- Preheat oven to 375 degrees F. Coat 2-quart casserole with cooking spray.
- To prepare custard: Whisk egg whites, eggs and milk in a medium bowl. Add mustard, pepper and rosemary: whisk to combine.
- Toss bread, spinach, roasted red peppers and ham in a large bowl. Add the custard and toss well to coat. Transfer to the prepared baking dish and push down to compact. Cover with foil.
- Bake until the custard has set, about 40 to 45 minutes. Uncover, sprinkle with cheese and continue baking until the pudding is puffed and golden on top, 15 to 20 minutes more. Transfer to a wire rack and cool for 15 to 20 minutes before serving.

- Preheat oven to 325°. Butter a 9-by-13- inch casserole dish. Heat the butter in a medium skillet over medium heat. Cook leeks, covered, until softened, about 5 minutes. Season with salt and pepper, and transfer to a small bowl.
- Whisk together eggs and milk. Whisk in the salt and pepper. Set batter aside.
- Layer the bread, ham, reserved leeks, thyme, and cheeses shingle-style in the buttered dish. Pour batter over top; press gently so bread absorbs liquid.
- Bake until puffed and golden brown (tent with foil if edges brown too much before center is set), about 1 hour.
SPINACH AND TASSO BREAD PUDDING WITH GRUYERE CHEESE
This is a "stuffed" savory bread pudding that's perfect for a Sunday brunch. Rather than just jumble everything together, you do it in three layers -- bottom layer of dried or stale French bread, a layer of spinach, tasso and cheese, and more bread on top. It's easy to prepare the day before, so all you have to do on Sunday morning is pop it in the oven. Recipe by Chef Chuck Taggert.

Steps:
- Slice the bread into 1/2" slices and let dry out overnight.
- You may also dry them in a 200-225°F oven for about 30-40 minutes until they're completely dried; make sure you don't brown them.
- Heat 2 tablespoons olive oil in a large heavy skillet (don't use non-stick).
- Add the diced tasso.
- Brown the tasso for 5 minutes until some of the fat has been rendered out and you've got some nice brown bits stuck to the bottom of the pan.
- Remove from pan, drain on papertowels and set aside.
- Add the wine to the pan, making sure to scrape up all the browned bits.
- Reduce the wine by half.
- Pour out into a large bowl and set aside.
- In the same skillet, melt 2 tablespoons butter with the rest of the olive oil.
- Add the onions and garlic.
- Sauté for about 3 minutes, until onions are translucent.
- Add the spinach water and let it reduce.
- Add the chopped spinach.
- Continue to cook for 3 minutes, making sure that there's hardly any moisture left.
- Transfer to a bowl and set aside.
- Whisk the eggs in a large bowl.
- Add the half-and-half.
- Add the molasses, Worcestershire, hot sauce, the reduced wine, about 2 teaspoons of salt, plenty of fresh ground black pepper and Creole seasoning to taste.
- Butter the bottom and sides of a 9x13 baking dish.
- Make one layer of dried bread slices on the bottom.
- Use little broken-off pieces if you need to fill any little spaces.
- Cover the bread evenly with the spinach mixture.
- Sprinkle evenly with 1/3 of the grated cheese.
- Spread the diced tasso evenly over the cheese.
- Season with more Creole seasoning and pepper.
- Sprinkle with more cheese.
- Add a second layer of bread,filling the holes with broken pieces as needed.
- Give the custard a final mix with the whisk and pour evenly over the entire surface of the bread, making sure you wet everything.
- Season the top with more black pepper and Creole seasoning, the remaining cheese and a sprinkling of salt.
- Wrap the pudding in plastic wrap.
- Weigh the top down with a couple of boxes of brown sugar, a bag or rice or whatever you have available.
- This helps compress the layers of the pudding so that the custard will soak all the way through allowing it to cook more evenly.
- Refrigerate for at least 2 hours or overnight.
- When ready to cook,take the pudding out of the fridge and let it come to room temperature for about 30 minutes.
- Bake in a preheated oven at 325-350°F for about one hour, until the edges and center are puffy.
- Let the pudding cool for about 5 minutes.
- Slice and serve.
HAM, FONTINA, AND SPINACH BREAD PUDDING
Steps:
- Preheat broiler.
- Diagonally cut baguette crosswise into 3/4-inch-thick slices and brush both sides with butter. Toast on a baking sheet under broiler 3 inches from heat until golden, about 30 seconds on each side.
- Preheat oven to 350°F.
- Sauté onions in oil in a 12-inch nonstick skillet over moderately high heat, stirring occasionally, until golden. Add ham and sauté, stirring occasionally, until ham is lightly browned.
- Whisk eggs in a large bowl and whisk in milk, salt, nutmeg, and pepper to taste. Add toasted bread and toss gently. Transfer bread as saturated to a shallow 3-quart casserole, slightly overlapping slices. Add any remaining egg mixture.
- Tuck spinach and ham between slices, reserving a little ham to sprinkle over top. Sprinkle cheese over pudding, lifting slices with a spatula to allow some to fall between them. Sprinkle reserved ham over pudding and bake in middle of oven 45 minutes to 1 hour, or until puffed and edges of bread are golden and custard is set in middle.
HAM, SPINACH AND GRUYERE BREAD PUDDING
Steps:
- In large skillet, melt butter over medium heat. Add leeks and cook 3 to 4 minutes. Add spinach and cook another 2 to 3 minutes, or until spinach is wilted. Remove from heat and set aside. Spread half of bread cubes evenly over bottom of greased 13-by-9-inch casserole dish. Top evenly with half of ham. Spread half of spinach mixture over ham. In medium bowl, combine cheeses and thyme. Sprinkle half of this mixture over spinach. In another medium bowl, whisk together eggs, cream, milk and mustard. Pour half of egg mixture evenly over casserole. Repeat layers, beginning with bread and ending with egg mixture. Cover and refrigerate overnight. When ready to bake, let sit out 30 minutes. Bake at 375 degrees, uncovered, for 45 to 60 minutes.
ARUGULA, BACON, AND GRUYèRE BREAD PUDDING

- Preheat oven to 375°F with rack in middle. Butter a 2-qt shallow baking dish.
- Whisk together milk, cream, eggs, and 1/4 teaspoon each of salt and pepper in a large bowl.
- Cook bacon in a 12-inch heavy skillet over medium heat, turning occasionally, until crisp. Transfer with tongs to paper towels to drain, then coarsely crumble.
- Pour off all but 1 tablespoon fat from skillet. Increase heat to medium-high and cook shallot and garlic, stirring constantly, until golden, about 1 minute. Gradually add arugula and cook, stirring, until it wilts.
- Stir arugula mixture, bacon, bread, and cheese into custard. Transfer to baking dish and cover with foil. Bake 30 minutes, then remove foil and bake until golden in spots, about 10 minutes more.

- Heat oven to 375 degrees. Butter an 11-by-11-inch baking dish. Fill dish with brioche cubes and set aside.
- In a large bowl, beat eggs well. Whisk in half-and-half, salt, pepper, nutmeg, cayenne and scallions. Pour mixture over cubes in baking dish.
- Sprinkle ham and cheese on top of mixture, and press down to make sure everything is submerged. Set baking dish on a rimmed baking sheet.
- Transfer baking dish and baking sheet to the middle shelf of the oven, and bake for 45 minutes, or until a skewer inserted in the middle of the dish emerges dry. Let rest for 10 minutes or so before serving.
