Grandma's Cranberry-Orange Gelatin Salad image

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

1 (6 ounce) package raspberry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped celery
1 cup chopped pecans
1 teaspoon orange zest
1 (4 ounce) package cream cheese, softened
½ cup whipped topping

Steps:

  • Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
  • Chill in the refrigerator overnight, or up to 8 hours.
  • To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

4 envelopes (1/4 ounce each) unflavored gelatin
3 cups cranberry-juice cocktail
3/4 cup sugar
6 oranges, separated into segments, 1/2 cup juice reserved

Steps:

  • In a small saucepan, sprinkle gelatin over 1 cup cranberry juice. Set aside to soften, 5 minutes. Place over low heat until gelatin has dissolved, 4 to 5 minutes. Add sugar; stir gently until dissolved (rub mixture between your fingers to make sure it's smooth), 2 to 3 minutes. Remove from heat.
  • Transfer gelatin mixture to a medium bowl; stir in orange juice and remaining 2 cups cranberry juice. Skim any foam from surface, and refrigerate until just thick enough to hold a line drawn by your finger, 30 to 40 minutes.
  • Arrange orange segments in the bottom of a 1 1/2- to 2-quart gelatin mold or Bundt pan; pour gelatin mixture over oranges. Refrigerate until firm, at least 2 hours.
  • To unmold, dip bottom of mold briefly in hot water, invert onto a plate, and shake firmly to release.

1 teaspoon unflavored gelatin
1 tablespoon plus 1 cup cold water, divided
1 cup boiling water
1 package (3 ounces) raspberry gelatin
3 cups (12 ounces) fresh or thawed frozen cranberries, divided
2 medium apples, cut into wedges
1 medium navel orange, peeled
1 cup sugar
1/2 cup chopped walnuts
1/2 cup finely chopped celery

Steps:

  • Sprinkle unflavored gelatin over 1 tablespoon cold water; let stand 1 minute. Add boiling water and raspberry gelatin; stir until gelatin is dissolved, about 2 minutes. Stir in remaining cold water. Refrigerate until thickened, about 45 minutes., Pulse 2-1/3 cups cranberries, apples and orange in a food processor until chopped. Transfer to a small bowl; stir in sugar. Stir fruit mixture into thickened gelatin. 1/2 5.2 ounce vanilla pudding mix
4 cups cold water
20 ounces crushed pineapple
11 ounce mandarin oranges
14 canned whole cranberry sauce
8 ounces cool whip
8 ounces mini marshmallows

Steps:

  • Combine Jello and Pudding Mixes with water and bring to a boil.
  • Once it boils, mix until everything is dissolved.
  • Stir in crushed pineapple, mandarin oranges and cranberry sauce.
  • Pour into a 9x13 glass dish, cover, and place in the fridge until set (about four hours).
  • After it has set, break up the Jello and mix with cool whip and mini marshmallows.

1 unpeeled medium red apple
1 package (3 ounces) raspberry gelatin
1-1/3 cups boiling water
1 can (20 ounces) crushed pineapple, undrained
1/2 cup chopped walnuts

Steps:

  • Slice the orange into eighths; finely chop in a food processor. Add cranberries and process until chopped. Slice apple into eighths; add to orange mixture and process until chopped. 3 ounces lemon gelatin
1 orange, quartered with peel
1 1/2 cups fresh cranberries
1 cup sugar
1 pinch salt
1/2 cup pecans

Steps:

  • Put boiling water into blender, add lemon gelatin and blend 20 seconds.
  • Add orange, cranberries, sugar, salt and blend again until ingredients are finely chopped.
  • Add in pecans and pulse until coarsely chopped.
  • Pour into mold and place in refrigerator until set.
  • Note: This recipe has been our family for decades, and the last time my mother tried to make it, it didn't set. Prevailing opinion at the time was that perhaps she bought the wrong size of gelatin or that the formula of the gelatin had changed. At any rate, I copied this from a tattered recipe card that didn't specify size of box. It might be more firm if you also add in some unflavored gelatin in step 1. Good luck! Next time I try this I will modify the recipe, but if you do, by all means, comment away!
