want to prepare them ahead.
- Pre-heat oven to 350 degrees F.
- Bake 20 to 30 minutes until heated through and topping is lightly browned.
