BBQ CHICKEN WINGS WITH PINEAPPLE-GINGER TERIYAKI SAUCE

Steps:
- For the wings: In a large bowl, combine the cayenne, white pepper and 1/2 teaspoon salt. Add the chicken wings, bell peppers and serrano chiles. Drizzle with the vegetable oil and then, using clean hands and preferably wearing gloves, massage the seasoning mixture into the wings, peppers and chiles. Set aside.
- For the sauce: To a medium saucepan over medium heat, add the soy sauce, vinegar, honey, brown sugar, granulated sugar, sesame oil, garlic, pineapple and ginger and stir to combine. Cook over medium heat until reduced by half and thick enough to coat the back of a spoon, about 15 minutes. Cool slightly.
- Pour half of the cooled sauce over the wings and peppers, reserving the other half for the finished wings.
- Heat a grill pan or a gas or charcoal grill over medium-high heat. Place the wings, peppers and chiles on the grates in a single layer and cook until nicely charred, 6 to 8 minutes per side. Transfer to a serving platter. Pour the remaining sauce over the cooked wings. Garnish with the sesame seeds and green onions.
OVEN-BAKED TERIYAKI CHICKEN WINGS
Steps:
- Gather the ingredients.
- Combine the soy sauce, balsamic vinegar, brown sugar, garlic, ginger root, and pepper in a small saucepan.
- Gently heat on low just until the sugar is dissolved. Remove from heat and let cool to room temperature.
- Stir in the green onions.
- Place the chicken wings in a large zip-close freezer bag.
- Pour in the cooled teriyaki marinade , squeeze out the air and seal. Turn the bag to distribute the marinade over the wings. Refrigerate 12 hours or overnight.
- Gather the ingredients.
- Preheat the oven to 375 F. Line a baking pan with foil and place a cooling rack in the bottom of the pan.
- Place the chicken wings on the rack, cover them with the marinade from the bag, and sprinkle generously with paprika.
- Cover the pan tightly with foil and bake for 45 minutes.
- Remove the foil, raise the oven temperature to 425 F and bake another 15 minutes to brown the skin. If the chicken has not browned, place the tray under the broiler, watching carefully.
- Gather the ingredients.
- Combine the soy sauce, balsamic vinegar, brown sugar, and pepper in a small saucepan. Gently boil, stirring constantly, for 3 minutes. Watch carefully so it does not boil over.
- Remove from heat, stir in the garlic and ginger root, and let cool to room temperature.
- Stir in the green onions.
- Toss the finished wings with half of the teriyaki sauce, place on a platter and sprinkle with the toasted sesame seeds.
- Serve the remaining sauce on the side.

- Preheat the oven to 400 degrees F.
- Season the chicken wings with salt and pepper and drizzle a little olive oil on them to prevent sticking. Lay the wings in a single layer on a baking sheet. Bake for 30 minutes or until the skin gets crispy and the wings are cooked through.

TIGER TERIYAKI CHICKEN WINGS

- Line a rimmed baking sheet with aluminum foil and fitted with a wire rack. Spray rack with cooking spray. Preheat oven to 425℉. Make Teriyaki Sauce: Combine soy sauce, sugar, Tiger Sauce, garlic and ginger in a small saucepan and bring to a boil. Reduce the heat to low and cook, stirring until sugar dissolves, about 3 to 5 minutes. Remove from heat and whisk in pineapple juice and cornstarch; bring to a boil again, stirring until thickened. Pat wings dry with paper towels. Brush with Teriyaki Sauce and arrange on the rack. Bake for 15 minutes or until skin starts to brown. Flip chicken, brush with sauce again and continue to bake for 10 more minutes. Flip chicken again and continue to bake for 10 to 15 minutes or until chicken is cooked to 165˚F on an instant-read thermometer. Remove chicken from oven, brush all over with remaining sauce and return to oven. Broil about 3 minutes, or until sauce is lightly browned and sticky looking. Garnish with sesame seeds and serve with lime wedges.
TERIYAKI CHICKEN WINGS WITH SESAME AND CILANTRO

- Prepare the teriyaki sauce by combining the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, brown sugar, chiles, garlic, and ginger in a pot. Bring to a slow boil and cook, stirring, until thickened, about 20 minutes.
- Preheat the oven to 400 degrees F.
- Season the chicken wings generously with salt and pepper. Lay the chicken wings in a single layer on a sheet pan. Bake for 20 minutes or until the skin gets crispy. With tongs, dip the wings in the teriyaki sauce and return to the oven for 10 to 15 minutes to glaze. An impressive presentation is to serve these chicken wings family style; arrange them on a large platter, pour the remaining sauce over them and sprinkle with sesame seeds and cilantro. Don't forget the wet naps!

- Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.

- Bring the remaining ingredients to a boil in a saucepan.

- Mix sauce and sugar together, brush on both sides of the wings, then pour over wings in pan.
- Cook in a roasting pan/cookie sheet with a"lip" so the sauce doesn't spill and make a mess of the oven 350 degrees Cook for 1 hour.
- I usually cook face down (so that the"pretty" side of the wing gets good and brown) for about 40 minutes and then flip over.
- Then when done throw all the gooey sauce into the crock pot with the wings and simmer on low heat for as long as you want.
- (At least 10 minutes) this is what makes them fall apart in your mouth, but you don't have to do it to cook them.
