SPICY THAI CHICKEN AND VEGGIE NOODLES

This Spicy Thai Chicken and Veggie Noodles is super quick to prepare and ready in just 30 minutes from start to finish! The best and easiest way to make Thai style noodles, loaded with veggies and chicken. Perfect for a busy weeknight!

12 ounce Asian style noodles (like rice noodles)
1 tablespoon sesame oil
6 ounce mushrooms (cleaned and sliced, I used cremini mushrooms)
1 red bell pepper (sliced)
1 green bell pepper (sliced)
4 cloves garlic (minced)
2 cups chicken breast (cooked , cut in small pieces)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
4 green onions (chopped)
1/4 cup peanuts (chopped)
1 cup chicken broth (low sodium)
1/2 cup soy sauce (low sodium)
3 tablespoon brown sugar
1 tablespoon Sriracha sauce (or any other hot sauce)
1 teaspoon red chili paste
1 teaspoon ginger (minced)

Steps:

  • Cook noodles: Cook the Asian style noodles according to package directions.
  • Make the sauce: Whisk all the sauce ingredients together in a medium size bowl and set aside.
  • Saute the veggies: Heat the sesame oil in a skillet over medium-high heat. Add the sliced mushrooms to the skillet and cook for about 5 minutes or until the mushrooms begin to brown, stirring them occasionally. Once the mushrooms have browned, add the sliced peppers and garlic and cook for an additional 3 minutes until the peppers begin to soften.
  • Finish the noodles: Add the chopped chicken to the skillet and toss everything together, then pour the sauce and stir. Cook for 2 more minutes until the sauce comes to a boil. At this time you can taste and season with salt and pepper if needed. Add cooked noodles and toss everything together. The noodles will absorb all the extra sauce.
  • Garnish and serve: Garnish with chopped green onions and peanuts.

This creamy, spicy chicken soup is reminiscent of tom ka gai but a bit heartier due to the addition of rice noodles. In lieu of lemongrass, makrut lime leaves, galangal and chiles, green curry paste is used to flavor the coconut milk-infused broth.

2 tablespoons unsalted butter, softened
3 garlic cloves; 2 chopped, 1 crushed
4 teaspoons Thai green curry paste (available in the international aisle)
4 teaspoons finely chopped peeled ginger
Grated zest and juice of 3 limes
4 skin-on, bone-in chicken breasts (2 to 2 1/2 pounds)
Kosher salt
1 tablespoon vegetable oil
1 pound carrots
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F. Place a rack in a roasting pan. Mix the butter, chopped garlic, curry paste, 3 teaspoons ginger, the zest of 2 limes and the juice of 1 lime in a bowl.
  • Season the chicken with salt. Loosen the skin and rub the curry butter underneath. Place skin-side up on the rack and pour about 1/2 cup water into the pan. Roast until the chicken is cooked through and the skin is crisp, 20 to 25 minutes.
  • Meanwhile, mix the crushed garlic with the remaining 1 teaspoon ginger, the zest of 1 lime and juice of 2 limes. Whisk in the vegetable oil. Shave the carrots into ribbons with a vegetable peeler and toss with the dressing. Add the cilantro and 1/2 teaspoon salt and toss. Serve the chicken with the carrot-ginger salad.

1 1/2 pounds chicken legs, separated into drumsticks and thighs, skin removed
Salt to taste
2 tablespoons vegetable oil
1 cup minced onion
5 cloves garlic, peeled
1 tablespoon grated gingerroot
1 cup sliced carrots
1 cup 1-inch pieces red bell pepper
1 cup sliced mushrooms
1 to 2 teaspoons red curry paste, or to taste
2 (14-ounce) cans 'light' unsweetened coconut milk
1/2 teaspoon galanga root powder
1/2 teaspoon dried lemongrass flakes
1 teaspoon ground cumin
1 bay leaf
1 cup broccoli florets
1/2 cup canned bamboo shoots, drained
1/2 cup canned water chestnuts, drained
8 ears canned baby corn, drained
Fresh lemon juice, to taste
1/4 cup minced fresh cilantro
1/4 cup minced fresh mint

Steps:

  • Pat the chicken dry and season with salt. In a casserole set over moderately high heat, warm the oil until it is hot, add the chicken and cook it, turning, until no longer pink. Transfer chicken to a plate. Add the onion to the casserole and cook it, stirring occasionally, for 3 minutes. Add the garlic and gingerroot and cook, stirring, 1 minute. Add the carrots, bell pepper, mushrooms, and salt to taste, and cook the mixture, stirring occasionally, for 5 minutes more. Return the chicken to the pan, add the curry paste and cook the mixture, turning and stirring, 1 minute. Add the coconut milk, galanga root powder, lemongrass flakes, cumin, and bay leaf. Bring mixture to a boil, and simmer, stirring occasionally, for 20 minutes. Add the broccoli, bamboo shoots, water chestnuts, corn, and salt to taste, and simmer the mixture, stirring occasionally, for 10 minutes, or until chicken is cooked through. Discard bay leaf. Before serving, stir in the lemon juice, cilantro, and mint.

12 boneless, skinless chicken thighs

2 to 3 tablespoons EVOO
8 ounces ham steak, 1/4-inch dice
2 tablespoons butter
1 pound carrots, peeled and sliced 1/2-inch discs
1 fresh bay leaf
1/2 cup dry white wine
4 cloves garlic, sliced or chopped
4 leeks, trimmed, sliced 1-inch wide, washed and dried
2 to 3 cups chicken stock
1/4 cup chopped fresh tarragon and parsley combined
1/4 cup chopped fresh tarragon and parsley combined
Juice of 1/2 lemon
Crusty bread or baguette to pass at table

Steps:

  • Sprinkle the chicken with salt and pepper. Heat a large deep skillet or Dutch oven over medium-high heat with the EVOO. Brown the chicken in batches, and remove to a plate.
  • Add the ham to brown, then remove to a plate. Reduce the heat a bit, add the butter and when it foams, add the carrots, bay leaf and some salt and pepper. Cook partially covered for 5 minutes. Add the wine to deglaze the pan, then add in the garlic and leeks, cook for 2 minutes. Add the stock, then return the chicken and ham to the pot. Simmer partially covered to cook through and combine flavors, 30 minutes.
  • Cool completely and store in the refrigerator for a make-ahead meal.
  • To serve, reheat over medium heat, stir in the herbs and lemon juice. Pass bread at table.

1 tablespoon vegetable oil
1 pound ground chicken
1 thinly sliced red chile, such as jalapeno or red finger chile
1/4 cup freshly squeezed lime juice
3 tablespoons fish sauce
1 tablespoon palm sugar or light-brown sugar
1 cup loosely packed fresh cilantro leaves
1 cup loosely packed fresh mint leaves, torn if large
1/2 red onion, thinly sliced
Lettuce leaves, such as butter or iceberg, for serving
Sliced cucumber, for serving
Sliced carrots, for serving

Steps:

  • Heat a large skillet over medium heat. Add rice and toast, tossing, until golden brown; transfer rice to a small bowl and let cool. Transfer rice to a spice grinder; grind until coarsely ground. Set aside.
  • In a large skillet, heat vegetable oil over medium heat. Add ground chicken and cook, stirring, to break up large pieces, until chicken is cooked through, 4 to 5 minutes. Stir in chile. In a small bowl, whisk together lime juice, sugar, and fish sauce until sugar has dissolved; add to chicken mixture. Continue cooking for 1 minute more.
  • Remove from heat and stir in ground rice. Garnish with cilantro, mint, and red onion. Serve chicken in lettuce leaves with cucumber and carrots.

2 leeks, sliced

  • Place chicken breasts and broth in to a stockpot or Dutch oven. Bring to a boil and let simmer for about 20 minutes, or until chicken is cooked through. Remove the chicken from the broth and set aside to cool.
  • Put the leeks and carrots into the pot and simmer them for 10 minutes, or until tender. Shred the cooled chicken in to bite sized pieces and return it to the pot. Add the cabbage and egg noodles and cook another 5 minutes or until the noodles are soft. The soup should be thick like a stew. Serve hot and flavor to taste with Thai chili sauce.

1 large onion, chopped
2 large carrots, sliced
5 potatoes, peeled and cubed
about 2 cups water (more or less)
2 bay leaves
1 teaspoon thyme
1 teaspoon tarragon (preferably fresh)
2 teaspoons sweet paprika
1 can peeled tomatoes, chopped (400g can)
3 tablespoons whole wheat flour, dissolved separately in some cold water
1 tablespoon oil
sea salt and pepper
fresh parsley, for garnish

Steps:

  • Heat the oil in a large pot and add the chopped onion.
  • Sauté for a couple of minutes, then add cubed potatoes.
  • Cover potatoes with water (about 2-2 1/2 cups, maybe more depending on your pot size).
  • Add sliced carrots, bay leaves, tarragon, sweet paprika, thyme, salt and pepper.
  • Let it cook until the veggies are tender (about 20 minutes).
  • Add flour, dissolved separately in a cup with some cold water.
  • Add sliced, peeled tomatoes.
  • Stir and cook for another 5 minutes.
  • Serve with fresh parsley on top!
