BAKED TOFU IN THAI PEANUT SAUCE

Like Thai or Indonesian-style satays? Then you're going to love this super easy vegetarian and vegan version of tofu baked in a Thai-inspired peanut sauce.

1 (12- to 14-ounce) block of tofu , firm or extra firm
1/4 cup peanut butter, creamy or natural peanut butter is best; no chunks
1/2 teaspoon ground ginger
2 tablespoons lime juice or orange juice
1 tablespoon soy sauce
2 tablespoons sesame oil (olive oil can be used if you're in a pinch)
3 tablespoons maple syrup, or honey or agave nectar
1 tablespoon sweet chili sauce

Steps:

  • Gather the ingredients.
  • First, press your tofu .
  • Once your tofu is well-pressed, cut it into your desired shapes. Thin slabs, triangles or even small bite-sized shapes will work.
  • Once your tofu is ready to go, pre-heat the oven to 400 F. Line a baking tray with aluminum foil if you can since baked tofu sometimes gets a bit sticky, and the foil makes clean up super easy.
  • Next, prepare the sauce. Whisk together the peanut butter (melt it slightly in the microwave for just a few seconds to make this easier) with the ginger, lime juice or orange juice, soy sauce, sesame oil, maple syrup, and sweet chili sauce. Before you bake your tofu, give the sauce a quick taste. It should be delicious. If not, adjust the seasonings to taste.
  • Coat the tofu with the peanut sauce on all sides. You can transfer the sauce to a wide shallow bowl or dish and dip it in, or use a pastry brush to coat each piece by hand if you're working with larger pieces of tofu. We like to dip it, then brush on extra sauce.
  • Bake the tofu in the oven for about 15 to 17 minutes, keeping an eye on them so they don't burn. Turn pieces over, and bake another 10 to 15 minutes. (Note: The sauce on the aluminum foil will burn a bit, don't worry. You just don't want to see the coated tofu burn.)
  • Serve and enjoy!

1/3 cup olive oil
2 large red bell peppers, seeded, thinly sliced
3 tablespoons minced peeled fresh ginger
3 large garlic cloves, finely chopped
1 14-to 16-ounce package extra-firm tofu, drained well, cut into 1-inch cubes
3 green onions, thinly sliced on diagonal
3 tablespoons soy sauce
2 tablespoons fresh lime juice
1/2 to 3/4 teaspoon dried crushed red pepper
1 6-ounce bag baby spinach leaves
1/3 cup chopped fresh basil
1/3 cup lightly salted roasted peanuts

Steps:

  • Heat oil in wok over high heat. Add bell peppers, ginger, and garlic; sauté until peppers just begin to soften, about 2 minutes. Add tofu and green onions; toss 2 minutes. Add next 3 ingredients. Toss to blend, about 1 minute. Add spinach in 3 additions, tossing until beginning to wilt, about 1 minute for each addition. Mix in basil. Season with salt and pepper. Sprinkle peanuts over.

You'd never guess it's Tofu! Peanut and ginger flavors combine to create a wonderful Asian-flavored dish that everyone will love. Serve over white rice.

1 (14 ounce) package firm tofu, cut into 3/4 inch cubes
⅓ cup chopped green onion
1 ½ teaspoons olive oil
½ teaspoon sesame oil
1 teaspoon soy sauce
2 teaspoons grated fresh ginger root
¼ cup chunky peanut butter
3 tablespoons flaked coconut
sesame seeds

Steps:

  • Heat olive oil and sesame oil in a skillet over medium-high heat. Reduce heat to medium, and cook green onions for one minute. Add tofu, and continue cooking 4 minutes more, sprinkling with soy sauce halfway through. Gently stir in the peanut butter and ginger, being careful not to break the tofu, until well incorporated.
  • Remove from heat, and toss in coconut. Transfer to a serving dish, and sprinkle with sesame seeds.

  • Use a cleaver or knife to finely mince the shrimp into a very fine paste. This process entails chopping and then folding the shrimp paste over and onto itself, and continuing to chop until you have a paste. We used this same technique in our Dim Sum Stuffed Pepper recipe. Transfer the shrimp paste to a bowl and add in the rest of the filling ingredients. Mix well until combined.
  • Carefully remove the soft tofu from the carton, draining the excess water. Cut the block in half lengthwise, and cut each half into 5 equal pieces of tofu so you get 10 tofu blocks.
  • Next, position the tofu slices on a plate or sheet pan. Measure out 2 tablespoons of cornstarch onto a small plate. Next, scoop 1 teaspoon of the filling with a measuring spoon and dip the open end of the spoon onto the cornstarch to coat it. Place a teaspoon of filling onto the middle of each tofu block cornstarch side down. This cornstarch will “glue” the filling onto the tofu. Repeat another 9 times for the other tofu pieces.
  • Once all the filling is in place, pour the remaining cornstarch into a sieve, and carefully sift the rest evenly over the stuffed tofu. This will give you an extra crispy top-coating.

  • Soak dried mushrooms in boiling hot water for at least 15 minutes. Best left to rehydrate overnight.
  • Heat a pan with some oil. Once hot, add in the garlic and onion. Saute until tender. Add in the mushrooms and carrots. Leave to cook for 3-4 minutes. Add in the mashed tofu (tofu removed from the core). Season with some soy sauce and pepper. Mix well. Leave to cook for 6-7 minutes over medium high heat, mixing every minute or so, until the tofu resembles minced meat.
  • Scoop around 2-3 teaspoons of the filling into the tofu. Carefully press down with your finger, while also supporting the sides of the tofu. Ensure that the filling is packed tight. Repeat for the rest of the tofu.
  • Heat a pan with enough oil to submerge at least 1/3 of the tofu. Once hot, place the tofu filling down first. Leave to cook for 3-4 minutes over high heat, until golden brown.Flip the tofu and cook the remaining sides until golden brown.Once cooked on each side, set aside in a bowl.
