This is a REFRESHING, tangy Salad--low in fat. If you want it creamy and not so low in fat, just add 2 tablespoons mayonnaise. Be sure to slice the cucumbers and onions very very thin! Serve as salad or top open faced sandwiches with it!

Ingredients

2 cucumbers, very thinly sliced
1 red onion, very thinly sliced
2 tablespoons vinegar or 2 tablespoons lemon juice
2 tablespoons low-fat sour cream or 2 tablespoons yogurt
salt and pepper, to taste (I like a lot of pepper)
1/2 teaspoon sugar
1 teaspoon chopped fresh dill

Steps:

Mix cucumbers and onions together.
Mix rest of ingredients together in a closed bowl and give a shake.
Add to cucumbers, chill till very cold & serve.

A Southern staple. This is ALWAYS requested by those who have had it during cook out season. Fast easy and cheap!

Ingredients

3 large cucumbers
1 medium shallot (2 thinly sliced green onions work also)
1 tablespoon dried dill or 2 tablespoons fresh dill
1/4 cup cider vinegar
1/4 cup white vinegar
1 1/2 tablespoons sugar
3 tablespoons salt

Steps:

Thinly slice cucumbers. I use a mandoline for perfect thin cuts.
Place cucumber in a large bowl adding salt through out the cucumbers.
Place a plate over the cucumbers as to add weight ( i usually put my olive oil can on top of the plate for added pressure). This step is to withdraw as much extra water as possible. Cover for 1 hours.
Mix vinegars, sugar and dill, taste, making adjustments for that tangy taste.
Empty excess water from cucumbers and add shallots and vinegar dressing.
Ideally let sit for another hour, but its hard to resist for that long.

Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

Ingredients

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
