EGGNOG-PANETTONE BREAD PUDDING

1 loaf panettone, available in Italian specialty stores, cut in half (enough for about 5 cups, diced)
3 whole eggs
3 egg yolks
3/4 cups sugar
2 cups half-and-half
1/4 cup rum
1 teaspoon vanilla extract
1/8 to 1/4 teaspoon freshly grated nutmeg
Vegetable cooking spray
Vanilla ice cream
Whipped cream

Steps:

  • Preheat oven to 475 degrees F.
  • Place a tea-kettle of water on to boil for a water bath. With a serrated knife, remove the side crusts from the half piece of the panettone. Cut into 3/4 to 1-inch dice. You should have 5 cups. Reserve the cubed panettone in a large mixing bowl.
  • For the eggnog custard, in another bowl thoroughly whisk together the eggs, yolks, sugar, half and half, rum, vanilla extract, and a healthy grating of fresh nutmeg. Pour this over the bread cubes.
  • Spray a 12 hole muffin tin with vegetable cooking spray. Ladle the bread/eggnog mixture gently and evenly into the muffin tins. The big cubes sticking up look nice. Place the filled muffin tin in a tall sided cookie sheet or roasting pan. Transfer to the preheated oven and carefully pour the hot water from kettle onto sheet pan, creating a water bath for the muffin tin to sit in.
  • Bake 15 to 20 minutes until the tops are nicely browned, and a toothpick comes clean from the center.
  • Bread pudding may be served warm or cold. Vanilla Ice cream or whipped cream would be great accompaniments.
  • Alternately place the muffin tin in a roasting pan on the stove. Pour in up to 1-inch of boiling water. Cover and cook over medium-high heat for 15 to 20 minutes. The puddings will puff and a toothpick will come out clean from the center. The tops won't brown with this method. Perhaps a sprinkle of cinnamon sugar at serving time would be nice.

6 cups stale bread, cubed
2¼ cups eggnog
4 tablespoons butter, melted
⅔ cup sugar
2 teaspoons vanilla
½ teaspoon pink Himalayan salt
1 teaspoon freshly ground nutmeg
6 eggs
2⅓ cups cranberries
⅓ cup sugar
3 tablespoons butter
1 teaspoon vanilla
¼ teaspoon pink Himalayan salt
⅓ cup pinot noir

Steps:

  • Cut bread into small cubes and set aside, covered with a towel, overnight.
  • Spread out cut bread on a cookie sheet. Place in oven, while it heats to 300 F, for 5 minutes. Turn off heat and remove from oven.
  • Pour melted butter over bread, stirring to coat as evenly as possible.
  • Combine sugar, vanilla, salt and nutmeg in large mixing bowl. Add eggs to mixing bowl and whisk together. Add eggnog and whisk until combined.
  • Place 5 cups of toasted bread cubes into egg mixture; let sit for 30 minutes. Add reserved cup or so of bread to mixture and combine.
  • Fill ramekins with bread mixture and bake at 350 F for 20-25 minutes, or until custard is set.
  • Melt butter over low heat in medium saucepan.
  • Add sugar, vanilla, salt and cranberries. Continue to cook over low heat, stirring occasionally.
  • As cranberries cook down, smash a few with wooden spoon to test softness.
  • Add pinot noir and stir.
  • When tender, smash berries with wooden spoon.
  • Using sieve (fine mesh strainer), add small amounts of coulis mixture at a time and work through sieve to remove berry skins.
  • Place coulis in small bowl or creamer pitcher to pour directly onto bread pudding.

3 1/2 cups purchased eggnog
3 large eggs
2 large egg yolks
1/2 cup sugar
3 tablespoons brandy
3 tablespoons dark rum

fresh whipped cream

Steps:

  • Butter or spray a 13x9 inch baking dish.
  • Put bread pieces in a bowl, pour eggnog over the bread and allow to soak for about 1 hour, or until all the liquid is absorbed.
  • Position oven rack in the middle position; preheat oven to 350°.
  • In a bowl, whisk the eggs, yolks, sugar, brandy, and rum until thick and smooth.
  • Stir in the bread mixture and pour into prepared pan.
  • Sprinkle nutmeg over the top.
  • Place the dish in a large shallow pan, such as a roasting pan, lined with a dish towel.
  • Place the pan on the oven rack, and pour enough hot water into the larger pan to come halfway up the sides of the pudding dish.
  • Bake for 1 hour or just until the center is set when gently shaken.

2 medium ripe bananas, sliced
3 1/2 cups prepared eggnog (not in a can)
4 eggs
1/4 cup sugar
1/4 teaspoon nutmeg
1 cup packed light brown sugar or 1 cup dark brown sugar
1/2 cup heavy cream
1/4 cup dark corn syrup
2 tablespoons butter
1/2 teaspoon rum extract
powdered sugar, for serving
vanilla ice cream, for serving

Steps:

  • MAKE THE PUDDING: Prheat oven to 375*F; grease a 13x9" baking pan (3 quarts).
  • Place 1/2 the bread cubes in the baking pan; top with the banana slices and remaining bread cubes.
  • In a large bowl, combine the eggnog, eggs, sugar, and nutmeg; blend well.
  • Pour over the bread cubes; let stand 5 minutes.
  • Bake for 40-50 minutes, or until a knife inserted in the center comes out clean.
  • Meanwhile, make the SAUCE: In a small saucepan, combine all the sauce ingredients except the rum extract.

  • Preheat oven to 375°. In a large bowl, whisk eggs and eggnog until blended. Stir in cubed rolls, pecans and cranberries; let stand about 15 minutes or until bread is softened., Transfer to a greased 8-in. square baking dish. 4 cups cubed day-old bread, or as needed to fill a 9x12-inch baking dish
2 apples - peeled, cored, and chopped into 1/2 inch pieces
3 cups eggnog

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Generously grease a 9x12-inch baking dish with butter.
  • Spread bread into the bottom of the prepared baking dish. Sprinkle apple pieces evenly over the bread pieces.

24 ounces French bread, crusts trimmed, broken into chunks
4 cups milk
6 eggs
3 egg yolks
3 cups whipping cream or 3 cups half-and-half
2 cups sugar
1/4 cup Bourbon
1/4 cup dark rum
2 tablespoons brandy
1 cup seedless raisin
2 teaspoons ground nutmeg

Steps:

  • Spread 2 tablespoons butter in each of 2 9x13-inch ovenproof glass baking dishes.
  • Place bread in large bowl; pour milk over and let soak until liquid is absorbed, about 1 hour.
  • Preheat oven to 350 degrees.
  • Using electric mixer, beat eggs,egg yolks,cream,sugar,bourbon,rum and brandy in medium bowl until smooth and thick; pour egg mixture over bread.
  • Add raisins and stir until combined.
