BITTER CHOCOLATE, LAVENDER, AND BANANA TEA LOAF



Bitter Chocolate, Lavender, and Banana Tea Loaf image

This is an updated version of an old favorite. Still a wonderful comfort food. Cut a slice and slather with some creamy butter; sit and enjoy with a cup of your favorite cuppa tea!

1 cup mashed banana
¾ cup white sugar
½ cup butter, softened
½ cup vegetable shortening
2 large eggs
2 teaspoons grated fresh orange zest
2 teaspoons dried orange peel
1 teaspoon grated nutmeg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
½ cup chopped bitter chocolate
1 teaspoon dried lavender flowers
1 tablespoon coarse sugar for decorating

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan and line with parchment paper.
  • Beat banana, sugar, butter, and shortening together until smooth; mix in eggs. Stir fresh orange zest, dried orange peel, nutmeg, and vanilla extract into mixture. Gradually stir flour into moist ingredients. Fold chocolate and lavender into batter. Spoon batter into prepared loaf pan. Sprinkle coarse sugar crystals over batter.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.

This is my mother's recipe, a bread she always made at Thanksgiving and Christmas to be used for tea sandwiches with a cream cheese filling. But it may also be eaten on its own like a cake. Because it is so delicious yet simple to put together, it makes a great food gift or potluck contribution. Substitute raisins for dates, if you wish.

1 ½ cups chopped pitted dates
1 ½ cups white sugar
1 teaspoon salt
2 tablespoons butter
1 ½ cups boiling water
1 egg, lightly beaten
2 ¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 ½ teaspoons vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 9x5 inch loaf pan.
  • Place the dates, sugar, salt, and butter into a bowl, and pour in the boiling water. Stir together and set aside to cool. Once cool, mix in the egg.
  • Stir the flour, baking soda, and cream of tartar together in a bowl. Pour the raisin mixture over the flour mixture, and stir together until thoroughly combined. Mix in the vanilla extract and, if desired, walnuts. Pour batter into prepared loaf pan.
  • Bake in preheated oven until knife inserted in center comes out clean, about 1 hour 15 minutes. Cool in pan 10 minutes before turning out onto a rack to cool completely. Wrap in aluminum foil and store in the refrigerator.

275 g mixed dried fruit
2 Earl Grey teabags
60 g soft dark brown sugar
2 large eggs
275 g plain flour
2 1/2 teaspoons baking powder
1 teaspoon dried lavender
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 orange, zest of

Steps:

  • Preheat the oven to 170C/335F and grease line a loaf tin with grease proof paper.
  • Strongly brew 400ml of Earl Grey tea and the dried lavender. After 15 minutes add 300ml of this to a saucepan on medium heat.
  • Add mixed fruits to the pan, bring to the boil then down to a simmer. Stir in the sugar until dissolved then take the pan off the heat.
  • Measure out the dry ingredients into a mixing bowl and briefly mix to combine.
  • Beat the eggs then add them to the fruit-tea mixture along with the orange zest and stir to combine.
  • Add the dry ingredients to the fruit mixture a little at a time, stirring to incorporate until there are no floury streaks running through.
  • Scoop the batter into the lined loaf tin and level off with a spatula before baking for 50-55minutes.

A calming, soothing, and restorative blend using three of my favorite herbs--lavender, mint, and lemon balm! Makes 2 lovely cups of tea or tisane. You can add a tea bag of your choice to make a stronger tea if you wish, and add another cup of water to make 3 cups of tea. Would be wonderful served with recipe #383209.

1 teaspoon fresh lavender flowers
2 tablespoons fresh mint leaves
2 tablespoons fresh lemon balm leaves
2 cups boiling water
1 tea bag (optional)
honey, for serving (see Homemade Lavender Honey)

Steps:

  • Rinse the inside of the teapot with hot water.
  • Place the loose herbs into the teapot, or into a tea ball. Add boiling water to the pot and steep for 5 minutes; strain.
  • Serve in warmed china cups, with honey to taste. Makes two cups of tea.
  • Note: If you would like a stronger tea, add a black tea bag or loose tea of your choice and you can add another cup of water to make 3 cups of tea.

ROMANTIC ROSEMARY OR LAVENDER BREAD



Romantic Rosemary or Lavender Bread image

Adapted from Gourmet magazine. I have had this one in my files for ages and decided to share. This is a great choice for a dinner party or a romantic meal. I tried this with dried herbs and used half the amount when fresh was not available (Herbes de Provence is also a nice choice - again, using half the amount as the fresh). Prep time includes 30 minutes of actual prep work and the rest of the time is rising time. This makes two round loaves, about 10 slices per loaf.

3 1/4 teaspoons active dry yeast
1 cup lukewarm water (120F)
1 cup buttermilk
1/3 cup olive oil
1/4 cup fresh rosemary or 1/4 cup fresh lavender blossoms, finely chopped
1 tablespoon salt
1 teaspoon salt
6 3/4 cups all-purpose flour (approximately)
yellow cornmeal, as needed
coarse salt, for sprinkling on loaves (optional)
spray bottle filled with cold water, for spritzing loaves

Steps:

  • Combine yeast and lukewarm water until well blended and let sit about 10 minutes- it should look foamy and thick (if your water was too hot or your yeast is bad, it will not get foamy and you'll need to start over).
  • Combine buttermilk, oil, rosemary (or lavender), 1 Tbsp plus 1 tsp salt in a mixer bowl, then add the yeast mixture and combine well.
  • Add flour gradually, beating slowly until enough flour has been added to form a dough ball that leaves the sides of the bowl in one mass.
  • Dump any remaining flour onto a flat surface, dump dough onto that surface, and with floured hands knead dough until smooth and elastic, about 5-10 minutes.
  • Set dough into a large greased bowl, flip dough over to grease both sides, cover with plastic wrap and set in a warm place to rise until doubled in bulk- about 1 1/2 hours.
  • On dough has risen, place dough onto a floured surface and cut into equal halves and form each half into a round loaf shape.
  • Set loaves onto a large greased baking sheet dusted with cornmeal.
  • Cover with a clean, slightly damp towel and let rise 1 hour.
  • Preheat oven to 425 degrees F.
  • Using a serrated knife, slash the top of each loaf with an asterisk (*) pattern and sprinkle each with a little coarse salt (optional).
  • Bake in center of the preheated oven for 15 minutes, spritzing occasionally (at least 2-3 times).
  • Continue baking another 45-55 minutes (no more spritzing) or until the loaves sounds hollow when rapped on the bottom and they appear golden brown.
  • Let cool on racks completely.

2tbsp. dried lavender flowers, finely chopped, or 3 tbsp. fresh chopped flowers
2 cups all purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
6 tbsp. butter, softened
1 cup sugar
2 large eggs

Steps:

  • 1. Grease a 9x5x3 inch loaf pan. Preheat oven to 325 degrees. Heat milk with lavender almost to a boil, then steep until cool. Mix flour, baking powder, and salt together in a bowl. In another bowl, cream butter, then gradually add sugar, then the eggs, one at a time, beating till light and fluffy. Add flour mixture alternately with the lavender milk, in three parts. Mix just until the batter is well blended. DO NOT OVERBEAT!!!! Pour into the loaf pan and bake for 50 minutes, or until a toothpick inserted into the middle comes out clean. Cool in pan for 5 minutes and then removed to a wire rack. When completely cool place on serving plate or platter. You can drizzle a simple sugar glaze over the loaf or serve with sprinkled confectioners sugar, my preferred serving method!
