TANGY BANANA PEPPER RINGS

Similar to pepper rings purchased at the store, except we use whatever kind of pepper we have in the garden.

Number Of Ingredients 6

20 -30 banana peppers, how many depends on size
1 quart vinegar
2 teaspoons sugar
2 teaspoons canning salt
1 pinch alum
1 pinch turmeric (optional)

Steps:

  • Wash and slice peppers-you may seed them if you want to.
  • Pack in jars.
  • Boil vinegar, sugar, salt, alum, and turmeric.
  • Should be enough liquid for 2 pints.
  • Pour vinegar mixture over peppers in jars.
  • Seal with lids and screw rings.
  • *myfirst ones were mushy, second batch was ok**i used green chiles and jalapenos*.

I came up with idea b/c we growed banana peppers in our garden and I had so many and I needed to come up with new idea this recipe was created by me off the top of my head . Its fast and easy my husband loves it.

6 thick and long banana peppers
2 eggs
1 cup self rising flour or 1 cup breadcrumbs
Tony Chachere's Seasoning (any other seasoning)
mozzarella cheese
American cheese

Steps:

  • cut tops of banana peppers, edge out seeds (be careful not to slit it open on sides) stuff cheese in pepper with little finger make sure it reaches bottom.
  • batter egg add seasoning put peppers in to soak.
  • take out and roll in flour or bread crumbs repeat process for thicker crust.
  • turn on deep fryer and fry until golden brown or cheese melt.
  • this is good for finger snacks.

This recipe comes from my long time friend, Tracy. I really can not believe she shared it with me.....all this time, I thought she cast some magic spell over the frying pan to make them taste so good! Turns out it was just the saltine crackers! The mystery is over...... Do keep in mind, that this is NOT a "batter" recipe (if you love breading, you may want to try something else). The coating is light and crispy and you end up with more coverage on the 'interior' part of the pepper than the exterior. I think they are wonderful this way!

10 banana peppers (washed, sliced lengthwise and seeds removed)
1 cup buttermilk
1 cup cornmeal
1 cup saltine crackers, crushed
vegetable oil (for frying)

Steps:

  • Heat vegetable oil in frying pan over medium heat.
  • In medium bowl, mix together equal parts corn meal and crushed saltines.
  • Prepare another shallow bowl of buttermilk.
  • Dip banana peppers in buttermilk.
  • Coat with cornmeal/cracker mixture.
  • Fry in veg oil over medium heat until golden brown.
  • Drain/cool slightly on paper towels.
  • Enjoy alone or with cocktail sauce!
