Raspberry Slice is an old classic favourite I grew up with in New Zealand. It is made with two layers of shortbread filled with a layer of raspberry jam then covered in a creamy raspberry icing.

120 grams butter
1 egg
120 grams caster sugar
1/2 tsp vanilla extract
1 tsp baking powder
1/2 cup raspberry jam
2 cups plain flour
2 cups icing sugar
1 tsp butter, softened
2 Tbsp hot water
Few drops of raspberry or strawberry essence
red food colouring

Steps:

  • Preheat oven to 180 C. Line a slice tray with baking paper.
  • Cream butter and sugar and vanilla until light and fluffy.
  • Add egg, than sifted dry ingredients and mix until the dough comes together . Knead until the dough is smooth. Divide in half. Roll out dough to 1/2 inch thickness.
  • Spread jam over the bottom layer. Place other half of pastry on top. Bake for 30 minutes. Set aside to cool and ice with raspberry icing.

Raspberry Slice - a childhood favourite, dense & crumbly shortbread base spread with raspberry jam, then topped with a crumb mixture combining the base mixture with peanuts for crunch.

2 cups plus 1 tbsp plain / all purpose flour - sifted (300g + 1 tbsp)
200 g salted butter
1/4 cup raw/golden caster sugar (50g)
1/2 tsp vanilla paste
3/4 cup raspberry jam (215g)
1/4 cup crushed peanuts (35g)

Steps:

  • Pre heat oven to 180 c ff / 355 f
  • Grease and line an 18 cm x 18 cm / 7" x 7" (base measurement) baking tin and set aside.
  • In a large bowl, melt butter on high for about 1 min in microwave until melted - careful it may splatter!
  • Add sugar and vanilla paste to melted butter, stirring to melt the sugar and combine.
  • Add flour and mix until completely combined, then remove 1/4 cup of the flour mixture and set aside.
  • Press the remaining flour mixture evenly into the base of the lined tin, pressing down well to create a smooth even base, then bake for 10 mins.
  • While base is baking, add the reserved flour base back to your original bowl, along with the peanuts & extra 1 tbsp of flour, then using your fingers crumble together to combine.
  • When base is finished baking, pour jam over base in a roughly even layer, making sure to go all the way to the edges.
  • Sprinkle crumb topping over the jam layer, then bake for a further 15 mins. Leave to cool in tin for a least 30 mins before slicing.

HINDBAERSNITTER (DANISH RASPBERRY SLICES)

Glazed and dotted with sprinkles, this Danish treat sandwiches raspberry jam between two buttery cookie layers - and has Pop-Tarts vibes. Popular in bakeries across Denmark, it's achievable at home because it's assembled in one large piece. For this recipe from "ScandiKitchen: Fika and Hygge" by Brontë Aurell, the author recommends a not-too-thick layer of good-quality jam: "Go for intense flavor instead of volume." Traditionally, these cookies are made with raspberry jam and cut into squares, but they invite experimentation. Slice them into rectangles or triangles; opt for other bright, tangy preserves; and decorate them liberally, adding color to the icing and sprinkling with chopped freeze-dried fruit, crystallized ginger or toasted nuts. Their nostalgic charm will still shine.

14 tablespoons/200 grams cold unsalted butter (1 1/2 sticks, plus 2 tablespoons) cut into small cubes
2 1/2 cups/350 grams all-purpose flour
1 packed cup/125 grams confectioners' sugar
1/2 teaspoon fine sea salt
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup/200 grams raspberry jam, jelly or preserves
2 cups/250 grams confectioners' sugar
2 tablespoons hot water, plus more as needed
Finely chopped or crushed dried raspberries, or sprinkles, for garnish

Steps:

  • Prepare the dough: In a medium bowl, toss together the butter and flour. Using a pastry cutter (or your fingertips), rub the butter bits into the flour until the mixture resembles cauliflower rice. Stir in the confectioners' sugar and salt. (The mixture will look like very finely crumbled Parmesan at this point.)
  • In a small bowl, whisk together the egg and vanilla extract. Stir into the dough - or use a pastry cutter to integrate it - just until the mixture is smooth. (It may look like the mixture needs more liquid, but the butter and egg should suffice.) Take your hands and squeeze the dough a few times just until it comes together and appears fully hydrated (no dry white spots). Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes (or overnight) before using.
  • Heat the oven to 350 degrees. Divide the chilled dough into two equal portions (each about 350 grams). Cut parchment paper to line two large baking sheets, plus a third piece of similar size to help roll out the dough. Working on one sheet of parchment at a time, roll out each portion of dough, sandwiching it between the extra sheet of parchment for ease, until roughly 10 inches wide, 12 inches long and a scant 1/4-inch thick. (Expanding the dough evenly requires even pressure applied to your rolling pin. If your dough is expanding in the wrong direction, trim outside portions and move the trimmed portion to a more desired central position, "gluing" it in place with your fingertips.) Prick each slab of dough all over with a fork to prevent them from puffing.
  • Using the parchment paper to lift the dough, transfer each to a large baking sheet. Bake both until lightly golden, about 15 to 20 minutes. Transfer baking sheets to wire racks to cool, about 15 minutes.
  • Once the cookies have cooled, spread one of them with the jam until evenly coated. Carefully set the other crust on top, pressing gently to adhere.
  • Prepare the frosting: In a medium bowl, combine the confectioners' sugar with 2 tablespoons hot water; whisk to combine. The mixture should be as thick as loose honey; add additional hot water by the teaspoonful if needed to achieve the desired consistency. Drizzle on top of the pastry, spreading all the way to the edges in an even layer.
  • Sprinkle immediately with dried raspberries or sprinkles. (The frosting can firm up fairly quickly, so you'll want to garnish it while the toppings can still stick.) Let sit until the frosting firms up, about 1 hour.
  • Using a sharp knife, trim the edges of the pastry to form clean lines. (Reserve those to snack on.) Cut into squares or rectangles, in any size you fancy. Raspberry slices will keep a few days, covered, at room temperature - or in the refrigerator, if the weather is balmy (though they are best enjoyed at room temperature). If layering them for storage, separate each layer with parchment or wax paper to protect the frosting.

ALMOND AND RASPBERRY SLICE

1/2 pound (2 sticks) unsalted butter, softened
3/4 cup caster sugar (superfine)
2 teaspoons vanilla extract
7 ounces flaked or slivered almonds
2 tablespoons milk
1 3/4 cups all-purpose flour
1/3 cup cornstarch
1/2 cup raspberry jam

Steps:

  • Preheat an oven to 350 degrees F. Lightly grease a 9 1/2 by 8-inch baking pan lined with parchment paper with 1 tablespoon of butter.
  • To make the almond topping, combine 5 tablespoons butter, 1/4 cup sugar, 1 teaspoon vanilla extract with the almonds and milk in a medium-sized saucepan. Cook over a low heat until the butter has melted, and then leave the mixture out to cool.
  • To make the slice, whip together the remaining 1 stick 3 tablespoons butter, 1/2 cup sugar and vanilla extract with an electric beater until pale and creamy. Sift the flour with cornstarch and add the dry ingredients to the butter mixture in 2 batches, beating on low speed until just mixed. Pour the batter into the baking pan and bake for 12 minutes, or until lightly golden brown. Remove the pastry from the oven and leave it out to cool for 10 minutes.
  • Carefully spread the raspberry jam over the pastry base, and then spread the cooled almond topping over the jam. Return the dessert to the oven and bake for an additional 25 minutes, or until golden.

150g punnet fresh raspberries
50g butter , plus extra for greasing
75g clear honey
200g rolled oats
50g ground almonds
½ tsp almond extract

Steps:

  • Heat oven to 220C/200C fan/gas 7. Grease a 20cm x 20cm baking tray. Mash the raspberries roughly in a bowl and set aside.
  • In a medium saucepan, melt the butter and honey with a pinch of salt. Take off the heat, then stir in the oats, ground almonds and almond extract. Mix until they are coated in the butter and honey mixture.
  • Press half the oat mix in an even layer in the baking tray. Spread the mashed raspberries on top, then spoon the remaining oats on top and smooth with the back of a spoon. Bake for 10-12 mins or until golden. Remove from the oven and leave to cool before slicing into 16.

250g self-raising flour
50g ground almonds
200g butter , diced
280g golden granulated sugar
50g desiccated coconut
2 medium eggs
350-450g/12oz-1lb fresh or frozen raspberries

Steps:

  • Heat the oven to 180C/fan160C/gas 4. Butter an oblong cake tin (about 31 x 17 x 3cm). Tip the flour, ground almonds, butter and sugar into a food processor and whizz just until the butter is evenly distributed - or rub together by hand. Remove 85g/3oz of the mix, stir in the coconut and put to one side. Add the eggs to the remaining mixture in the food processor and whizz quickly - or mix with a wooden spoon. It doesn't need to be very smooth.
  • Spread this mixture over the base of the tin, then scatter half the raspberries over the top. Sprinkle with the coconut mixture and bake for 45 mins. Dot the remaining fruit over the surface and cook for a further 15 mins, until firm to the touch. Cool in the tin and cut into slices, squares, whichever shape you want. They will keep for up to 2 days in the fridge.

375g pack sweet shortcrust pastry
5 tbsp thick seedless raspberry jam
100g frozen raspberries, just thawed
25g flaked almonds
4 tbsp apricot jam
200g butter, very soft, plus a little extra for the tin
200g golden caster sugar
100g ground almonds
100g self-raising flour
1 tsp baking powder
½ tsp almond extract
4 eggs, beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a buttered traybake tin, about 18-20cm x 30cm, with baking parchment. Roll out the pastry to line. Lift into the tin and evenly press right into the corners. Prick with a fork and chill for 20 mins.
  • Bake the pastry for 8-10 mins until it's cooked but not too coloured. Cool for a few mins and turn down the oven to 180C/160C fan/gas 4. Dot the raspberry jam over the pastry (there's no need to spread) and scatter over the raspberries.
  • For the sponge, put all the ingredients into a large bowl and beat with an electric whisk until soft and very well mixed. Spoon this over the raspberry layer, then smooth evenly. Scatter over the flaked almonds and bake for 35-40 mins until golden and firm. Cool completely in the tin. Will freeze for up to 3 months - overwrap the tin with baking parchment and foil beforehand.
  • To serve, thaw for 4 hrs at room temperature, then reheat in a low oven. Melt the apricot jam with 1 tbsp water and brush over the top of the sponge just before serving.

50g ground rice
85g golden caster sugar
140g cold butter , diced
1 tbsp milk
1 tsp cinnamon

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a 21 or 22cm square, shallow baking tin with baking parchment. Put the flour, ground rice and sugar in a bowl with the butter and rub in until fine crumbs form. Stir in the milk with a cutlery knife. Stir in cinnamon and cloves. Tip three-quarters into the tin and press down evenly. Bake for 15-20 mins until golden and crisp looking.
  • Stir the jam in a bowl to loosen a little, then spread over the base. Crumble over the remaining slice mixture and bake for 5-10 mins more until the topping is golden. Scatter with 2 tsp caster sugar, cool in the tin, then slice into squares.
