FRESH TOMATO AND CARAMELIZED ONION JAM RECIPE

The bright sweet and tart flavor of in-season tomatoes are preserved in this jam to keep that deliciousness coming into the fall.

3/4 pounds yellow onions (about 2 medium), finely sliced
1 tablespoon butter
1 1/2 pounds roma tomatoes (about 6 medium), peeled, cored, seeded, and finely chopped
1/2 cup white sugar
1/4 cup light brown sugar
2 tablespoons juice from 1 lemon
2 tablespoon apple cider vinegar
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Steps:

  • Melt butter in a 3-quart stainless-steel saucepan or saucier or a 4- or 5-quart enameled Dutch oven over high heat. Add onions and cook, stirring frequently, until bottom of saucepan is glazed in a pale brown fond, about 5 minutes. Add 2 tablespoons water and scrape up fond with wooden spoon. Continue to cook, stirring frequently, until fond has built up again, about 2 minutes longer. Add 2 more tablespoons water and scrape up browned bits. Repeat cooking, adding water, and scraping until onions are completely softened and a deep, dark brown, about 15 minutes total.
  • Add tomatoes, white sugar, brown sugar, lemon juice, vinegar, salt, and red pepper flakes in with the onions; stir to combine. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, until tomatoes have broken down and jam has thickened and developed a jammy consistency, 1 to 1 1/2 hours. Remove from heat. Transfer jam to an airtight container and store in refrigerator for up to 2 weeks.

3 pounds ripe beefsteak tomatoes, peeled and chopped, reserving any juices
3 cups sugar
2 juice oranges, quartered, seeded, and sliced crosswise 1/8 inch thick
1 lemon, quartered, seeded, and sliced crosswise 1/8 inch thick
1/8 teaspoon salt
Special Equipment
3 (1/2-pint) canning jars (optional) with lids and screw bands; a wide 5- to 6-quart heavy pot (at least 9 1/2 inches in diameter)

Steps:

  • If desired, sterilize jars , lids, and screw bands.
  • Chill 2 small plates (for testing marmalade).
  • Cook all ingredients, including reserved juices from tomatoes, in pot over moderate heat, stirring frequently, until sugar is dissolved, about 6 minutes. Simmer, stirring frequently as marmalade thickens (to prevent scorching) and adjusting heat as needed, until marmalade tests done, 50 minutes to 1 1/4 hours. Begin testing for doneness after 50 minutes: Drop a spoonful of marmalade on a chilled plate, then tilt; it should remain in a mound and not run (if necessary, remove pot of marmalade from heat while testing).
  • If not processing, cool marmalade, uncovered, then chill in an airtight container (preferably glass).
  • If processing, drain jars upside down on a clean kitchen towel 1 minute, then invert. Ladle marmalade into jars, leaving 1/4 inch of space at top. Run a thin knife between marmalade and jar to eliminate air bubbles.
  • Seal, process, and store filled jars (and boil marmalade in jars 10 minutes).
  • Let marmalade stand in jars at least 1 day for flavors to develop.

6 medium yellow onions, about 8 cups, thinly sliced
2 tablespoons vegetable oil
1/2 cup sugar
salt
1/2 cup apple cider vinegar

Steps:

  • Thinly slice the onions by first cutting in half, then removing the core at an angle. Thinly slice the onions like a fan. Over medium heat, add the oil followed by the onions. The onions will start to sweat and cook down, releasing their liquid. Continue to cook over low heat, stirring every 2-3 minutes until the moisture is gone, 20 minutes or more as needed, depending on moisture level of the onions.
  • When all of the moisture's been cooked out of the onions, turn the heat back to medium, add the sugar, a pinch of salt, and the vinegar and bring to a boil to dissolve the sugar and combine. Turn the heat to low and reduce until the mixture is a thick jam, about 45 minutes.

2 medium tomatoes
1 1/2 tablespoons olive oil
2 cipollini onions, finely chopped
Zest and juice of 1 lemon
1 tablespoon cider vinegar
1 tablespoon light-brown sugar
Coarse salt and freshly ground pepper

Steps:

  • Bring a large pot of water to a boil over high heat. Prepare an ice-water bath; set aside. Using a small sharp knife cut an "X" in the core of each tomato. Place tomatoes in boiling water and cook until skins begin to split, 30 to 60 seconds. Drain and immediately transfer to ice-water bath. Peel tomatoes and coarsely chop; set aside.
  • Heat oil in a medium skillet over medium-high heat. Add onions and cook, stirring, until lightly browned, 2 to 3 minutes. Reduce heat to low and continue cooking until onions are softened, about 5 minutes more. Add chopped tomatoes, lemon zest, lemon juice, vinegar, brown sugar, and 2 tablespoons water to skillet. Cook, stirring occasionally, until thickened, 2 to 3 minutes. Remove from heat and transfer to a medium bowl. Refrigerate until chilled.

1 1/2 lbs red onions
3 tablespoons unsalted butter or 3 tablespoons Earth Balance margarine
1/4 cup sugar
1 cup dry red wine
1/4 cup balsamic vinegar, plus
2 -3 teaspoons balsamic vinegar, if needed
1/4 teaspoon salt (to taste)

Steps:

  • Halve onions lengthwise and cut into thin slices.
  • Heat butter in large heavy skillet set over medium heat.
  • When melted and hot, add onions and sugar and stir occasionally until onions are soft and start to caramelize, 10 to 15 minute.
  • Add wine and 1/4 cup vinegar and stir until mixture almost comes to a boil.
  • Reduce heat and simmer until liquids have evaporated and onion is shiny, 15 to 20 minutes.
  • Remove from heat and sprinkle in salt, adding more if needed.
  • For tarter taste, stir in another 2 to 3 teaspoons vinegar.
  • The marmalade can be prepared 5 days ahead; cover and refrigerate.
  • Reheat, stirring, just to warm before using. Makes about 1 1/2 cups.

3 quarts tomatoes (12 cups, after cutting)
2 oranges
2 lemons
10 cups sugar
2 tablespoons whole cloves
6 tablespoons broken cinnamon sticks

Steps:

  • REMOVE peel from tomatoes and cut in small pieces.
  • Slice oranges and lemons very thin and quarter the slices.
  • Pour off juice from the tomatoes.
  • Add sugar.
  • Stir until the sugar is dissolved.
  • Add oranges, lemons, and spices which have been tied loosely in cheesecloth bag.
  • Place mixture over high heat and boil rapidly, stirring often.
  • Cook until clear and thick (about 50 minutes).
  • Pour into sterilized jars to within 1/2 inch of top.
  • Put on cap, screw band firmly tight.
  • Process in Boiling Water Bath 10 minutes.

5 cups coarsely chopped peeled tomatoes (about 2 1/2 lb.)
2 large oranges (preferably organic, as pesticides are in peels)
1 lemon (ditto)
4 cups granulated sugar

Steps:

  • Place tomatoes in a very large non-reactive saucepan.
  • Halve and seed oranges and lemon. Finely chop fruit in food processor or blender and add to tomatoes. Bring mixture to a full boil over high heat. Slowly add sugar, stirring until sugar is completely dissolved. Return to a boil and boil rapidly until mixture forms a gel, about 1 hour, stirring frequently. Remove from heat.
  • Ladle into hot jars and process for 10 minutes in a boiling water bath.
  • VARIATION, GINGERED TOMATO MARMALADE. Add 3 tablespoons finely chopped peeled gingerroot during cooking.
