Cajun Spiced Roasted Pumpkin Seeds image

Double or triple this roasted pumpkin seed recipe depending on how many cups of seeds you have. One large pumpkin will generally yield 1 cup or pumpkin seeds, and smaller pie pumpkins will yield about the same amount. Toss a salad with these seeds, sprinkle over a chicken dish, or serve as a snack.

1 cup raw whole pumpkin seeds, washed and dried
1 teaspoon paprika
¾ teaspoon Cajun seasoning, or to taste
salt to taste
2 dashes Worcestershire sauce
1 tablespoon butter, melted

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Toss pumpkin seeds with paprika, Cajun seasoning, and salt until coated. Mix Worcestershire sauce with melted butter in a small bowl, pour over seeds, and stir to to combine. Spread seeds onto a baking sheet in a single layer.
  • Roast seeds in the preheated oven until browned and crunchy, 45 minutes to 1 hour; stir and turn seeds several times during roasting.

2 cups fresh pumpkin seeds
2 tablespoons canola oil
1 teaspoon Worcestershire sauce
1/8 to 1/4 teaspoon hot pepper sauce
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • In a small bowl, toss pumpkin seeds with oil, Worcestershire sauce and hot pepper sauce. Combine the salt, paprika, cumin and cayenne; sprinkle over seeds and toss to coat. , Line a 15x10x1-in. baking pan with foil; grease the foil. Spread pumpkin seeds in pan. Bake, uncovered, at 250° until lightly browned and dry, 45-50 minutes, stirring occasionally. Cool completely. Store in an airtight container.

Spicy roasted pumpkin seeds are seasoned with olive oil, smoked paprika, garlic, and cayenne. They make a wonderful snack!

1 cup raw pumpkin seeds (rinsed and dried on a clean kitchen towel (4 oz))
1 tablespoon extra-virgin olive oil
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon fine salt)
1 teaspoon smoked paprika (or chili powder)
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper ((up to 1/2 teaspoon if you like your food spicy))

Steps:

  • Preheat your oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper.
  • In a medium bowl, using a large spoon or your clean hands, mix the cleaned and dried pumpkin seeds, the oil, and the seasonings.
  • Spread the pumpkin seeds in a single layer on the prepared baking sheet. Roast until golden, stirring the seeds halfway through, 15-20 minutes. Start checking after 15 minutes and watch out to make sure they don't burn - they progress from pale to brown very fast.
  • Serve immediately - they are wonderful when warm!

1 1/2 tablespoons ancho chili powder
1 tablespoon kosher salt
1 teaspoon chile de arbol powder

Steps:

  • Preheat oven to 350 degrees F.
  • Place the pumpkin seeds in a large bowl and toss with the oil, ancho powder, salt, and chile de arbol powder. Spread evenly on a baking sheet and bake for 8 to 10 minutes, stirring once. Let cool and store in an airtight container.

A Cajun twist with a "little" heat to spice it up for a fall classic snack. Best made right from the pumpkin, or soak overnight in a little salt water before roasting. I use 33% Less Sodium Salt to make it a "little" healthier.

2 cups raw pumpkin seeds
1 tablespoon low sodium salt or 1 tablespoon table salt
1 teaspoon cajun seasoning or 1 teaspoon creole seasoning
1/8 teaspoon cayenne pepper
1 teaspoon extra virgin olive oil

Steps:

  • Clean and wash all the seeds picking out all of the pumpkin guts and pat dry.
  • Preheat oven to 300°F.
  • Mix salt and and the other 2 seasonings into a salt shaker.
  • Place 1/2 teaspoon of oil and seeds into a large Ziplock bag and shake to coat.
  • Use the other 1/2 teaspoon to coat 1 or 2 cookie sheets.
  • Spread seeds out evenly onto cookie sheets and sprinkle the salt mixture onto the seeds.
  • Place cookie sheet into the oven until the seeds are a light golden brown, usually 20 to 30 minutes. Taste 1 or 2 after 20 minutes to see if they are crunchy or need more time and Enjoy.
  • *You can soak the seeds in saltwater overnight if you really like them salty.*.

  • Toss with seasoning.
  • Combine butter and worcestershire and stir in.
  • Bake on 300 degrees for 45-60 minutes until brown and crunchy.
