Number Of Ingredients 25

Kirby cucumbers, thinly sliced
¼ medium red onion, thinly sliced
3 tablespoons rice vinegar
1 tablespoon plus 1 teaspoon sugar
Kosher salt and freshly ground pepper
2 teaspoons fresh ginger, finely grated
1 garlic clove, crushed
1 serrano chili, seeded and minced
2 tablespoons Asian fish sauce
2 tablespoons cilantro, finely chopped
1 tablespoon basil, finely chopped
1 ½ pounds sushi-quality tuna (available from grocery)
1 ½ tablespoons vegetable oil
1 ½ teaspoons Asian sesame oil
4 hamburger buns
2 tablespoons dry-roasted peanuts, finely chopped
1 cup mayonnaise
2 tablespoons soy sauce
2 tablespoons cilantro, finely chopped
2 tablespoons scallion greens, finely chopped
1 tablespoon toasted sesame seeds
2 teaspoons fresh ginger, finely grated
zest of 1 lemon, finely grated
2 teaspoons fresh lemon juice
freshly ground pepper

Steps:

  • Prepare cucumber salad: Toss the cucumbers, onions, vinegar, 1 tablespoon of the sugar and 1 teaspoon of salt. Generously season with pepper and let stand for about an hour at room temperature.. Meanwhile, in a second medium bowl, mash to a paste with the back of a spoon: ginger, garlic, chili and remaining teaspoon of sugar. Stir in fish sauce, cilantro and basil.. Thinly slice the tuna on a clean cutting board. Stack slices and cut into matchstick-size pieces. Cut these pieces into cubes, and chop until they are about 1/8 inch.. Add the chopped tuna to the ginger paste and stir until evenly combined.. Lightly moisten hands and shape the tuna mixture into four patties about 1-inch thick. Place on a plate lined with plastic wrap and refrigerate for 20 minutes.. Prepare Ginger-Lemon Mayonnaise: Combine all of the ingredients. Mix well.. Light the grill and brush the grate, tuna patties and cut sides of the buns with a mixture of the vegetable and sesame oils.. Grill the burgers for 6 minutes, turning once, for medium rare. Move away from the heat and grill the cut sides of the buns until toasted.. Drain the cucumber salad. Spread Ginger-Lemon Mayonnaise on the buns and place the tuna burgers on the bottoms. Top with the cucumber salad and peanuts. Cover with top bun and serve.

THAI TUNA BURGERS WITH GINGER-LEMON MAYONNAISE

Thai Tuna Burgers With Ginger-Lemon Mayonnaise image

These offbeat tuna burgers were loosely inspired by a Thai fried white fish patty called tod man pla and discovered by Food & Wine. The Thai cucumber salad stands in for pickles. Use sushi-quality tuna so you can serve the burgers medium rare. The Ginger-Lemon Mayonnaise makes one cup and can be refrigerated for up to 3 days. MAKE AHEAD: According to the author, the recipe can be prepared through Step 3 and refrigerated for up to 3 hours. Beer Recommendation: An aromatic golden lager will complement the rich tuna here. Look for one with hoppy or lemony flavors, such as Asahi Super Premium from Japan or Singha Lager from Thailand. Wine: soft, off-dry riesling.

Time 1h5m

Yield 4 servings

Number Of Ingredients 22

1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

Provided by ratherbeswimmin

Categories     Tuna

Time 53m

Yield 4 serving(s)

Number Of Ingredients 17

1/2 cup low-fat mayonnaise
1 teaspoon finely grated lemon zest
6 large fresh basil leaves, finely chopped
2 teaspoons capers in brine, rinsed and drained
1 lb fresh tuna steak, trimmed and ground
1/4 large red bell pepper, finely chopped
1 whole green onion, finely chopped
2 tablespoons Chardonnay wine
1 tablespoon horseradish mustard
1 tablespoon olive oil, plus
1 teaspoon olive oil
1/2 teaspoon seasoning salt
1/3-1/2 cup dried plain breadcrumbs

4 slices mozzarella cheese or 4 slices provolone cheese
2 (6 ounce) jars marinated artichoke hearts, drained well on paper towels and cut into small pieces
mixed baby greens

Steps:

  • Make the mayonnaise: combine all ingredients in a small bowl; mix well; cover and refrigerate at least 1 hour before using to allow flavors to blend.

  • Divide mixture into 4 equal portions; form portions into patties to fit the buns.
  • When grill is ready, brush grill rack with vegetable oil; place patties on the rack; cover and cook, turning once, until done to preference, 3-4 minutes on each side for med-rare.
  • During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • During last minute of cooking, place 1 slice of cheese on each patty to melt.
  • To assemble: spread mayonnaise over the cut sides of the buns; on each bun bottom, place an equal portion of the artichoke hearts, a few greens, and a patty; add the bun tops and serve.
