Here's a multipurpose dish that is perfect for spring, but can also highlight other seasons. It comes from Dan Kluger at Loring Place in Greenwich Village. He made it in winter, studded with squash and mushrooms. For spring, he scattered pickled ramps, favas and spring onions on top. But he said that other seasonal vegetables like artichokes, peas, morel mushrooms and asparagus could be used. As summer rolls in, there will be a different cast of characters to consider, like zucchini, cherry tomatoes and peppers. The dish works as a first course for four or a lunch dish for two, and could even replace salad and cheeses at a more elaborate dinner.

Number Of Ingredients 15

4 medium-thick asparagus, ends snapped, slant-cut in 1-inch pieces
1 ounce fresh mushrooms, preferably morels or oyster mushrooms, separated in pieces
1 1/2 tablespoons extra-virgin olive oil
12 ounces whole-milk ricotta cheese
1/2 ounce grated Parmigiano-Reggiano (about 1/3 cup)
3 tablespoons shredded mozzarella
1/2 tablespoon fresh oregano leaves
1 large egg plus 1 yolk
Salt and ground black pepper
2 tablespoons pesto
4 freshly cooked, canned or frozen baby artichoke hearts, quartered
2 scallions, trimmed and minced
1 teaspoon fresh mint leaves, in chiffonade
4 slices sourdough or multigrain bread
1 clove garlic

Steps:

  • Bring a small saucepan of water to a boil, add the asparagus and blanch 5 minutes. Drain and set aside. Toss mushrooms with 2 teaspoons of the oil and sear in a small skillet over medium heat until softened, about 5 minutes. Set aside.
  • Grease a 9-inch cast iron skillet with 1 teaspoon oil. Place ricotta in a bowl. Fold in the Parmesan, mozzarella, oregano, egg and egg yolk. Season with salt and pepper. Spread in the cast-iron skillet. Gently swirl in the pesto, leaving streaks of it.
  • Heat a broiler. Place the cast-iron skillet on a burner turned to low and let cook about 10 minutes, until heated through and showing signs of browning along the edges. Remove from heat. Scatter the asparagus, mushrooms and artichokes on top. Sprinkle with scallions and mint. Place under the broiler close to the source of heat until it starts to become lightly dappled, about 6 minutes.
  • Meanwhile grill or toast the bread. Brush with the remaining 1 1/2 teaspoon olive oil and rub with garlic. Serve the cheese and vegetables directly from the skillet, with grilled bread alongside.

SAUSAGE AND BUTTERNUT RIGGIES

One 10-ounce box frozen butternut squash puree
1 pound rigatoni with lines
Kosher salt
1 tablespoon EVOO
1 pound bulk sweet Italian sausage
3 to 4 cloves garlic, finely chopped
1 onion, finely chopped
2 tablespoons chopped fresh thyme
1/2 cup white wine
4 tablespoons butter
3 tablespoons flour
2 1/2 cups milk
Freshly ground black pepper
Freshly grated nutmeg
2 cups sharp yellow Cheddar
1 cup shredded Pecorino Romano cheese
Flat leaf parsley, chopped
Fennel and Celery Slaw, for serving, recipe follows
2 tablespoons honey
2 tablespoons white balsamic vinegar
1 tablespoon grated shallot
Juice of 1 lemon
1/3 cup EVOO
1 cup coarsely chopped parsley tops
4 ribs celery and leafy tops, very thinly sliced
1 large or 2 medium bulbs fennel, very thinly sliced, plus a handful of fronds, chopped
Kosher salt and freshly ground pepper

Toasted pistachios or walnuts, chopped, to garnish

Steps:

  • Defrost the squash puree in a microwave and place in a strainer to drain.
  • Cook the pasta in boiling salted water to al dente, 7 to 8 minutes.
  • Meanwhile, heat the EVOO in a large skillet over medium-high heat. Add the sausage to the skillet, crumble and brown. Add the garlic, onions and thyme and cook until tender, 5 to 6 minutes. Deglaze the pan with the white wine.
  • Preheat the broiler with a rack in the upper third of the oven.
  • Melt the butter in a medium sauce pot over medium heat. Whisk in the flour for 1 minute. Whisk in the milk and season with salt, pepper and nutmeg and thicken to coat a spoon. Stir in the butternut squash and bring the sauce back to a bubble and melt in the Cheddar.
  • Toss the pasta, sauce and sausage to combine. Top with the Pecorino Romano and parsley and broil to brown, 1 to 2 minutes. Serve with the Fennel and Celery Slaw.
  • Combine the honey, vinegar and shallot with the lemon juice and whisk in the EVOO. Add the parsley, celery and fennel and toss to coat and combine. Season with salt and pepper. Arrange on a platter and top with the toasted nuts.

2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon dried oregano
2 pounds boneless skinless chicken breasts, cubed
SAUCE:
2 tablespoons butter
1 each medium sweet red and green pepper, chopped
4 pickled hot cherry peppers, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 cup dry sherry
2 cans (one 29 ounces, one 15 ounces) tomato puree
1/4 teaspoon salt
1/8 teaspoon pepper
2 packages (16 ounces each) uncooked rigatoni
1-1/2 cups heavy whipping cream
6 ounces cream cheese, cut up
1-1/2 cups grated Romano cheese

Steps:

  • In a large bowl or dish, combine sherry, oil, garlic and oregano. Add chicken and turn to coat. Refrigerate 1 hour., Drain chicken, discarding marinade. Heat a Dutch oven over medium-high heat. Add chicken in batches; cook and stir until no longer pink. Remove from pan., In same pan, heat butter over medium-high heat. Add peppers, onion and garlic; cook and stir until tender. Add sherry; bring to a boil. Stir in tomato puree, salt and pepper; return to a boil. Reduce heat; simmer 8-10 minutes or until slightly thickened, stirring occasionally. Add chicken; heat through., Meanwhile, in a stockpot, cook rigatoni according to package directions. In a small saucepan, combine cream and cream cheese over medium heat; cook and stir until blended. Add to chicken mixture; stir in Romano cheese., Drain rigatoni; return to stockpot. Add sauce to pasta; toss to combine.

1 (16 ounce) package rigatoni pasta
3 tablespoons extra-virgin olive oil
1 ½ pounds skinless, boneless chicken breast, cut in bite-sized pieces
salt and ground black pepper to taste
1 onion, diced
2 Cubanelle peppers, seeded and thinly sliced
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
3 roasted red peppers, drained and chopped
2 hot cherry peppers, seeded and minced
½ cup heavy cream
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Add rigatoni pasta and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and keep warm.
  • Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, and cook in the hot oil until lightly browned on all sides, and no longer pink in the center, about 7 minutes. Remove the chicken from the skillet and keep warm.
  • Stir onion, Cubanelle peppers, and garlic into the skillet. Cook and stir until onion softens, about 4 minutes. Add crushed tomatoes, roasted red peppers, and hot cherry peppers. Bring to a simmer. Stir in cooked chicken and heavy cream; simmer for 2 to 3 minutes. Stir in cooked pasta.
  • Serve garnished with Parmesan cheese.

  • Start by whipping up a batch of homemade ricotta by lining a fine mesh sieve with three or four layers of cheesecloth and set it over a large bowl. In a large saucepan, slowly bring the milk, cream, and salt to 200 degrees Fahrenheit over medium heat, stirring occasionally to avoid burning or boil over.
  • When the mixture reaches 200 degrees Fahrenheit, remove it from the heat, add the lemon juice, and stir to combine. Allow this to sit undisturbed for 10 minutes. The curds and whey should be well separated at this point. If not, just let the mixture sit for another five minutes or so.
  • Gently pour the curds and whey through your prepared cheesecloth lined sieve and allow the ricotta to drain for 20–45 minutes or until your cheese is at the desired consistency.
  • While your ricotta is draining, preheat your oven to 425 degrees Fahrenheit. Toss your zucchini, bell pepper, asparagus, and cherry tomatoes with the olive oil and balsamic vinegar onto a large rimmed baking sheet and season with salt and pepper. Roast until tender and caramelized, around 25–30 minutes, stirring halfway through cooking. Remove the vegetables from the oven and immediately stir in the minced garlic and allow it to sit on the hot pan with the vegetables for a few minutes.
