GUACAMOLE EGG FILLING:
6 eggs, hard boiled
1/4 teaspoon purple gel food coloring in water
6 yolks of hardboiled eggs
1 avocado
Juice of one lime
1 to 2 tablespoons cilantro leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper, or to taste
Salt, to taste
Blue corn chips, crushed

Steps:

  • Boil eggs. Cool under running water and refrigerate for about 4 hours or overnight. Remove eggs from the refrigerator and using the back of a spoon, tap the shells in various places. This is what gives you the spiderweb pattern. Into a large bowl and add enough water to cover the eggs and add the gel food coloring and mix well. Add eggs to colored water and Refrigerate the eggs overnight. Drain water and peel the shells to reveal the cool spidery webs of color. This is the most fun part of this recipe. The eggs are stunningly beautiful. I may never color Easter eggs the same way again. Cut eggs in half, place yolks in a food processor and continue to prepare the guacamole egg filling below. Place egg white halves in single layer in a shallow dish and refrigerate until ready to assemble. In a food processor, blend yolks, avocado, lime, and herbs and spices until very smooth. Transfer into a piping bag with a star tip and pipe into spiderweb eggs and garnish with crushed blue corn chips or red pepper flakes (not pictured) or even top with your favorite salsa for a bloody effect. 4 cups guacamole
1/4 cup Mexican crema or sour cream
Lime juice, if needed
2 pitted black olives
Blue corn tortilla chips, for serving
1 firm avocado, skin-on

Steps:

  • For the web: Put a large round shallow bowl on a larger round platter. Fill the bowl with the guacamole and smooth the top with a spoon or offset spatula. Fill a squeeze bottle or pastry bag with Mexican crema or sour cream (thin it out with some lime juice if needed). Pipe 4 concentric circles of crema onto the guacamole. Using the tip of a knife or skewer, pull lines from the center circle out, creating a spider web pattern.
  • For the spider: Slice 1 olive in half lengthwise and use one of the halves for the spider body. Slice 8 long spider legs from the remaining 1 1/2 olives. Arrange the spider on the web. Surround the bowl of guacamole with the tortilla chips.
  • For the skull: Using a paring knife, make 2 eyes on the wide end of the avocado, cutting through the skin and flesh all the way down to the pit; discard the skin and flesh. Cut an upside-down heart shape just through the skin for the nose, then remove the skin, leaving the flesh showing. For the mouth, cut a long rectangle just through the skin and remove it. Use a skewer or the tip of a knife to draw lines on the flesh for teeth.

2 small avocados, diced
¼ cup fresh cilantro, chopped
1 g jalapeño, seeds removed and diced
½ red onion, finely chopped
1 g tomato, finely chopped
2 cloves garlic, minced

1 tablespoon fresh lime juice
1 teaspoon salt
tortilla chip, crushed
fresh cilantro, for garnish

Steps:

  • Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
  • Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
  • Mix the avocado, cilantro, jalapeño, red onion, tomato, garlic, cumin, lime juice, and salt with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)

1 tomato, diced
½ cup red onion, diced

Steps:

  • Place the eggs in a large pot and cover with 1 inch (2cm) of cold water. Cover with a lid.
  • Bring to a rolling boil, and remove from heat. Let the eggs sit, covered for 8-10 minutes.
  • Remove from water and immediately place in bath of ice water for a few minutes.
  • Remove shells and cut the egg in half, vertically.
  • Remove the yolk and place in a bowl.
  • Set the cooked whites aside on a serving tray.
  • In the bowl with the yolks, add all the ingredients for guacamole. Mash until well incorporated.
  • Spoon guacamole mixture into the bowls of the cooked egg whites.
  • Garnish with a broken piece of a tortilla chip and cilantro.

1/2 cup (1 stick) unsalted butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
1 batch Royal Icing (see below)
Food coloring
1 egg white
1 teaspoon lemon juice
1 1/2 cups confectioners' sugar

Steps:

  • Cream the butter and sugar. Add the egg and beat until fluffy. Blend in the vanilla. Sift in the flour, baking powder, and salt, mixing until just combined. Wrap the dough in plastic wrap and chill for 1 hour.
  • Preheat the oven to 350 degrees. On a floured surface, roll half of the dough to 1/8-inch thick. Cut into circles using a 3-inch round cookie cutter or the top of a drinking glass. Gather and reroll scraps. Repeat with remaining dough. Place the cookies on a greased baking sheet and bake for about 8 minutes, until just golden. Do not allow cookies to brown.
  • To decorate, melt the chocolate chips in the microwave in a heatproof bowl for 1 minutes. The chips may look unmelted, but stir them with a spoon to see if they have actually softened before putting them in for another minute, if necessary. Spoon the melted chocolate into a zipper-lock bag. Seal the bag, pressing out any air. Use a toothpick to make a very tiny hole in one corner of the bag to release a very thin stream of chocolate for writing.
  • To make the spiderwebs, spread white royal icing smoothly over the surface. Immediately, before the icing can set, pipe a spiral of chocolate over the surface, starting in the middle and working outward. Starting in the center, use a toothpick to pull outward through the icing, making a spiderweb design.
  • With beaters or a standing mixer, whip the egg white and lemon juice until frothy. At medium speed, beat in the confectioners' sugar, a little at a time, until the mixture is thick but still liquid enough to beat. Then beat on high until the mixture is thick and glossy, about 3 minutes. Cover the surface with plastic wrap while waiting to use it. Royal icing will set to a firm, glossy finish when applied to a cookie. The icing can be stored, tightly covered, in the refrigerator for up to a week.

Steps:

  • Place 6 eggs in a pot, cover with water. Bring to a boil then continue cooking 10-12 minutes.
  • Remove eggs and rinse in cold water.
  • Crack the shells, gently, with the back of a spoon. Do not remove shells.
  • Add 2 cups of water and a 4-5 drops of black food coloring to a bowl and submerge eggs. Refrigerate for 2 hours.
  • Remove eggs from water and carefully de-shell, revealing spider-web-looking eggs.
  • Cut eggs in half lengthwise. Slip out yolks and mash in a small bowl. Stir in mayonnaise, mustard, salt and pepper. Pipe or spoon filling into each egg half.
  • Cut a whole olive in half lengthwise. Put one half on mashed yolk for the spider's body. Thinly slice the other half for the spider's legs. Place four legs on each side of the body.

Swiss meringue buttercream icing transformed into a spooky Halloween showstopper - this rich chocolate sponge will be the guest of honour at any Halloween party

110g unsalted butter , plus extra for greasing
3 tbsp cocoa powder
140ml chocolate stout (we used Young's Double Chocolate Stout, available from Tesco)
170g white caster sugar
170g light brown soft sugar
1 tsp vanilla extract
3 large eggs , lightly beaten
100g dark chocolate , melted and cooled
280g plain flour
2 tsp bicarbonate of soda
3 large egg whites
240g caster sugar
360g unsalted butter , room temperature
200g white chocolate , melted and cooled
100g white mini marshmallows
25g black sugar paste

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease three 20cm round cake tins and line the bases with baking parchment. To make the cake, put the cocoa in a bowl, add 280ml boiling water and whisk until dissolved. Pour in the stout, mix, then set aside to cool.
  • In a stand mixer or a large bowl using an electric hand whisk, beat together the butter, both sugars and vanilla extract until light and fluffy (about 5 mins). Add the eggs little by little, mixing until fully incorporated before adding more. Once all the egg has been added, spoon in the melted chocolate and mix to combine.
  • In another bowl, mix the flour, bicarb and 1/2 tsp salt. Add this mixture to the butter mixture in three stages, alternating with the stout mixture (which will be very runny). Pour the batter equally between the prepared tins and bake for 25-30 mins until a skewer inserted into the cake comes out clean. Leave to cool in the tins for 10 mins, then turn out onto a wire rack to cool completely.
  • To make the buttercream, put the egg whites and sugar in a heatproof bowl and set over a pan of gently simmering water. Stir with a whisk until the sugar has dissolved and the mixture is warm to the touch. Remove the bowl from the heat and beat with an electric hand whisk on high speed until the mixture has tripled in volume and has cooled down. Slowly add the butter 1 tbsp at a time while continuing to whisk. Once all the butter has been added, the mixture should look glossy and thick - if it doesn't, keep whisking until it does, or if the bowl still feels warm, chill for 10 mins before whisking again. Once ready, mix in the melted white chocolate.
  • To assemble the cake, put one of the cake layers on a cake stand and top with a layer of buttercream. Repeat with the other two layers. Spread the remaining buttercream all over the cake, using a spatula or palette knife to smooth the sides. Chill for 1 hr or until the buttercream is firm (see tip, below).
  • To decorate, melt the marshmallows in a heatproof bowl set over a pan of simmering water, stirring from time to time. Remove from the heat and put to one side for a few mins until the mixture is cool enough to handle. Use your fingers to grab a small amount of the marshmallow and stretch it out to form long strands (dipping your fingers in vegetable or sunflower oil will help!) Drape the strands over the cake in a random pattern, so it's thoroughly covered. Create a spider using the sugar paste (roll two balls, one bigger than the other, for the body, and thin strands for the legs) and place on top of the cake. Will keep for up to three days in an airtight container.
