1 can (6 ounces) light water-packed tuna, drained and flaked
1/2 cup shredded cheddar cheese
1/3 cup chopped celery
2 tablespoons chopped onion
1/4 cup mayonnaise
2 pita pocket halves

Steps:

  • In a small bowl, combine the tuna, cheese, celery, onion and mayonnaise. Spoon into pita halves. Place on an ungreased baking sheet. Bake at 400° for 8-10 minutes or until heated through and cheese is melted.

1 lemon, zested
1 1/2 teaspoons salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 1/2 pounds sugar snap peas, stemmed
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1/2 cup white wine
1/4 cup lemon juice
4 teaspoons olive oil
4 (4-ounce) trout fillets, skinned (or other fish about 1/2-inch thick)
8 thin slices lemon
1/4 cup fresh chopped mint leaves

Steps:

  • Special equipment: 4 large sheets of aluminum foil or parchment paper
  • Preheat the oven to 350 degrees F. In a small bowl mix together the lemon zest, salt, and pepper. Set aside.
  • Lay out the 4 sheets of aluminum foil. Place 1/4 of the sugar snap peas, 1/4 of the yellow bell peppers, and 1/4 of the orange bell peppers on each sheet of foil. Over each pile of vegetables drizzle 2 tablespoons of white wine, 1 tablespoon of lemon juice, and 1 teaspoon of olive oil. Sprinkle with salt and pepper and gently toss.
  • Top each pile of seasoned vegetables with a piece of fish. Sprinkle the fish with some of the reserved lemon zest mixture. Top each fish with 2 slices of lemon.
  • Fold up the foil into an air-tight packet. Place the foil packets in the oven and bake for 15 to 18 minutes depending on the thickness of the fish. Sprinkle the fish with mint just before serving.

1 pound 90 percent lean ground beef
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1½ tablespoons barbecue sauce
1½ tablespoons chili powder
2 cups shredded Romaine lettuce
2 tablespoons dijon mustard
2 tablespoons Hidden Valley® Original Ranch® Light Dressing
4 whole wheat pitas split

Steps:

  • 1. Preheat the grill or broiler.
  • 2. In a large bowl, combine the beef, barbecue sauce, chili powder, cumin, garlic powder and onion powder, and mix with clean hands until well blended.
  • 3. In a small bowl, mix the dressing and mustard together until smooth.
  • 4. Divide the beef mixture evenly into four ¼-pound burgers. Grill the burgers for 5 minutes on each side over medium coals for medium doneness.
  • 5. Place the pitas on the grill for 2 minutes or just until warmed through.
  • 6. Serve the burgers tucked inside each pita and topped with the tomato, lettuce and a generous serving of the dressing.

SPINACH AND CHEDDAR SOUFFLE



Spinach and Cheddar Souffle image

3 tablespoons unsalted butter, plus extra for greasing the dish
1/4 cup finely grated Parmesan cheese, plus extra for sprinkling
3 tablespoons all - purpose flour
1 cup scalded milk
1/4 teaspoon of nutmeg
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
4 extra - large egg yolks, at room temperature
1/2 cup grated aged Cheddar cheese, lightly packed
1 package frozen chopped spinach, defrosted and squeezed dry
5 extra - large egg whites, at room temperature
1/8 teaspoon cream of tartar

Steps:

  • Preheat the oven to 400 degrees F. Butter the inside of a 6- to 8 - cup souffle dish (6 1/2 to 7 1/2 inches in diameter x 3 1/2 inches deep) and sprinkle evenly with Parmesan.
  • Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, the nutmeg, cayenne, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
  • Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Cheddar, 1/4 cup of Parmesan and the spinach and transfer to a large mixing bowl.
  • Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
  • Whisk one quarter of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

10 ounces frozen chopped spinach, thawed
1/2 cup chopped onion
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon salt
1 1/2 cups milk
1 cup shredded cheddar cheese or 1 cup swiss cheese
6 1/2 ounces tuna, drained
1 (8 ounce) can water chestnuts, drained, and sliced (optional)
1/3 cup fine dry breadcrumb
1 tablespoon butter, melted

Steps:

  • Cook noodles, drain. Meanwhile, press excess moisture from thawed spinach; set aside.
  • In saucepan cook chopped onion in 3 TBS. butter til tender. Blend in flour, dry mustard, and salt. Add milk all at once. Cook and stir until thickened and bubbly. Add shredded cheese, stir tip melted. Stir in cooked noodles, thawed spinach, water chestnuts and tuna. Put in a 1 1/2 quart casserole dish. Combine bread crumbs and 1 tablespoon melted butter and sprinkle atop. Bake in 350 oven for 40 to 45 minutes or tip heated through. Makes 4 to 6 servings.

2 tsp rapeseed oil
2 garlic cloves , chopped
250g baby spinach
1 tbsp tomato purée
120g can tuna steak in spring water, drained
200g cottage cheese
2 large eggs
4 tbsp plain wholemeal flour
200g can sweetcorn (no added salt or sugar), rinsed and drained
1 small red onion , finely chopped
85g cherry tomatoes , quartered
10 basil leaves , chopped
4 pitted Kalamata olives , sliced
2 tsp balsamic vinegar

Steps:

  • Mix all the ingredients for the salad and set aside. Heat 1 tsp oil in a large non-stick pan and fry the garlic briefly. Stir in the spinach to wilt, then mix in the tomato purée, tuna and cottage cheese. Set aside.
  • Beat the eggs with the flour and 2 tbsp water. Heat the remaining oil in a medium non-stick pan, add half the batter and swirl round the pan to coat the base. Cook briefly until set, then flip over with a palate knife to cook the other side for 1 min. Repeat with the remaining batter. Put the pancakes on serving plates, spoon the filling down one side, roll up and serve with the salad.

2 eggs
500 g canned tuna
3 tablespoons flour

60 g cheddar cheese

1 finely chopped small onion
30 g butter
60 g butter (extra)

salt and pepper
2 teaspoons lemon juice

Steps:

  • Add rice to saucepan of boiling salted water, boil uncovered for 12 minutes or until rice is tender. Drain. Combine rice, one egg, finely chopped onion and melted butter, mix well.
  • Press rice mixture over base and side of greased 18 x 28cm lamington tin.
  • Drain tuna, reserve the liquid, and press flaked tuna over rice pressing firmly.
  • Melt extra butter in a pan, add flour and stir until combined. Remove pan from heat, add milk and tuna liquid and stir well.
  • Return pan to heat and stir until sauce thickens. Add mustard, paprika, salt and pepper. Stir until combined, simmer uncovered for approx 2 minutes. Add well beaten 2nd egg, grated cheese, parsley and lemon juice. Stir until combined. Pour sauce over tuna.
  • Bake uncovered in moderate oven for approx 40 minutes or until firm on top.
