SWEET AND SAVOURY TOMATO JAM



Sweet and Savoury Tomato Jam image

Makes 4.5 pints and cook time is about 12 hours

Number Of Ingredients 11

5 ½ pounds tomatoes
1 ½ cups onion (, diced)
¾ cup brown sugar
2 cups white granulated sugar
1½ tsp salt
1 tsp coriander seeds ((would toast them next time, and add twice as many))
½ tsp cumin ((I put 1/4 teaspoon and would add the full amount next time))
½ cup cider vinegar
6 tbsp fresh lemon juice
¾ cup finely diced tart green apple
2 tsp freshly grated ginger ((would add at least a tablespoon next time))

Steps:

  • Put all ingredients in a 2-quart pot and bring to a gentle boil; reduce heat to a simmer
  • Cook until thickened and jam-like (about 12 hours), stirring regularly to avoid any bottom pot stickage
  • Transfer to sterilized glass jars and store in refrigerator for up to two weeks, or process for 15 minutes in water bath

Steps:

  • Score an X in the bottom of 3 pounds of tomatoes and cook in boiling water for about 30 seconds. Drain, transfer to a bowl of ice water, then peel and dice. Combine the tomatoes with 1 cup granulated sugar, 1/2 cup light brown sugar and 2 tablespoons cider vinegar in a large pot over medium heat. Add 1/2 teaspoon kosher salt, 1/4 teaspoon each ground coriander and cumin and the juice of 1 lemon. Cook, stirring, until thick, about 1 hour; let cool. Serve with cheese and crackers.

3 1/2 lbs tomatoes, cored and coarsely chopped (a mix of varieties works great and coarse chopping in batches of a food processor makes it easy)
1 small onion, cut into small dice
1/2 cup packed light brown sugar
1 1/2 cups granulated sugar
1 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 cup apple cider vinegar
1 lemon, juice of, freshly squeezed
1/2 cup tart green apple, chopped small dice (optional)
1 tablespoon freshly grated ginger (optional)

Steps:

  • To pack this jam for long-term storage, have 3 clean, sterilized half-pint jars (see NOTE below) with new lids and bands at hand.
  • Combine the tomatoes, onion, brown and granulated sugars, salt, coriander, cumin, vinegar, lemon juice and/or apple and fresh ginger in a large saute pan over medium heat; once the mixture starts to bubble, reduce the heat to medium-low. Cook for 2 1/2 to 3 hours or until it has thickened and reduced to a jamlike consistency. It will become thick, stick with it.
  • Transfer to clean and sterilized glass jars. Cool, seal and refrigerate for up to 1 month or use a hot-water canning bath for 15 minutes for long-term storage.
  • NOTE: To sterilize the empty jars, fill a large pot with water and bring to a boil over high heat, then reduce the heat so that the water is barely bubbling. Immerse 3 half-pint jars in the pot. Place the rings and lids in a separate small saucepan and cover them with very hot water. Leave the jars and lids immersed while you cook the jam. Fill the jars with the jam; seal the jars but not tightly, then immerse the jars in the hot-water bath for 15 minutes. Transfer the jars to a heat proof surface; when cool, tighten the lids and store in a cool, dark place for up to 1 year.

My Husband loves this Jam. He puts it on his waffles in the morning. I think its a great fall taste. Try it on your thumb print cookies or any dessert that requires Jam. I found this on the National Center for Home Preservation site so it's safe for canning. Enjoy!

3 cups prepared tomatoes (prepare about 2 1/4 pounds tomatoes)
1 1/2 teaspoons grated lemon rind
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup lemon juice
4 1/2 cups sugar
1 3/4 ounces dry pectin (sure jell)

Steps:

  • To Prepare Tomatoes - Wash firm ripe tomatoes. Scald, peel, and chop tomatoes. Place chopped tomatoes in saucepan and heat slowly to simmering, stirring constantly to prevent sticking and burning. Cover and simmer 10 minutes, stirring occasionally. Measure 3 cups of the cooked tomatoes into a large saucepan. Add lemon rind, allspice, cinnamon and cloves.
  • To Make Jam - Sterilize canning jars. Add lemon juice to the prepared tomatoes in the saucepan. Measure sugar and set aside. Stir powdered pectin into prepared tomatoes. Bring to a boil over high heat, stirring constantly. At once, stir in sugar. Stir and bring to a full rolling boil that cannot be stirred down. Then boil hard for 1 minute, stirring constantly.
  • Remove from heat. Skim off foam. Pour hot jam into hot jars, leaving ¼ inch headspace. Wipe rims of jars with a dampened clean paper towel; adjust two-piece metal canning lids. Process in a Boiling Water Canner for 5 minutes (10 if your elevation is 1,001 - 6,000 feet and 15 for over 6000).

I love tomato jam, but can't buy it in the UK! So the last time I went back to South Africa on holiday, I managed to get hold of this very easy and very quick tomato jam recipe.

2 (410 g) cans chopped tomatoes
1 apple (peeled & grated)
80 ml chopped preserved gingerroot
60 ml lemon juice
500 ml caster sugar

Steps:

  • Mix tomatoes, apple and ginger in a large microwave-proof dish.
  • Microwave uncovered at 100% power for 15 minutes.
  • Stir in lemon juice and caster sugar and microwave at 100% for a further 40 minutes, or until jam starts setting, stirring every 10 minutes.
  • The time the jam takes to set depends on the wattage of your microwave.
  • It might be a good idea to spoon a bit onto a cold plate after 25 minutes, and see if it sets.
  • When done, spoon the hot jam into sterilized jars and seal immediately.

It is awesome on a grilled cheese sandwich, or as an hors d'oeuvre on a cracker with a smear of cream cheese. Awesome stuff. So, you ready... Let's get into the kitchen.

14 ounce(s) fire roasted tomatoes, 1 can
1 medium grapefruit, juice and zest
3 tablespoon(s) coconut sugar
1 tablespoon(s) lime juice, freshly squeezed
1 teaspoon(s) powdered ginger
1/2 teaspoon(s) salt, kosher variety
1/2 teaspoon(s) ground cumin
1/4 teaspoon(s) smoked paprika
1/4 teaspoon(s) red pepper flakes, or a pinch or two of cayenne pepper

Steps:

  • PREP/PREPARE
  • You will need a saucepan, and a good glass container with a tight-fitting lid.
  • Gather your ingredients (mise en place).
  • Add all the ingredients to a saucepan over medium heat.
  • Cook at a simmer until the jam begins to thicken to about the consistency of maple syrup, about 25 - 35 minutes.
  • Place in a glass container, and reserve until needed.
  • This jam will last in the fridge for about 7 - 10 days.
  • PLATE/PRESENT
  • Serve as a spread for sandwiches (especially grilled cheese), place on crackers with a smear of cream cheese... Have fun with it. Enjoy.
  • Keep the faith, and keep cooking.

5 lbs ripe tomatoes
4 teaspoons grated lemon zest
1/2 cup lemon juice, fresh (or bottled)
4 cups granulated sugar
2 cups white vinegar
2 teaspoons ground cinnamon
1 teaspoon coarse pickling salt

Steps:

  • Dip tomatoes into boilnig water for about 1 minute until the skins crack slightly. Peel, remove stem ends and cores and cut up.
  • Place in saucepan. Bring to a boil slowly. Stir often as it boils in uncovered saucepan. Boil uncovered, about 20-30 minutes until liquid is reduced.
  • Add lemon rind, lemon juice, sugar, vingar, cinnamon and salt. Stir as it returns to a boil. Boil about 40 minutes, stirring often, until it thickens.
  • Fill hot sterilized half pint jars to within 1/4 inch of top. Place sterilized metal lids on jars and screw metal bands on securely. For added assurance against spoilage, you may choose to process in a boiling water bath for 5 minutes.
