Time 2h50m

Yield 1 large (18-inch) pizza

Number Of Ingredients 13

16 ounces dairy-free vegan cheese
Cornmeal, for dusting
Whole-Wheat Crust, recipe follows
1 jar pizza sauce (recommended: Muir Glen Organic Sauce)
3 red bell peppers, stemmed, seeded, and cut into large chunks
1 orange bell pepper, stemmed, seeded, and cut into large chunks
2 medium red onions, cut into large chunks
4 portobello mushroom caps, cut into large chunks

Transfer dough to a pizza stone or rimless pan large enough to hold it.

  • Bake for approximately 20 minutes, or until golden brown and bubbly. Serve hot.
  • Sift the flours together in a medium sized bowl. Place the yeast in a separate bowl and pour the warm water over it; let stand for about 5 minutes. Combine all ingredients in the bowl of a stand mixer with the dough hook attachment, mixing for approximately 5 minutes. Set the dough aside to rise for approximately 2 hours.
  • Once the dough has risen, roll out the dough to a circle that is approximately 1/2-inch thick and about 18 inches in diameter.

ULTIMATE VEGGIE PIZZA

Ultimate Veggie Pizza image

Make the BEST veggie pizza at home! This mouthwatering vegetarian pizza recipe features fresh cherry tomatoes, bell peppers, artichoke, spinach and more. Recipe yields two 11-inch pizzas or 1 large (about 6 to 8 servings).

Provided by Cookie and Kate

Categories     Entree

Time 45m

Number Of Ingredients 11

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
1 cup pizza sauce or marinara
2 cups baby spinach
2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
1/2 cup jarred or canned artichoke, cut into 1" pieces
1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
1/2 cup red onion, cut into thin wedges
1/2 cup halved cherry tomatoes
1/2 cup pitted Kalamata olives, halved lengthwise
1/2 cup sliced almonds (optional)
Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

Steps:

  • Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it on the upper rack. Prepare dough through step 5.
  • Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (use all three cups if you want a cheesy pizza as shown here).
  • Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it).
  • Transfer pizzas to a cutting board and sprinkle with with fresh basil, red pepper flakes and Parmesan, if using. Slice and serve! Leftover pizza keeps well in the refrigerator for 4 days, or for several months in the freezer.

TODDLER RECIPE: HOMEMADE PIZZA WITH VEGGIE FACES

Toddler recipe: homemade pizza with veggie faces image

Here's a toddler recipe to keep little bellies full and hands busy. They can decorate these pizzas themselves and pack in four of their five-a-day

Provided by Caroline Hire - Food writer

Categories     Breads

Time 40m

Yield Makes 4 pizzas

Number Of Ingredients 15

150g wholemeal spelt flour
350g strong white flour
1 ½ tsp dried fast action yeast
½ tsp salt
1 tbsp olive oil
1 can chopped tomatoes
1 small garlic clove
pinch of dried thyme
160g grated cheddar and mozzarella cheese
1 red pepper , cut into strips
1 yellow pepper , cut into strips
1 courgette , cut into rounds or spiralized
1 small pack cherry tomatoes , halved
handful pitted olives
1 can salt-free sweetcorn , drained

Steps:

  • To make the dough, put both flours into a large bowl, then stir in the yeast and salt. Make a well, pour in 400ml warm water and the olive oil and mix with a wooden spoon until you have a soft, fairly wet dough. Bring together with a light knead in the bowl then turn onto a lightly floured surface and knead for 5 mins until smooth. Cover with a tea towel and set aside. Leave the dough to rise if you have time but it's not essential for a thin crust.
  • To make the sauce, blitz the tomatoes, garlic and thyme and a little seasoning, either in a food processor or using a hand blender.
  • Heat oven to 240C/fan 220C/gas 8. Get the toppings ready in bowls so that your children can decorate their own.
  • If the dough has had time to rise, give it a little knead in the bowl, then split into four balls. On a floured surface, roll out two of the balls into wide circles using a rolling pin. The dough needs to be very thin as it will rise in the oven. Lift these onto two floured baking sheets or pizza trays.
  • Smooth sauce over bases with a spoon. Scatter with cheese, then start making the faces. Courgette rounds make great eyes or cheeks, halved courgette rounds can be used for ears and spiralised courgette for hair. Strips of pepper are good for eyebrows and mouths while olives and halved cherry tomatoes make great eyes or earrings. Sweetcorn can be used for teeth or freckles. Let their imagination go wild.
  • Cook for around 10-15 mins until crisp. You'll want to swap the pizzas to a lower shelf halfway through the cooking time.
  • Repeat for the second two pizzas or freeze the balls of dough in two separate freezer bags, plus any remaining sauce in a sealed container.

CHEAP-AS-CHIPS VEGGIE PIZZA

Cheap-as-chips veggie pizza image

This quick, budget take on classic spinach and egg 'florentine' pizza uses flatbreads instead of traditional dough

Provided by Lucy Netherton

Categories     Dinner, Main course

Time 40m

Yield Makes 5

Number Of Ingredients 9

200g carton passata
pack of 5 large Middle Eastern flatbreads
½ x 750g bag frozen spinach , defrosted
1 garlic clove , chopped
3 balls mozzarella , patted dry and torn
5 medium eggs
freshly grated nutmeg
small bunch basil
shaved parmesan (or vegetarian alternative), to serve

Steps:

  • Heat the oven to as high as it will go. Spread 1-2 tbsp of passata over each flatbread. Squeeze as much water as you can from the spinach (this will prevent your pizzas from being soggy), then scatter on top, leaving a gap in the centre. Divide the garlic and mozzarella between the pizzas, seasoning generously as you go.
  • You will probably only be able to bake 2 pizzas at a time. So put 2 on a baking tray, carefully crack an egg into the middle of each, and season with nutmeg and some of the basil. Bake for 7 mins until the cheese has melted and the egg is cooked to your liking.
  • Repeat with the remaining pizzas and ingredients. Serve, garnished with a little more basil and some Parmesan. Cut into slices and share between everyone.

Provided by Bird

Categories     Main Dish Recipes     Pizza Recipes

Time 2h25m

Yield 6

Number Of Ingredients 21

2 teaspoons active dry yeast
1 cup warm water
3 cups all-purpose flour
1 tablespoon white sugar
1 tablespoon dried oregano
1 teaspoon salt
1 egg
1 tablespoon extra-virgin olive oil
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
½ small onion, chopped
1 tablespoon dried oregano
1 clove garlic, finely chopped
1 teaspoon onion powder
1 teaspoon kosher salt
1 pinch ground black pepper
1 ¼ cups shredded mozzarella cheese
½ cup chopped green bell pepper
½ cup chopped onion
½ cup sliced fresh mushrooms
¼ cup shredded mozzarella cheese

Steps:

  • Sprinkle yeast over warm water in a small bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until yeast softens and begins to form a creamy foam.
  • Sift flour, sugar, 1 tablespoon oregano, and 1 teaspoon salt into a large bowl. Mix egg and oil into dry ingredients; stir in yeast mixture. When dough has pulled together, turn out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, then place dough in bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour.
  • Preheat oven to 450 degrees F (235 degrees C). Lightly grease a baking sheet.
  • Cook and stir diced tomatoes, tomato paste, onion, 1 tablespoon oregano, garlic, onion powder, 1 teaspoon salt, and pepper in a saucepan over medium heat. Cook until sauce has thickened, 15 to 20 minutes.
  • Punch down dough and turn it out onto a lightly floured surface. Use a knife to divide dough into two equal pieces--do not tear. Shape dough into rounds and let rest for 10 minutes. Form dough into rectangles, and place onto prepared baking sheet. Spoon tomato sauce over dough. Sprinkle with 1 1/4 cup mozzarella cheese; top with bell pepper, onion, and mushroom. Sprinkle 1/4 cup mozzarella cheese over top.
  • Bake in preheated oven until crust is browned and crisp and cheese has melted, 20 to 25 minutes.

Simple and tasty vegetarian pizza

Steps:

  • I use a food processor to make the dough. Place the flour and salt in first then give it a whizz, add the dried yeast and sugar, mix while adding the olive oil first then the warm water. Continue mixing until a soft dough is formed. If you use a food processor you don't need to knead by hand. But if you do it by hand pop the ingredients into a large bowl and mix, then turn out and knead for about 10 mins.
  • Place dough in an oiled polythene food bag allowing space for the dough to double in size. Place in a warm place and leave to rise for about 1 hour.
  • Once risen remove from bag place on floured surface and knock back. Then roll out to your required thickness. The dough is enough to make one 12inch round pizza. You can either flour the tin or use baking parchment to line.Place the rolled out dough onto the tin and prick with a fork to stop it rising too much.
  • Mix all of the sauce ingredients together in a bowl and spread on top of the dough. Sprinkle with grated cheese and add your chosen topping then finally sprinkle the basil and oregano on top.
  • Place in a preheated oven on gas mark 6 to7. Cook for about 20 mins or until golden and crisp around the edges.
  • Remove from tin, slice and serve.

  • Mushrooms, Garlic and Mint Pizza. Meaty and flavorful mushrooms pair extremely well with cheese and sauce. Cook the mushrooms first to bring out their flavors and to avoid soggy pizza dough from the mushrooms' moisture.
  • Sun-Dried Tomatoes Pizza. Packed with flavor, sun-dried tomatoes have a concentrated sweet and savory kick that is hard to resist. This pizza calls for lavash, a type of flatbread that is soft and fluffy.
  • Egg and Sweet Potato Pizza. Perfectly baked right on top of the pizza dough, eggs add a richness that can't be beaten. Cubed and pureed sweet potatoes and Gouda cheese make a base for the eggs to be cooked in while the pizza bakes.
  • Goat Cheese Pizza. A tomato-less pie filled with greens isn't your everyday pizza pie. Instead of tomatoes, there's a creamy base made from goat cheese, olive oil, milk or cream, dried oregano, salt, and ground black pepper.
  • Pesto. For a Greek and Italian-inspired pizza, use pesto and feta cheese as the base. Top with artichokes, sun-dried tomatoes, and olives, for a quick and flavorful pizza.
  • Asparagus Pizza. Spring is the best time to enjoy asparagus and it's a wonderful pizza topping. In this asparagus pizza recipe, it's paired with baby arugula for a delicious and healthy seasonal dinner.
  • Grilled Eggplant. Eggplant is a nightshade vegetable (well, it's actually a berry) that is a great substitute for meat in vegan and vegetarian dishes thanks to its meaty texture.
  • Grilled Pumpkin Pizza. If you have the chance to make this pizza on a grill this is a total treat. However, baking a regular crust in the oven isn't too far from perfect, so choose your preferred cooking method and roll up your sleeves.
  • Fugazza. Fugazza is an Argentinian-style pizza that has no cheese. A focaccia-type crust is topped with sauteed onions and oregano. But Fugazzetta does have tons of cheese.
  • Figs. Fresh figs make for a surprisingly good pizza topping, especially when combined with a sharp cheese like Manchego or Parmesan and peppery arugula.
