Steps:
- In a large saucepan, saute mushrooms in 2 tablespoons butter for 4-5 minutes or until tender. Add garlic; cook 1 minute longer. Add water and wine. Bring to a boil; stir in pasta mix. Reduce heat; simmer, uncovered, for 10 minutes or until pasta is tender. , Meanwhile, flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, cook chicken in oil and remaining butter over medium heat for 4-5 minutes on each side or until no longer pink. Remove pasta mixture from the heat. Stir in sour cream. Serve with chicken.

CHICKEN MARSALA PASTA AL FORNO

Steps:
- Bring a pot of water to a boil. Add the pasta and cook until very very al dente, 6 to 7 minutes. Drain and set aside.
- Position an oven rack in the bottom of the oven and preheat the oven to broil.
- Heat a large, heavy-bottomed ovenproof skillet over medium-high heat and add the oil. Season the chicken tenders with salt and pepper and dredge in the flour, shaking off the excess. Add the chicken to the skillet and brown on both sides until golden brown, 2 minutes per side. (Note: the chicken should only be seared, not cooked through. It will finish cooking in the oven.) Transfer the chicken to a wire-racked baking sheet.
- To the same skillet, add the butter, cremini, porcini and shallots and cook, stirring minimally to aid in browning, until the mushrooms are deeply caramelized, about 15 minutes. Add the garlic and cook until fragrant, another 20 seconds. Deglaze with the marsala, scraping up any browned bits. Add the stock and bring to a simmer. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
- Off the heat, add the pasta and stir well to coat with the sauce. Top with the browned chicken, then a layer of freshly grated Parmigiano-Reggiano. Broil the pasta in the skillet until the cheese is browned and the pasta and chicken are cooked through, about 5 minutes. Sprinkle with parsley and serve immediately.

- Heat a large pot over medium-high heat.
- Add 2 tablespoons of olive oil and chicken breast. Season with salt and pepper to taste.
- Cook until chicken is no longer pink. Remove and set aside.
- Add the remaining tablespoon of oil, and the mushrooms and onion. Season with salt and pepper to taste. Cook until onions are browned, stirring occasionally.
- Return the chicken to the pot. Add the stock, cream, wine, and pasta, bring up to a simmer, and cover.
- *Marsala wine can be purchased at most grocery stores near the dessert or sweet wines and gives the dish a distinct flavor. However, if you can't get your hands on Marsala, you can substitute 1 cup of white wine (240 ml) plus 1 ½ tablespoons of brandy.
- Simmer until pasta is tender, about 15-20 minutes, stirring occasionally.
- When pasta is tender, stir in parmesan cheese until smooth. Remove from heat.
- Garnish with fresh parsley.

- Marsala:.
- Season chicken with salt and pepper on both sides.
- In skillet on medium-high, add 2 T olive oil. Saute chicken for about 2 minutes on each side (just until lightly browned and cooked through).
- Transfer to plate and cover with aluminum foil.
- In same skillet, add 1 T oil and mushrooms. Season with salt and pepper then saute for 3-4 minutes (until softened and water reduced).
- Add garlic and saute for 1 minute.
- Add marsala and reduce (about 4 minutes).
- Remove from heat and add sour cream and feta.
- Garnish with parsley. Serve over rice.

- Cover and simmer for 20 minutes.

I was craving some pasta the other night and thought that Marsala wine would compliment it great. This recipe is what I came up with on the spur of the moment with what I had lying around my poor, grad school student's kitchen. I think it turned out delicious!

- Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
- Heat olive oil in a large skillet over medium heat; cook and stir onion, garlic, and basil in the hot oil until onion is softened, about 5 minutes. Stir snap peas into onion mixture and cook for 2 to 3 minutes. Pour chicken stock, Marsala wine, and white wine into skillet. Add penne pasta; cook and stir until liquid is absorbed, about 5 minutes more. Season with salt and pepper.
- Divide pasta and snap pea mixture into 2 bowls and sprinkle with crumbled feta cheese to serve.

LEMON LEEK PASTA (VEGETARIAN)

- Mince 4 cloves of garlic and chop 2 cups of kale or green of choice.
- Remove the dark green woody tops and hairy bottom portion of 2 large leeks and discard. Slice the lighter green portion of the leeks into thin slices. Place the leek slices in a bowl of cold water to remove any dirt if necessary. Scoop the leek slices into a strainer or colander using a slotted spoon or spider strainer. Pat the leeks dry with a towel or paper towel.
- Heat a skillet to medium and add 2 Tbsp. extra virgin olive oil. Once heated, add the garlic, leeks, and 1/4 tsp. kosher salt and pepper. Saute for 8-10 minutes, stirring often. The leeks will cook down and caramelize a bit.
- Boil a pot of water and prepare 1 package of Barilla Red Lentil Penne pasta according to package instructions. Drain and reserve 1 cup of the pasta water.
- Add the cooked pasta to the skillet along with 1 cup of reserved pasta water, the chopped kale, and another 1/4 tsp. kosher salt and pepper. Stir to combine and saute for 4-5 minutes or until the kale wilts down a bit.
- Add the zest of 2 lemons to the pasta using a microplane or small grater. Add the juice of the lemons as well. Add 1 cup of shaved or shredded Parmesan cheese to the pasta. Stir to combine and cook for another minute or so.
- To Serve: Garnish with walnuts or nut of choice along with minced basil or fresh herb of choice and another sprinkle of Parmesan cheese.Other topping ideas include capers, artichokes, or olives.

- Preheat oven to 450 degrees.
- Remove shells from shrimp, leaving last segment and tail intact; remove vein.
- Rinse and dry.
- In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
- To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
- Reduce heat, cover and simmer for 30 minutes until thickened.
- Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
- Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.

- In a small pan, heat the extra virgin olive oil over medium heat. Slice the cremini mushrooms thin. Saute them for 13-15 minutes until crispy but not burned, keep an eye on them at the end. The mushrooms will shrink up as they cook. I alternated between medium and medium high heat to get the level of crispiness I wanted. Spoon onto a paper towel on a plate, sprinkle with salt, then set aside until the rest of the dish is cooked.
- Bring a pot of salted water to boil. Toss in your pasta and cook until desired texture. (I do 12 minutes.) Also, I fully admit I am terrible at measuring the right amount of pasta. I do 3/4 of a box and find this amount to be just right. Too much pasta and you won’t have enough sauce to coat it entirely. 4. In a large sauce pan, melt the butter. Using a zester, grate the garlic clove into the butter. Cook until the garlic gets lightly browned. Once the garlic has browned, add the flour and whisk to make a paste. Pour in the half & half and the Marsala wine and simmer until thickened. Add the Parmesan cheese, salt and pepper. I like my cream sauces peppery. Give the sauce a taste and adjust as needed.
- Let the sauce simmer as the pasta finishes cooking. Occasionally as the sauce thickens, add some additional boiling pasta water if needed. Do not add more cream to thin out a sauce, use the reserved pasta water.
