These Caramel Heavenlies have layers of graham cracker, cinnamon, caramel, coconut, marshmallows, and almonds. A quick dessert for get togethers.

12 whole graham crackers
2 cups miniature marshmallows
3/4 cup salted butter ((see Note))
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup sliced almonds
1 cup coconut flakes

Steps:

  • Preheat oven to 350°. Line a 15x10x1-in. baking pan with foil, letting foil extend over sides by 1 in.; lightly spray with cooking spray. Arrange graham crackers in a single layer in the prepared pan; If your pan isn't quite those dimensions you may need to break graham crackers to fit. Sprinkle with marshmallows in an even layer.
  • In a small saucepan, combine butter, brown sugar and cinnamon; cook and stir over medium heat until butter is melted, about 2 -3 minutes. Remove from heat; stir in vanilla and 1/4 teaspon salt if using unsalted butter.
  • Spoon butter mixture over marshmallows and graham crackers making sure to get some on all of the graham crackers. Sprinkle with almonds and coconut. Bake 10-14 minutes (mine only took 10) or until the marshmallows and coconut are golden brown. Be careful! You want them cooked enough that the bars caramelize and aren't sticky but not too much so that the top starts burning.
  • Let them cool. Using foil, lift cookies out of pan. Cut into small triangles; trimming the edges if necessary.

Graham crackers form the base for this bar cookie with layers of marshmallows, brown sugar, almonds and coconut. "I've made these cookies since 1984," says Georgine Simmonds of Genesee, Michigan. "They're one of my family's favorites."

12 graham cracker rectangles
2 cups tiny marshmallows
¾ cup butter, cut up
¾ cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla
1 cup sliced almonds
1 cup flaked coconut

Steps:

  • Line a 15x10x1-inch pan with parchment paper or foil. Grease foil, if using. Arrange graham crackers in a single layer in the pan. Sprinkle with marshmallows.
  • In a medium saucepan combine butter and brown sugar; cook over medium heat until sugar is completely dissolved, stirring frequently. Remove from heat. Stir in cinnamon and vanilla. Spoon over the graham crackers, spreading evenly. Sprinkle with almonds and coconut.
  • Bake in a 350 degree F oven about 15 minutes or until lightly browned. Cool on wire rack. Use foil or parchment to lift uncut bars from pan. Cut into 3-inch squares; cut each square in half diagonally.
  • Store in an airtight container in refrigerator up to 1 week. Makes 30 cookies.

1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup sliced almonds
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. Line a 15x10x1-in. baking pan with foil, letting foil extend over sides by 1 in.; lightly coat foil with cooking spray. Arrange graham crackers in prepared pan; sprinkle with marshmallows., In a small saucepan, combine butter, brown sugar and cinnamon; cook and stir over medium heat until butter is melted and sugar is dissolved. Remove from heat; stir in vanilla., Spoon butter mixture over marshmallows. Sprinkle with almonds and coconut. Bake until browned,14-16 minutes. Cool completely in pan on a wire rack., Using foil, lift cookies out of pan. Cut into triangles; discard foil.

2 cups miniature marshmallows
3/4 cup butter or 3/4 cup margarine
3/4 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup sliced almonds
1 cup coconut flakes

Steps:

  • Line a 15" x 9" x 1" baking pan with foil.
  • Place graham crackers in pan; cover with marshmallows.
  • In a saucepan over medium heat, cook and stir butter, brown sugar, and cinnamon until the butter is melted and the sugar dissolved.
  • Remove from the heat; stir in vanilla.
  • Spoon over the marshmallows.
  • Sprinkle with almonds and coconut.
  • Bake at 350 degrees for 14 to 16 minutes or until browned.
  • Cool completely.
  • Cut into 2-inch squares, then cut each square in half to form triangles.

1 cup shredded coconut (I use sweetened but natural works too)

Steps:

  • Preheat oven to 350*F Line a jelly roll baking sheet with non-stick foil. Lay graham crackers on sheet, end to end. Sprinkle marshmallows on top of graham crackers. Set aside. In a saucepan, over medium heat, combine butter, brown sugar and cinnamon for 3 - 5 minutes until butter is melted and sugar is dissolved. Add vanilla and spoon mixture over marshmallows. Sprinkle with almonds and coconut. Bake in over for 14 minutes or until lightly toasted. Cool completely and then slice into squares or triangles. Attempt to not devour the entire pan by yourself!
