Number Of Ingredients 8

2 pounds tomatillos,* husked, rinsed, finely chopped (4 1/2 to 5 cups)
2 large avocados (about 1 1/3 pounds total), halved, pitted, peeled, finely chopped (about 2 cups)
3/4 cup finely chopped red onion
3/4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
3 tablespoons olive oil
2 serrano chiles, seeded, minced
Purchased tortilla chips

Steps:

  • Place chopped tomatillos in strainer set over large bowl and let drain 1 hour. Discard juices in bowl. Transfer tomatillos to large serving bowl. Add avocados, red onion, cilantro, lime juice, olive oil, and chiles; stir gently to mix. Season salsa to taste with salt. DO AHEAD: Can be made 2 hours ahead. Cover and refrigerate.
  • Serve salsa with tortilla chips.
  • Green, tomato-like fruits with papery husks; available in the produce section of some supermarkets and at Latin markets.

3 garlic cloves, lightly smashed and peeled
1 jalapeño, stemmed and halved
1 leek, white part only, coarsely chopped
1 tablespoon vegetable oil
2 Hass avocados, —peeled, pitted and coarsely chopped
1/4 cup chopped cilantro
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 cup finely chopped onion
1/2 teaspoon dried oregano, preferably Mexican, crumbled
1 tablespoon fresh lime juice
Salt

Steps:

  • Preheat the oven to 425°F. On a rimmed baking sheet, toss the tomatillos, garlic, jalapeño and leek with the oil and spread in a single layer. Roast the vegetables until lightly charred and softened, about 12 minutes. Transfer to a blender and let cool. Add the avocados, cilantro, sugar, cumin and 1/2 cup of water to the blender and puree until smooth. Add the onion, oregano and lime juice and pulse once or twice until incorporated. Transfer the salsa to a bowl and season with salt. Serve chilled or at room temperature.

2 garlic cloves, coarsely chopped
1 1/2 teaspoons coarse salt
1 small white onion, coarsely chopped
2 -3 serrano peppers, stemmed and coarsely chopped (or jalapeno peppers)
6 -8 medium tomatillos, husks removed, rinsed and cut into quarters (about 1/2 pound)
1 ripe Hass avocado
12 -15 sprigs cilantro, finely chopped

Steps:

  • In a food processor or blender (or with mortar and pestle), process garlic and salt to a paste.
  • In the processor or blender, place onion, jalapenos and tomatillos and pulse to make a slightly chunky mix. Remove to bowl.
  • Halve and pit avocado and scoop out flesh. Chop finely and add to other ingredients. Add cilantro and mix well.
  • Serve with tortilla chips or as a condiment for meat, fish, poultry, burritos or quesadillas.
  • Makes about 2 cups.

2 cups coarsely chopped rinsed husked tomatillos
2 medium serrano chiles with seeds, minced
2 large avocados, halved, peeled, pitted, diced
3/4 cup chopped white onion
1/2 cup chopped fresh cilantro
3 tablespoons fresh lime juice

Steps:

  • Place tomatillos and chiles in food processor. Using on/off turns, process until coarse puree forms. Pour puree into medium bowl. Mix in all remaining ingredients. Season with salt and pepper. (Can be made 4 hours ahead. Cover; chill).

1 1/2 lbs fresh tomatillos, soaked in warm water and husked (about 12-14)
1 medium white onion, peeled and cut into 1/4-inch dice
2 garlic cloves, peeled and minced
2 -3 fresh serrano chilies, to taste minced
1/2 cup coarsely chopped fresh cilantro
1 large ripe avocado
2 -3 limes, juice of, plus more to taste
salt
sugar
extra virgin olive oil

Steps:

  • Quarter tomatillos and place in work bowl of a food processor. Pulse to a coarse puree.
  • Place tomatillos, onion, garlic, chiles and cilantro in a bowl; stir to combine.
  • Cut avocado in half lengthwise, remove pit, cube flesh, and add to tomatillos. Season with lime juice, salt, sugar and drizzles of olive oil.
  • Let stand 20 minutes. Taste and adjust seasonings.
  • Serve with tortilla chips, tacos or fajitas.

1 jalapeno chile, stemmed and halved
1/2 cup loosely packed cilantro leaves
Juice of 1/2 lime (about 1 tablespoon)
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 avocado, halved, pitted, peeled, and cut into small cubes

Steps:

  • Heat a stovetop grill over medium-high heat. Grill tomatillos, onion, garlic, and jalapeno, turning occasionally, until lightly charred, about 10 minutes.
  • Place grilled vegetables in the bowl of a food processor, and add cilantro, juice, salt, and pepper; pulse until coarsely chopped. Transfer to a medium bowl, and fold in avocado.
