EASY PESTO TORTELLINI SKEWERS

Steps:
- Cook tortellini according to package instructions. Drain and place either back in pan or in a large bowl.
- Stir pesto into tortellini to coat evenly.
- Drain liquid from sun dried tomatoes and place in small bowl.
- Skewer one tortellini followed by a strip of tomato then one more tortellini and one more tomato.
- Refrigerate until serving.
TORTELLINI SKEWERS

Steps:
- Mix together the olive oil, pesto and vinegar in a bowl.
- On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
- Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.
FESTIVE MARINATED TORTELLINI SKEWERS
Steps:
- In a large bowl, whisk together the first 6 ingredients. Season the vinaigrette with salt and pepper. Set aside.
- Cook the tortellini in a pot of boiling water according to the package directions. Do not overcook.
- Drain the tortellini and add the hot pasta to the dressing so flavors will be absorbed.
- Gently stir in the peppers and green onions. When the pasta has cooled, add the mozzarella.
- Let the mixture marinate at least 2 hours or overnight.
- To assemble, use toothpicks at least 4 inches long.
- Skewer 1 basil leaf, 1 red bell pepper square, 1 tortellini, 1 poblano pepper square and 1 mozzarella cube on the toothpicks. (Can be assembled 1 day ahead.)

I sampled a similar appetizer at a party that inspired this simple idea. It would be easy to add additional foods to the skewers, based on your preferences. Use your favorite store bought or homemade pesto sauce!

Steps:
- Combine tortellini with pesto sauce and mix well.
- Cut each tomato into 4 strips.
- Place one tortellini onto a skewer, followed by a piece of sundried tomato. (I found it most effective to hook each piece of sundried tomato to the skewer twice).
- Add another tortellini and tomato piece, ending with a third tortellini.
- Chill until ready to serve.

TORTELLINI SALAD WITH SUN-DRIED-TOMATO AND BALSAMIC

- Preheat oven to 450 degrees F.
- Bring a pot of salted water to a boil for the tortellini. Place the peppers in a roasting pan and roast in preheated oven, checking every 15 minutes, and turning them with tongs until the skin is fully wrinkled and charred black. White the peppers are roasting, boil tortellini until al dente, drain, and set aside to cool. Put the charred peppers into a bowl filled with a couple of inches of ice water. Once cooled, you can then use your fingers to work quickly to slip off and discard the skins of the peppers while they are in the water. Transfer them to a plate, peel away any remnants of the charred skins, slice open and remove the stem and seeds, then julienne the peppers and set aside.
- Through the feed opening of a running blender, add scallions, garlic cloves, sun-dried tomatoes, and 1/2 cup of the fresh basil leaves (packed), reserving the rest of the basil. Add the vinegar and blend until a paste is formed, then leaving the blender running, add the olive oil in a slow steady stream allowing the mixture to emulsify. Season the dressing with salt and pepper, to taste.
- Julienne the rest of the basil (except for the sprigs for garnish). Toss with the tortellini, julienned red bell peppers, and dressing. Transfer to serving dish and decorate with reserved basil sprigs. Can be served at room temperature or chilled.
TORTELLINI SKEWERS AND SUNDRIED TOMATO SAUCE

- Prepare the tortellini as directed. Add a little fresh water to the cooked tortellini to keep them from sticking together. Thread 24 4-inch skewers with 3 tortellini each. Arrange the skewers on a platter and sprinkle with 2 tablespoons of the parsley and 1 tablespoon of the basil. In a small mixing bowl, mix together the remaining parsley, basil, oil, Parmesan, lemon juice, garlic, sundried tomatoes, cayenne pepper, salt and pepper. If desired, puree the sauce in a blender for 1 minute. With a pastry brush, brush the sauce on the tortellini. Reserve the remaining sauce to dip the skewers into when serving.
