HEARTY TOMATO SOUP WITH CHICKEN AND PASTA
Comforting any time of year. This soup has a delicious flavor that appeals to adults and kids alike. In the summer, I use my garden tomatoes to make the tomato puree for this soup, which really brings out the flavors. The combination of the dried and fresh herbs is the most flavorful, but all dried herbs could be used if fresh herbs are not available. Great for a meal with sandwiches or a cobb salad.

Steps:
- Place a heavy-bottomed pot on your stovetop and turn the heat to medium-high.
- Add the olive oil and the diced onions. Stir to combine and cook the onions until they are soft and tender. You do not want to brown the onions, so 2-3 minutes is perfect.
- Next, add the garlic and stir into the onions. Cook for 2 minutes more.
- Now, pour in the canned diced tomatoes, along with the juice. Add the tomato paste. Add the dried oregano, dried basil, salt, and ground black pepper. Stir to combine.
- Finally, pour in the vegetable stock. Stir to combine and allow the mixture to come to a boil.
- Once bubbling, add the uncooked orzo. Stir well and continue to cook for 5-7 minutes, or until the orzo is cooked through.
- Do not overcook the orzo! If you find that the soup is getting too thick, add more stock or water to the pot, but do so in 1/4 cup measurements. Stir well after each addition. Whether you add more stock or not, once the orzo is cooked, taste the soup and season once more with more salt if needed. Once you are happy with the seasoning, turn off the heat and stir through the chopped parsley.
- Ladle the soup into bowls and serve immediately. You may top the soup with a tablespoon or two of heavy cream to add more creaminess to the soup. You may also add some grated parmesan. Serve with crusty bread.

Add the sliced onion and smashed garlic and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the tomatoes and their juice, the water, heavy cream, sugar, crushed red pepper, celery seed and oregano and season with salt and pepper. Bring the soup to a boil over high heat, breaking up the tomatoes with the back of a spoon. Reduce the heat to moderate and simmer for 10 minutes.
- Meanwhile, in a small skillet, cook the remaining 1 tablespoon of butter over moderately high heat until it begins to brown, about 1 minute. Scrape the browned butter into a medium bowl. Add the olive oil to the skillet. Add the diced bread and cook over moderately high heat, stirring occasionally, until it is slightly browned, about 6 minutes. Transfer the bread to the browned butter and toss well.
- Working in batches, transfer the tomato soup to a blender and puree until smooth. Return the soup to a clean pot and rewarm the soup if necessary. Season the soup with salt and pepper. Ladle the soup into bowls and serve with the croutons.

- If you are using fresh tomatoes, you'll need to roast them in the oven at 400 degrees Fahrenheit (200 degrees Celsius) for about 30 minutes. Alternatively, you could also cook them for 1-2 minutes in a large pot with boiling water to easier remove the skin and make them soft. However, roasting the tomatoes will add more flavor to the soup. Let cool for a bit and then peel the tomatoes. Disregard this step if you are using canned tomatoes.
- Heat olive oil in a large pot over medium heat. Add onion and sauté for about 3 minutes, then add garlic and sauté for a further one minute.
- Also add the roasted or canned tomatoes, oregano, onion powder, basil, salt, pepper, and tomato paste. Sauté for a further 1-2 minutes, then add the vegetable broth, and turn off the heat.
