My mother loved the outdoors and especially enjoyed working in her garden. When she served this salad, she would first prepare the dressing. The last thing she would do is go out to the garden to pick some lettuce. Mother timed all of this to serve my dad the freshest salad ever.

2 quarts fresh torn leaf lettuce
2 tablespoons sliced green onions
5 slices bacon
1/4 cup vinegar
1 teaspoon ground mustard
1-1/2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic salt

Steps:

  • Place lettuce and onions in a salad bowl; set aside. In a skillet, fry bacon until crisp. Remove bacon; set aside. In the drippings, combine all remaining ingredients. Bring to a boil, stirring constantly. Immediately pour over salad. Crumble bacon and add to salad; toss well. Serve immediately.

1 cup blanched slivered almonds
2 tablespoons sesame seeds
1 head romaine lettuce, torn into bite-size pieces
1 head red leaf lettuce, torn into bite-size pieces
1 (8 ounce) package crumbled feta cheese
1 (4 ounce) can sliced black olives
1 cup cherry tomatoes, halved
1 red onion, halved and thinly sliced
6 fresh mushrooms, sliced
¼ cup grated Romano cheese
1 (8 ounce) bottle Italian salad dressing

Steps:

  • Heat a large skillet over medium-high heat. Place the almonds in the skillet, and cook, stirring frequently until lightly browned. When the almonds are beginning to turn, add sesame seeds, and cook 1 more minute, or until seeds are toasted.
  • In a large salad bowl, combine lettuce with feta cheese, olives, almonds, sesame seeds, tomatoes, onion, mushrooms, and Romano cheese. When ready to serve, toss with Italian dressing.

From an old Sunset International Cookbook. The addition of sugar balances the strong flavor of the cabbage. Tinged with gold, this toasted cabbage makes an excellent accompaniment to chicken, pork, etc. Time consuming but worth the effort.

1 large head green cabbage, cored and coarsely chopped (about 2 1/2 pounds)
1 tablespoon salt
1/4 cup butter or 1/4 cup combination of butter and oil
3 tablespoons sugar (I use raw or unbleached white sugar)
1/4 teaspoon fresh ground black pepper

Steps:

  • In a large bowl mix the cabbage and salt. Let stand for 30 minutes. Pour into a colander and rinse cabbage under cold running water, squeezing out as much water as possible. (You can also use a salad spinner to remover the excess water. ).
  • Melt butter in a wide frying pan over medium heat. Add the cabbage and cook uncovered stirring occasionally until cabbage is a bright green color and limp, about 20 minutes.
  • Add sugar and pepper. Cook, stirring frequently, until the cabbage is soft and lightly browned about 30 minutes longer.
