Maple Asparagus Mini Frittatas image

This is a delicious breakfast option for the whole family. Quick and easy. Freezes perfectly for those that pre-plan. Place in a resealable bag and freeze. To reheat, remove from freezer and microwave on high for 1 minute, adding time as needed to heat through.

3 spears fresh asparagus, cut in half
1 serving cooking spray (such as Pam®)
¼ cup milk
4 large eggs
4 teaspoons maple syrup
salt and ground black pepper to taste
¼ onion, diced
¼ cup shredded Swiss cheese

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until tender, 2 to 4 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Spray 6 muffin cups with cooking spray.
  • Whisk milk, eggs, maple syrup, salt, and pepper together in a bowl.
  • Place 1 asparagus half and about 1 teaspoon onion into each of the prepared muffin cups. Pour about 1/4 cup egg mixture into each muffin cup; sprinkle each with Swiss cheese.
  • Bake in the preheated oven until frittatas are golden and puffed, about 25 minutes. Remove promptly and let cool only a few minutes, as they will deflate, like a souffle.

Nonstick vegetable oil cooking spray
8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

1 cup coarsely shredded zucchini
1 cup chopped fresh mushrooms
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
4 eggs, beaten
5 tablespoons chopped ripe olives, divided
2 tablespoons grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon garlic salt
1 small onion, thinly sliced
1/2 cup diced grape tomatoes
1/2 cup shredded Monterey Jack cheese
English muffins, split and toasted, optional

Steps:

  • In a large nonstick skillet, saute squash and mushrooms in butter until tender. Season with salt and pepper; set aside., In a bowl, whisk the flour and eggs until smooth. Stir in reserved vegetables and 1/4 cup olives. Coat 12 muffin cups with cooking spray; fill half full with egg mixture. Bake at 450° for 6-8 minutes or until set., Combine the Parmesan cheese, basil and garlic salt; sprinkle over egg mixture. Combine the onion, tomatoes and remaining olives; spoon over the top. Sprinkle with Monterey Jack cheese. Bake for 5 minutes or until cheese is melted. Serve on English muffins if desired.

12 whole Large Eggs
Salt And Black Pepper
1/4 c. Grated Parmesan Or Romano Cheese
1/2 c. Grated Cheddar Or Monterey Jack Cheese (more To Taste)
2 dashes Hot Sauce, Optional
2 tbsp. Butter
1 whole Medium Onion, Halved And Sliced Thin
1 whole Baked Potato, Cooled And Diced
2 c. Torn Kale Leaves Or Whole Spinach Leaves
2 whole Jarred Roasted Red Peppers, Sliced Thin
1/4 c. Chopped Green Or Black Olives

Steps:

  • Preheat the oven to 375 F.Beat together the eggs with the salt and pepper (do not over-beat; just mix until the eggs mostly come together.) Stir in the grated cheeses and set aside. (Stir in hot sauce if using.)In a large oven-proof non-stick skillet, melt butter over medium-high heat. Add the onions and cook for several minutes, stirring frequently, until the onions are soft and golden brown. Add diced potato, sprinkle with salt and pepper, and stir to cook with the onion for a couple of minutes. Add the kale and stir to cook about 1 minute. Finally, add the roasted red peppers and olives and stir until everything is hot.Make sure all the ingredients are evenly distributed across the bottom of the skillet, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for 30-45 seconds to set the edges, then put the skillet in the oven.Watch the frittata as it cooks. Let it cook in the oven for 10-12 minutes until the eggs are set but remove it before the eggs brown very much on top. Slide the frittata out of the skillet and onto a cutting board. With a long serrated knife, slice it into wedges and serve warm with fresh fruit. NOTE: Use any ingredients you want! Mushrooms, leeks, different cheeses, tomatoes, zucchini, squash, bell peppers. 12 slices prosciutto
1 tbsp olive oil
1 onion , chopped
125g pack asparagus tips
6 eggs
100ml milk
85g parmesan , grated

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 12-hole muffin tin and line each hole with a slice of prosciutto to cover the base and sides. Heat oil in a small frying pan and cook onion for 5 mins, until soft. Meanwhile, snap the tip ends off the asparagus and set aside. Finely slice the stalks and add to the onions when soft. Cook for 2-3 mins more, then remove and cool.
  • Beat the eggs, milk and ¾ of the Parmesan together. Add some onion mix to each muffin hole. Divide over the egg mix, then top with the asparagus tip ends. Sprinkle over the remaining Parmesan and cook for 18-20 mins or until set.
  • Allow to cool for a few mins then remove from tin and eat warm or cold.
