Low Carb French Onion Chicken Meatballs - a savory, flavorful twist on French onion soup in the form of protein-packed, low carb meatballs!!

1 egg
5 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1/3 cup almond meal for gluten free version (or bread crumbs if preferred)
1/3 cup grated Parmesan cheese
1/3 cup parsley, finely chopped
1 medium onion, finely chopped
1 pound 93% lean ground chicken
2 tablespoons butter
2 tablespoons olive oil
2 large yellow onions, thinly sliced
4 large garlic cloves, minced
1 1/2 cups beef broth
1 tablespoon fresh thyme
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
4 ounces shredded Gruyère cheese (see Note about cheeses below)
6 ounces shredded Havarti cheese (see Note about shredding the Havarti, below)

Steps:

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all meatball ingredients: ground chicken, Parmesan cheese, almond meal, fresh chopped parsley, chopped onion, egg, garlic, salt and pepper. Mix until everything is combined.
  • Using a 1½ - inch scoop, form meatballs and place them evenly spaced on the parchment lined baking sheet. Bake for 15-20 minutes or until internal temperature is 165F.
  • While the meatballs are baking: In a large skillet over medium heat, add the olive oil and butter. Add onions and cook until very soft and golden, 25 minutes, stirring often.
  • Add the minced garlic and cook 1 more minute.
  • Add beef broth, fresh thyme, onion powder, salt and pepper. Bring to a boil, then reduce the heat and simmer until slightly thickened, about 5 minutes.
  • Add the baked meatballs to the skillet and cook about 5 minutes. Sprinkle the cheese over the meatballs and cover the pan until it melts, about 3-5 minutes. Serve them warm, and garnish with fresh thyme.

Richly seasoned meatballs baked with a rich French onion sauce and topped with melted Gruyere cheese make this a meal fit for hosting guests. Serve them with egg noodles or some seasoned red potatoes and French bread on the side.

1 pound ground chicken
½ cup bread crumbs
1 egg
1 (1 ounce) package dry French onion soup mix
1 teaspoon minced garlic
2 tablespoons butter
2 medium onions, thinly sliced
1 tablespoon white sugar
1 tablespoon olive oil
⅓ cup red wine
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups beef broth
½ teaspoon dried thyme
1 tablespoon all-purpose flour
6 ounces Gruyere cheese, shredded

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix ground chicken, bread crumbs, egg, onion soup mix, and garlic together in a medium bowl until the ingredients are well incorporated. Roll into sixteen 1 1/2-inch meatballs.
  • Melt butter in a saucepan over medium heat. Add onions and sugar; saute until onions are softened, about 12 minutes.
  • Meanwhile, heat olive oil in an oven-safe skillet over medium-high heat. Add meatballs and cook, flipping occasionally, until edges are browned, about 4 minutes.
  • Transfer skillet to the preheated oven and bake until meatballs are no longer pink in the center, about 15 minutes. Check the meatballs halfway through and flip if they are browning too much on the bottom.
  • Add red wine, salt, and pepper to the onions and stir. Cook over medium heat for 3 minutes. Stir in beef broth and thyme. Bring to a boil. Reduce heat to low and slowly stir in flour. Cook until slightly thickened, 2 to 3 minutes more.
  • Remove meatballs from the oven and pour onion sauce on top. Cover evenly with Gruyere cheese and return to the oven until melted, about 5 minutes.

1 lb ground chicken (lean or thighs)
1 medium sweet onion (grated and drained)
1 egg
4 cloves garlic (grated)
⅓ cup potato chips (crushed (measure once crushed))
⅓ cup Parmesan cheese (grated)
⅓ cup parsley (or cilantro, finely chopped)
1 ½ tsp kosher salt
2 large sweet onions (thinly sliced)
6 cloves garlic (minced)
2 tbsp unsalted butter
3 tbsp olive oil
1 ½ cups beef broth
6 sprigs fresh thyme (plus more for garnish)
1 tsp kosher salt
7 slices Havarti cheese (or substitute with 2 cups gruyere cheese)

Steps:

  • Preheat your oven to 450 degrees. Line a baking sheet with parchment paper and set it aside.
  • In a large mixing bowl, combine all meatball ingredients. Mix well with your hands or a spoon until combined.
  • Scoop the chicken mixture with a 1½ - inch cookie scoop onto the parchment paper-lined cookie sheet.
  • Using wet hands form the meatballs and place them back on the baking sheet.
  • Bake for 8-10 minutes or until the internal temperature is 165F. Keep oven on to melt the cheese on top.
  • Heat a large oven-safe skillet over medium-low heat and add the olive oil. Add sliced onions and salt, cook until very soft and golden brown, about 20 minutes, add butter halfway after cooking. Stirring them often to prevent burning.
  • Add in the minced garlic and cook for an additional minute.
  • Add the fresh thyme and beef broth. Bring to a boil, then reduce the heat and simmer until slightly thickened, about 5 minutes.
  • Add the baked meatballs to the skillet, top with some of the caramelized onions, and then the cheese over the meatballs.
  • Add pan to the 450F oven and bake until cheese has melted about 3-5 minutes. Serve them warm, garnish the meatballs with fresh parsley.
