Steps:
- Mix ingredients for the marinade in a large bowl. Add shrimp and toss to coat. If desired, allow to marinate in refrigerator for up to 4 hours. It's not necessary, but obviously the shrimp will be more saturated with the marinade.
- Heat 2 tablespoons of oil on medium in a large cast iron skillet [wok or non-stick skillets will work, too]. Add green onion and sauté until soft.
- Add shrimp and cook for 4-6 minutes until shrimp are cooked through. They should look white and start to curl up. Don't overcook - they will become rubbery and tough.

THAI FRIED RICE RECIPE WITH SHRIMP (KHAO PAD GOONG ข้าวผัดกุ้ง)
Thai fried rice with shrimp (khao pad goong ข้าวผัดกุ้ง), is a very typical Thai street food dish, available at all stir fry restaurants. Though you can order the dish with your choice of meat, shrimp is the most popular option. What really makes Thai fried rice unique, is that it's served with a squeeze of lime on top to give it a nice sour tinge, and always accompanied by prik nam pla (พริกน้ำปลา), the Thai condiment of chilies and fish sauce. Steps:
- If you're using whole fresh shrimp like I did, first pinch off the head, and peel the outer shell of the shrimp, leaving only the tail on (that's Thai style). You can also devein them if you'd like, but for small shrimp, to me it doesn't really matter.
- Peel 2 cloves of garlic, and then just finely mince them
- Slice ¼ of a sweet white onion into medium sized strips
- Finely dice about 3 - 4 green onions
- Take just 1 leaf of Chinese broccoli (kai-lan), slice it in half first along the spine, and then slice it into 1 centimeter sized strips
- Turn on your stove to medium high, heat up your wok (or frying pan), and add about 1 tablespoon of oil
- Once your oil is hot, add the garlic first, and stir fry continuously for about 15 seconds or so, until it gets nice and fragrant
- Next, toss in your shrimp, and fry for about 30 seconds - your shrimp should start to turn pink and feel more firm
- Add in a little less than ½ of your rice first. This is going to soak up all those delicious shrimp juices and oils and keep your rice nice and dry. Stir fry for about 10 more seconds - This is a little known trick to make good rice, so it remains nice and dry
- Scoot all your rice to one side of the pan, and then crack in the egg into the empty side
- Whirl the egg up, let it cook for a few seconds, and then start to mix it up with the rice and shrimp
- Keep stir frying for about 20 seconds until the egg is fully cooked, and then add in the rest of your rice, and give it a quick stir
- Add ½ tablespoon of soy sauce, ½ tablespoon of oyster sauce, just a pinch of sugar (optional), and continue stir frying your rice, making sure all the sauce get mixed in
- Then add your chopped Chinese broccoli and onions, and stir fry for another 30 seconds until the vegetables wilt, but they can still be crisp and not fully cooked
- Lastly, toss in your green onions, stir it a few more seconds, and it's ready
- Immediately dish your fried rice onto a plate
- Slice off a wedge of lime, and serve it on the plate next to the rice
- For the final touch, I like to sprinkle some freshly ground black pepper on top to give some extra flavor
- Add 3 tablespoons of fish sauce to a small bowl
- Slice about 5 Thai chilies (you can add more or less, up to you), and add them to the fish sauce
- Finally, I like it with a little squeeze of about ½ of a lime - but this is optional - and at many Thai restaurants it's only fish sauce and chilies
- That's is, give it a stir, and set it aside
EASY STIR-FRIED THAI GARLIC SHRIMP
Steps:
- Gather the ingredients.
- In a bowl, combine oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, and chili pepper. Stir until the sugar has dissolved.
- Place shrimp in the marinade and stir well to coat.
- In a wok or frying pan, heat the oil over medium-high heat. Once hot, add the shrimp along with the marinade.
- Stir-fry for 2 to 3 minutes or until the shrimp are plump and pink. They will also be lightly browned from the sauce. Avoid overcooking or the shrimp will turn rubbery.
- Test the sauce for taste and adjust as needed to achieve a salty-sweet balance. Add more sugar if it's too sour. If it's too salty or sweet, add more lime juice.
- Top the shrimp with coriander and add some lemon slices on the side. Enjoy!

SPICY THAI SHRIMP SALAD
From Rachel Cooks Thai blog. She reiterates that slicing the shallots, red onion and Thai peppers very thin ensures the vegetables don't end up in your mouth in isolation. The lemongrass must be sliced paper thin, using only the most tender bottom of the stalk to eliminate tough stems. Prepare the greens then serve with the shrimp hot off the grill. The salty, sweet, tangy and spicy dressing ties the salad together

Steps:
- Combine the sauce ingredients and whisk until well incorporated; set aside.
- Prepare the vegetables. The thick outer layers of the lemongrass should be peeled away and only the tender, bottom 1/3 of the stalk should be used. Slice the lemongrass, shallots, red onion and chili peppers very finely.
- Peel and devein the shrimp. Brush a bit of oil on both sides of the shrimp and grill until they're cooked through. This takes only a few minutes per side.
- Toss together vegetables in a bowl and pour over dressing, more or less to taste. Then add the grilled shrimp to the bowl while they are still hot and toss everything together. Serve immediately!

- Defrost (if using frozen) and rinse the shrimp meat. Dry thoroughly with paper towels. Keep cool on a plate in the fridge while you prep and gather the other ingredients. For the fresh ingredients, chop up the garlic, red and green chilies, kaffir lime leaves, and the light green snake been and set aside.
- Combine the shrimp meat, all the fresh ingredients, and all the sauces and seasonings in a food processor bowl. Cover and pulse until a smooth paste has formed. It should not be entirely liquid-like but a sticky mush instead.
- Line a medium sized tray with nonstick cooking paper/baking paper. Pour and spread the bread crumbs over the nonstick cooking paper. Rub about ½ TSP of oil on your hands and then proceed with rolling the shrimp cakes into even sized disc shaped patties that are about 2 & ½ inches in diameter. Line them up one by one on the bread crumbs. (PRO TIP: Do not coat the top part of the patties until you’ve finished forming all of them. Your hands will stick to the breadcrumbs if you do so when you go back to make the next one, you’ll end up rolling the breadcrumbs INTO the shrimp cakes, which is not what we’re going for!) Once you’ve formed all the patties and have no more shrimp paste left, rinse your hands with water (scrub with a steel wool sponge if needed) and sprinkle the top parts and sides of the shrimp patties with the bread crumbs on the tray until they’re fully coated.
- Heat the oil in a deep frying vessel such as a pot or Dutch oven over high heat. Once the oil is hot, turn the heat down to medium-low and gently add 2 to 3 shrimp cakes at a time. Be careful not to overcrowd the vessel since the shrimp cakes will puff up as they fry. Cook for 3-4 minutes or until golden brown, flipping once or twice with a metal slotted spoon while frying. Remove to a plate lined with paper towels to drain off the excess oil.

- Prepare the shrimp by shelling and cleaning them well. In Thailand you will often get them with the heads on, but here I have removed them. Any size is fine and you can add more shrimp if using smaller ones.
- Depending on what size you have, you'll need 1 or 2 ordinary ramen noodle squares. The plain ones are better for a more authentic flavor. Discard the seasoning pack for making soup, or save it to season something else another time.
- It's important to use the right basil when you make a Thai chili and basil stir fry. Our name for the dish is Pad Kraprow, and we use our basil called Bai Kraprow.
- I usually use between 2 - 4 Thai hot chilies with a couple of large garlic cloves, but you can adjust the amount of chili to your own tastes. If you leave the chili out it will still be delicious, but in Thailand this dish is usually made very spicy.
- Pluck the leaves and flower tops from the basil until you have at least a cup or more. The more basil you add, the more flavorful your noodles will be.
- Split the baby corn ears into long, thin strips. Cut the green beans into 2 inch pieces, and the onion into thick slices.
- Boil a big pot of water so the noodles float and cook freely. As soon as they loosen up and cook a little, about a minute, drain the water and replace it with cool water to stop them from cooking.
- The noodles should be a little firm so they don't fall apart when you fry them. Drain the water away and let them dry well.
- Heat the oil in a wok or large pan over low flame. Fry the garlic and chili lightly until fragrant, for about 30 seconds.
