- For dressing, combine the sugar, vinegar, oil, salt and pepper in a large saucepan. Bring to a boil. Remove from the heat; cool. , In a large bowl, combine the remaining ingredients. Drizzle with dressing and toss to coat. Cover and chill for 8 hours. Serve with a slotted spoon.

LEMONY SOUR CREAM CHEESECAKE

- 1.Heat the oven to 325°F.
- 2.Place a 13 x 9-inch baking pan half filled with water on the bottom rack of the oven.
- 3.In a medium mixing bowl, stir together the graham cracker crumbs, 1/4 cup sugar, lemon zest, and melted butter until well mixed.
- 4.Pat the crust mixture on the bottom and 1-inch up side of a 9-inch spring-form pan with a removable bottom.
- 5.Using heavy duty foil, wrap the bottom and sides of the cheesecake pan with foil; set aside.
- 6.In a large mixer bowl, beat together the cream cheese, 1 cup sour cream, 1 cup sugar, flour, vanilla, and salt at medium speed until smooth and creamy (1 to 2 minutes).
- 7.Add the eggs, one at a time, beating 10 to 15 seconds after each addition. Do not overbeat.
- 8.Add the lemon juice, beating on low speed, just until mixed (10 to 15 seconds).
- 9.Pour the batter into the prepared spring-form pan.
- 10.Place the cheesecake on the middle rack above the pan of water. Bake until the sides of the cheesecake are set and the center is jiggly, but not wet (50 to 60 minutes). DO NOT OVERBAKE or the cheesecake will crack.
- 11.Turn off the oven. Prop open the oven door with a wooden spoon. Leave the cheesecake in the oven for one hour.
- 12.Remove from the oven and carefully rim the sides of the pan to loosen the cheesecake.
- 13.In a small bowl, stir together ¾ cup sour cream and the remaining 1 tablespoon of sugar.
- 14.Spread the sour cream mixture on the top of the cheesecake.
- 15.Place in the refrigerator for 6 to 24 hours, until completely cooled.
- 16.Remove the sides of the spring-foam pan.
- 17.Cut the cheesecake into pieces and serve. Refrigerate leftovers.

- In the bottom of a medium, shallow bowl combine relish, vinegar, oil, garlic, bay and cloves. Let stand 5 minutes then fish out the garlic, bay and cloves. Add cabbage salad and toss, let stand 10 to 20 minutes in the refrigerator. Season salad with salt and pepper and toss in the scallions then serve.
CHINESE SWEET AND SOUR VEGETABLES
We had this tonight and it was just wonderful so I thought I would share. The sauce is just thick enough to stick to the vegetable perfectly.

Steps:
- Add 1/2 cup water to large skillet with a tight-fitting lid and bring to a boil over high heat.
- Add carrots, cover and steam for 4 minutes.
- Remove lid and add an additional 1/4 cup water and bring to a boil.
- Add broccoli and red peppers.
- Reduce heat to medium.
- Cover and steam another 4 minutes or until vegetables are crisp-tender.
- Meanwhile, combine cornstarch and sugar in small bowl.
- Blend in pineapple juice, soy sauce and vinegar until smooth.
- Transfer vegetables to colander and drain.
- Stir pineapple mixture and add to skillet.
- Cook and stir 2 minutes or until sauce boils and thickens.
- Stir in sesame oil.
- Return vegetables to skillet along with the green onions and toss with sauce.
