1/2 cup vegetable oil
1/3 cup red wine
2 tablespoons fresh lemon juice
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
2 garlic cloves, minced

Steps:

  • In measuring cup, whisk together oil, wine lemon juice, thyme, pepper and garlic.
  • Place beef in plastic bag or shallow glass dish.
  • Pour marinade over top; seal bag refrigerate for 2 to 6 hours.

1 1/4 pounds flank steak, rinsed and patted dry
1 (1.06-ounce) packet zesty herb marinade (recommended: McCormick)
1 1/2 cups red wine, preferably Merlot
1 teaspoon dried rosemary, chopped

Steps:

  • In a large zip-top bag, combine all ingredients. Squeeze out air and seal bag. Massage bag until well combined and marinade mix is dissolved. Marinate in refrigerator for a minimum of 1 hour or up to 8 hours. Remove flank steak from refrigerator 30 minutes before cooking.
  • Preheat grill to medium-high heat. Oil grate when ready to start cooking.
  • Remove steak from marinade; discard marinade. Place steak on grate. Grill for 5 to 6 minutes per side for medium.
  • Remove from grill and let rest for 5 minutes.
  • To serve, slice across the grain.

This is a nice Mediterranean-influenced marinade. All the herbs in this recipe except for the parsley are dried herbs. This can easily be turned into a beef or lamb marinade just by changing the dry white wine to a dry red wine.

1/2 cup olive oil
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon marjoram
2 tablespoons parsley, fresh, minced
3/4 teaspoon salt
1/2 teaspoon pepper
4 lbs pork or 4 lbs poultry

Steps:

  • Combine the marinade ingredients in a large non-reactive bowl or one gallon food storage bag.
  • Add the meat or poultry.
  • Turn to coat all sides.
  • Cover or seal tightly.
  • Marinate for at least 6 hours or overnight, turning occasionally.
  • Cooked in preferred method.

This is an absolutely delishious marinade i accidentally made up in a hurry. I only marinated my beef for 2 hours - but if I had given it overnight it would have been stupendous. The herbs are at your discretion - a little goes a long way.

1/2 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons dry mustard
1/3 cup lemon juice
3 garlic cloves, minced
1/2 cup vegetable oil
1 tablespoon cayenne
1 pinch dry chile
pepper
rosemary (optional)
thyme, optoinal

Steps:

  • combine All ingredients
  • put steak in a baggie or glass dish - turn meat occasionally to ensure even marinating.
  • pour marinade over - seal and refrigerate from 2 hours to overnight.
  • the longer you marinade the more absorbtion you get and the better the steak will taste.

MY BEST WINE MARINADE



My Best Wine Marinade image

I've used this for more than 20 years. After the mixture cools, I pour it into a ziplock bag and toss in the beef, squeezing out the air. After marinating, season meat as normal. 6/2001 update: I've used white wine in place of red to marinade pork ribs with an exceptional outcome. For ribs don't forget to remove silverskin (easy to do by pulling away with a paper towel) and season as usual. Apply a bbq or finishing sauce to complete in final minutes of cooking.
