1/2 cup diced plum tomatoes
2 tablespoons diced red onion
1/4 cup sliced, drained sweet pimientos
1/4 cup snipped fresh basil leaves
1/2 teaspoon balsamic vinegar
Salt and freshly ground black pepper

3/4 pound boneless, skinless chicken breasts
Olive oil spray
Toasted Almond Broccoli, recipe follows
4 tablespoons sliced almonds
1/2 pound broccoli florets (4 cups)
2 teaspoons olive oil
Salt and freshly ground black pepper

Steps:

  • A fresh tomato-basil relish tops this simple chicken dish. The broccoli takes only minutes to cook in a microwave oven. It's topped with toasted almonds.
  • Mix tomatoes, onions, sweet pimientos, and basil together in a small bowl. Add vinegar and toss to mix. Add salt and pepper, to taste. Set aside.
  • Place chicken between 2 pieces of waxed paper or aluminum foil and flatten with a meat mallet or the bottom of a heavy skillet to 1/2-inch thick.
  • Heat a large nonstick skillet on medium-high heat and spray with olive oil spray. Add chicken and saute 3 minutes per side. Sprinkle salt and pepper, to taste, on the cooked sides. Divide between 2 dinner plates and spoon the tomato relish on top.
  • Heat a nonstick skillet on medium heat and add almonds. (This can be done in the same skillet used for the chicken.) Saute 1 minute or until almonds are golden, not brown. Remove and set aside.
  • Steam the broccoli in a collapsible steamer, set up in a pot filled with 1 inch of water. Alternatively, place broccoli in a microwave-safe bowl and microwave on high for 4 minutes. Remove and add oil and salt and pepper, to taste. Toss well. Sprinkle almonds on top.

4 large skinless boneless chicken breast halves, tenderloins removed
All purpose flour
1 1/2 tablespoons unsalted butter
1 1/2 tablespoons extra-virgin olive oil

Steps:

  • For relish:
  • Preheat oven to 375°F. Brush rimmed baking sheet with 1 teaspoon oil. Toss corn and 2 teaspoons oil on prepared sheet. Roast until corn begins to brown, stirring occasionally, about 18 minutes. Transfer to bowl. Mix in tomatoes, green onions, basil, and 2 tablespoons oil; season with salt and pepper.
  • For chicken:
  • Using mallet or heavy-bottomed saucepan, pound chicken between sheets of plastic wrap to about 1/2-inch thickness. Pat chicken dry. Sprinkle with salt and pepper, then dust with flour to coat. Melt butter with oil in heavy large skillet over medium-high heat. Add chicken to skillet and sauté until cooked through, about 5 minutes per side. Transfer to plates; top with relish and serve.

1/2 small red onion, finely diced

1 (2-pound) round steak, pounded to 1/4-inch thickness

4 cloves garlic, finely chopped
1/4 cup olive oil

Steps:

  • For the grilled tomato-basil relish:
  • Heat the grill to high.
  • Cut the tomatoes half, then brush with 2 tablespoons of the oil and season with salt and pepper. Grill the tomatoes on all sides until slightly charred and soft. Remove the tomatoes from the grill, chop and place in a bowl. Add the remaining 3 tablespoons of oil, onion, vinegar, basil and parsley and season with salt and pepper. Serve warm or at room temperature.
  • For the beef:
  • Heat the grill to high.
  • Place the steak on a flat surface. Combine the cheese, parsley, oregano and garlic in a small bowl. Brush the steak on the side facing up with 2 tablespoons of the oil and season with salt and pepper. Sprinkle the cheese mixture evenly over the steak, leaving a 1/2-inch border around the sides.
  • Starting with the long end, tightly roll the meat up like a jelly roll and tightly tie with the butcher's twine on the ends and in the center. Brush the entire outside of the steak with the oil and season with salt and pepper. Place on the grill, seam-side up and grill until golden brown on all sides, about 10 to 12 minutes. Remove from the grill and let rest 10 minutes before slicing into 1/2-inch thick slices. Serve several slices per person topped with some of the relish.

Broiled Chicken with Tomato Relish and Spaghetti image

2 small whole broiler chickens, (about 2 to 2 1/2 pounds each)
4 sprigs thyme
9 cloves garlic, crushed
1 lemon juiced
1/3 cup extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1 tablespoon paprika
1 pint grape tomatoes
1 bunch scallions, trimmed
10 whole garlic cloves, unpeeled
5 to 10 leaves basil, chopped
Extra-virgin olive oil, for drizzling
1 tablespoon red wine vinegar
1/4 teaspoon Worcestershire sauce
1 pound spaghetti
1/3 cup chopped flat-leaf parsley
1/4 to 1/2 cup freshly grated Parmesan, optional

Steps:

  • Position a shelf at the lowest position in the oven and preheat to 450 degrees F.
  • Cut the backbone out the chickens with kitchen scissors and reserve for another use or discard. In a shallow dish combine the thyme, 9 cloves crushed garlic, lemon juice and 1/3 cup of extra-virgin olive oil. Add the chickens and coat thoroughly in the mixture, cover and marinate in the refrigerator for up to 1 hour.
  • Remove the chicken from the marinade, discard marinade. Turn the birds breast-side up and fold the wing tips back and under. Season both sides with some salt and pepper and the paprika. Place the chickens bone-side up on a broiler pan and position the legs in the center. Roast in the oven until the chickens are 3/4 cooked (about 140 to 150), about 25 to 30 minutes.
  • Put the whole grape tomatoes, scallions, garlic cloves, and basil leaves in a large bowl, drizzle with 1 tablespoon of the olive oil and sprinkle with salt and pepper to taste. Turn the vegetables until they are lightly coated. After the chickens have cooked for about 25 minutes, arrange the vegetables around them. Turn the oven to broil and broil until the vegetables are charred, about 10 to 15 minutes. An instant-read thermometer should reach 170 degrees F. Transfer the chicken and vegetables to a cutting board. Pour off all except about 2 tablespoons of chicken fat from the pan and set aside.
  • Meanwhile, bring a large pot of cold water to a boil and salt it generously. Add the spaghetti, and cook, stirring occasionally, until al dente, 8 to 10 minutes.
  • Drain, reserving 1/2 to 3/4 cup of the pasta water and transfer the both to a serving bowl.
  • Squeeze the garlic cloves from their skins, and chop them up with the scallions, once chopped transfer to a bowl and add the charred grape tomatoes, stir to make a chunky relish.
  • Once the chicken is cooked and resting, place the pan you broiled the chicken in on the cook top over medium heat. Add the red wine vinegar, Worcestershire sauce and the reserved pasta cooking water, bring up to a simmer scraping the bottom of the pan with a wooden spoon. Add the cooked spaghetti and chopped parsley, stir to coat and continue to cook for 1 minute. Transfer the spaghetti to a serving bowl.
  • Carve the chicken, top with some of the chunky relish and serve with some of the spaghetti on the side. Garnish with grated Parmesan, if using.

We love this on grilled steaks. It's also good on chicken, pork and even fish. I have used it as bruschetta on little garlic toasts, too. You can use this right away or make it ahead of time so that the flavors blend. It's great cold or at room temp.

This is a wonderful way to use fresh basil and tomato from the garden and a steak on the grill. You might not have had a vegetable relish on steak before and neither had my husband or myself. We were delighted with the flavor mixed with the steak. You'll need a way to saute the vegetables on the grill, such as a grilling basket. Skewers are also an alternative. 4 -5 fresh button mushrooms, cut into slices
1 medium onion, cut into 1/2 inch slices
4 plum tomatoes, cut in half lengthwise
olive oil, for basting
1 clove garlic, minced
3 tablespoons snipped fresh basil
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon fresh coarse ground black pepper

Steps:

  • Microwave the onion slices with two tablespoons of water for about two minutes.
  • Saute the minced garlic until tender, about 5 minutes.
  • Place vegetables in grilling basket and baste with olive oil.
  • Grill mushrooms, onion, and tomatoes until tender, turning once (About 10 minutes for mushrooms, 15 minutes for onion, and 7 minutes for tomatoes).
  • Remove the vegetables as they are done.
  • Cut cooked onion and tomatoes into 1-inch pieces.
  • Stir together in a medium bowl the basil, garlic, the 2 tablespoons olive oil, kosher salt, pepper and all vegetables.
  • Spoon warm over steaks.

4 garlic cloves
1 fennel bulb (about 1 pound), trimmed and cut into 1/4-inch dice

1 tablespoon capers, rinsed and drained
1/4 teaspoon crushed red-pepper flakes or finely chopped fresh red chile
2 tablespoons extra-virgin olive oil
1 cup loosely packed fresh basil leaves
1 cup loosely packed fresh flat-leaf parsley leaves, coarsely chopped
Olive-oil cooking spray

Steps:

  • Preheat oven to 400 degrees. Coat a baking sheet with cooking spray. Slice tomatoes in half lengthwise; arrange them, cut side down, in a single layer on prepared baking sheet. Place garlic cloves on baking sheet next to tomatoes. Roast in oven until tomatoes are soft and wrinkled, and garlic is aromatic and tender, about 35 minutes. Remove from oven, and let cool.
