Steps:

  • Put the tomatoes, cilantro, garlic, olive oil, orange juice, and red pepper flakes in a food processor. Pulse until the ingredients are combined but still chunky. Season with salt and pepper, to taste. Transfer to a small bowl and serve with tortilla chips.

1/3 cup roughly chopped fresh flat-leaf parsely or basil (or both)
1 Tbs. coarsely chopped fresh thyme
1 tsp. minced garlic (1 medium clove)
1/4 tsp. freshly ground black pepper; more to taste
Pinch crushed red pepper flakes (optional)

Steps:

  • Combine all of the ingredients in a non-reactive bowl large enough to hold the tomatoes and the cooked pasta; mix well. Let the sauce sit at room temperature for at least 30 minutes and up to 3 hours.
  • Toss the sauce with just-cooked pasta. Adjust the seasoning to taste with salt and pepper and serve immediately.

1 large jalapeno chile, minced, seeds and ribs removed and reserved
1/2 cup minced red onion
1 small garlic clove, minced
1/4 cup minced fresh cilantro leaves
1/2 teaspoon salt
1 pinch ground black pepper
2 -6 teaspoons fresh lime juice

Steps:

  • Set a large colander in a large bowl.
  • Place the tomatoes in the colander and let them drain for 30 minutes.
  • As the tomatoes drain, layer the jalapeno, onion, garlic, and cilantro on top.
  • Shake the colander to drain off the excess tomato juice; discard the juice and wipe out the bowl.
  • Transfer the contents of the colander to the now-empty bowl.

Steps:

  • Preheat a medium heavy griddle or cast-iron pan over medium-high heat. Add the whole tomatoes, serrano chile and shallot and roast on the dry skillet, turning frequently, until golden brown on all sides, about 8 minutes.
  • Transfer the vegetables and chile to a food processor and add the chicken broth and cilantro. Pulse until smooth but with some small pieces remaining, or to the desired consistency. Season with salt and pepper.

2 ripe tomatoes, seeded and chopped
2 to 3 tablespoons chopped fresh mint
2 tablespoons capers
1 clove garlic, smashed
1 teaspoon red pepper flakes
1 teaspoon orange zest
1/3 cup olive oil
Kosher salt and freshly cracked pepper
12 ounces angel hair pasta
Parmesan, for grating

Steps:

  • In a large pasta serving bowl, mix together the olives, tomatoes, mint, capers, garlic, red pepper flakes, orange zest and olive oil. Season with salt and freshly cracked pepper. 4 cloves garlic, unpeeled
1 serrano chile, cut in half, see Cook's Note
1 shallot, skins removed, halved
1/2 small yellow onion, skin removed and quartered
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper, for sprinkling

Steps:

1 -3 large garlic clove (depending on how much you like raw garlic)
1 1/2 teaspoons coarse salt
1/4 cup extra virgin olive oil
4 medium tomatoes
3 ears sweet corn
1/4 cup fresh basil
1/4 cup flat-leaf Italian parsley
fresh ground black pepper, to taste
1 -2 fresh jalapeno pepper (optional)

Steps:

  • Crush garlic in garlic press or mortar and mash with salt to create a paste. Add the olive oil and mix well.
  • Chop tomatoes in 1/2-inch cubes. Add them with juices to garlic mixture in large bowl.
  • Use a small, sharp knife to cut the corn kernels from the cob. Add to the bowl.
  • Finely chop basil and parsley. Add to bowl, along with lots of pepper. Add chopped jalapenos, if desired. Mix well, cover, and let stand at room temperature while cooking pasta. For the most flavor, let the sauce stand longer (1-3 hours), but do not refrigerate.

6 very ripe medium-sized tomatoes (about 8 ounces each)
4 large cloves of garlic, finely chopped
1/4 cup extra-virgin olive oil
1/4 cup plus 1 tablespoon chopped fresh mint leaves
2 teaspoons finely grated lemon zest
1 teaspoon sugar
Freshly ground black pepper, to taste
12 ounces dried farfalle (butterfly pasta)
Salt, to taste
6 ounces ricotta salata cheese (optional garnish)

Steps:

  • 1. Core the tomatoes and cut them into 1/2-inch pieces. Place in a large serving bowl with the garlic. (If the tomatoes seem watery, drain them first in a colander for 20 minutes, tapping it once or twice.)
  • 2. Stir in olive oil, 1/4 cup of the mint, the lemon zest, sugar, and pepper. Let rest for 2 to 4 hours for flavors to blend.
  • 3. Before serving, bring a large pot of salted water to a boil. Cook the pasta until just tender; drain. Add to the tomato sauce; toss well. Before serving, season lightly with salt. For a time-saver,I didn't roast the jalapenos it calls for,but just added them as is.I also couldn't find the dry chilis so omitted those as well.It still came out perfect.Add as many or as little jalapenos as you want depending on the strength of youre taste buds.Bon apetite.
