MINI PUMPKIN CAKES WITH PRALINE SAUCE
My family's favorite holiday dessert is a real Southern treat. A warm praline sauce and sprinkling of pecans make each small pound cake even more decadent. -Diane Roark, Conway, Arkansas

Steps:
- In a large bowl, combine the first seven ingredients. In another bowl, beat the pumpkin, eggs, sugar, oil and butter until well blended. Gradually stir into dry ingredients just until blended. , Transfer to six greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For sauce, in a small saucepan, combine the brown sugar, butter and cream. Cook and stir over medium heat until sugar is dissolved. Pour over cakes; top with pecans.

MINI PUMPKIN CAKES
Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Cut the tops from the pumpkins and set aside. Hollow out the centers of each pumpkin and place the pumpkins onto one of the prepared baking sheets. Prepare the cake mix according to the package instructions, stirring in 1/4 cup of the pumpkin seeds at the end. Pour some cake batter into each pumpkin, filling halfway. Sprinkle the top of each with the remaining 1/4 cup pumpkin seeds.
- Lightly brush the cut side of each pumpkin top with vegetable oil and sprinkle with sugar. Place the pumpkin tops cut-side down on the other baking sheet.
- Put both baking sheets in the oven. Bake the pumpkin tops for about 25 minutes, and then set aside to cool. Bake the batter-filled pumpkins until a wooden toothpick inserted in the centers comes out clean, about 1 hour. Cool completely on a cooling rack.
- Put a pumpkin top on each pumpkin cake and serve with maple syrup.
PRALINE PUMPKIN DESSERT
I know that pumpkin pie is for the holidays; however for a change, try this. Extra easy and super good!

Steps:
- Heat oven to 350°.
- Grease bottom and sides of 13x9 baking dish, with shortening.
- Beat pumpkin, milk, eggs, sugar and 4 teaspoons pumpkin pie spice in medium bowl with wire whisk until smooth.
- Pour into pan.
- Sprinkle dry cake mix over pumpkin mixture.
- Sprinkle with pecans.
- Pour melted butter evenly over top of dessert.
- Bake 50-60 minutes or until knife inserted in center comes out clean.
- Cool slightly.
- To serve, cut dessert into 4 rows by 3 rows.
- Serve warm or chilled with dollop of whipped cream sprinkled with pumpkin pie spice.
- Store covered in refrigerator.
MINI PUMPKIN POUND CAKES
These loaf cakes are always a winner, they always turn out great, they rise so high, and are so moist, if desired, you could add mini chocolate chips, or nuts, or both! If you like you could dust with icing sugar after baking.

- Set oven to 350 degrees, (second lowest position).
- Grease bottoms only of mini loaf pans.
- In a large bowl, beat together sugar, butter, oil; add eggs, until well combined (about 2-3 minutes).
- Combine/sift flour, baking soda, cinnamon, nutmeg, cloves and salt.
- Add the dry mixture to egg mixture, with canned pumpkin; mix well.
- Pour/transfer into regular or fluted mini loaf pans, filling 3/4 full.
- Bake for about 25-30 minutes, or until cake test done with toothpick.

- Heat oven to 350°F.
- Line 2 (9-inch) round pans with parchment; spray with cooking spray. Microwave butter and 3/4 cup sugar in microwaveable bowl on HIGH 2 min.; stir until blended. Pour into prepared pans; tilt pans to evenly cover bottoms. Reserve 1 Tbsp. nuts; sprinkle remaining nuts over butter mixture in pans. Beat cake mix, pumpkin, water, oil and eggs in large bowl with mixer until blended; pour over nuts in pans.
- Bake 26 to 28 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Loosen cakes from sides of pans with knife. Invert cakes onto wire racks; gently remove pans and parchment. Cool cakes completely.
- Beat cream cheese, milk and remaining sugar in medium bowl with mixer until blended. Gently stir in COOL WHIP.

- Heat oven to 325°F. In 1-quart heavy saucepan, stir together butter, whipping cream and brown sugar. Cook over low heat, stirring occasionally, just until butter is melted. Pour into two ungreased 9- or 8-inch round cake pans; sprinkle evenly with 3/4 cup pecans.

- In a large bowl, combine the first seven ingredients. Beat on low speed for 30 seconds; beat on medium for 2 minutes. Fold in walnuts. Spoon by 1/2 cupfuls into 12 greased miniature fluted tube pans. Bake at 350° until set, about 20-25 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat the confectioners' sugar, water and maple flavoring until smooth; tint orange with red and yellow food coloring. - Preheat an oven to 350 degrees F (175 degrees C). Mix sugar, cinnamon, nutmeg, cloves, pumpkin pie spice, and flour in a small bowl.

- Heat oven to 350°F. Heat brown sugar, butter and whipping cream in 2-quart saucepan over medium heat, stirring occasionally, until butter is melted. Pour into ungreased rectangular pan, 13x9x2 inches. Sprinkle with pecans.
