CADILLAC PIMENTO CHEESE
My mom made this recipe for Christmas 2002. She had nothing written down but I loved it so much I asked her how she did it and she wrote it down for me. All the measurements are approximate so if you find something that works better, let me know!

- In a bowl, mix the processed American cheese, cream cheese, mayonnaise, and pimentos. Season with onion powder, cayenne pepper, and garlic powder. Cover, and chill until ready to serve.

PIMIENTO CHEESE CANAPES
From Cooking Light magazine. I used light cream cheese, but full fat everything else. Although the recipe stated that the pimientos should be undrained, I drained mine for a thicker consistency. I think the smoked paprika adds wonderful flavor to this.

Steps:
- Place cream cheese in a medium bowl; beat with a mixer at medium speed until smooth. Stir in mayonnaise, onion, Worcestershire, salt, paprika and pepper.
- Add cheddar cheese, pecans, and pimiento; stir well.
- Cover and chill up to 3 hours.
- Serve with bread.

- After cheese has bloomed, open and dice.
- Dice roasted red pepper.
- Add all ingredients to a stand mixer. Mix on low to desired consistency. Refrigerate up to a week.
