14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, at room temperature
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture. Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

  • Drop by rounded teaspoons onto baking sheet. Lightly flatten each wit ha spoon.
  • Bake 15-17 minutes. Remove from pan (if you let them cool on pan they will stick).
  • To make macaroon kisses Prepare as directed and press a solid milk chocolate candy piece in the center of each cookie while still hot.

2/3 cup all-purpose flour
1/4 teaspoon kosher salt
14 ounces sweetened condensed milk
1/2 cup orange juice
1 to 2 ounces chopped pistachios, plus more for dipping
1 cup milk chocolate pistoles, melted for dipping
Juice and zest of 1 orange, for garnish
Juice and zest of 1 orange, for garnish

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large bowl, stir together the coconut, flour and salt. Stir in the condensed milk, orange juice and chopped pistachios until well combined.
  • Using a small scoop (about 1 tablespoon), scoop out the coconut batter onto 2 parchment-lined baking sheets. Be sure to press the tops down just a little so the centers can cook.
  • Bake until the coconut is toasted, 12 to 15 minutes. Allow to cool on the pans.
  • Dip the bottom of each cooled macaroon in the melted milk chocolate, and lightly roll in pistachios. Return to the baking sheets and let set. Squeeze fresh orange juice and sprinkle orange zest over the tops.

6 cups dried unsweetened coconut
2 1/4 cups sugar, divided
7 extra large egg whites, room temperature
1 pinch table salt
3 tablespoons mild honey
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
3 cups sweetened coconut

Steps:

  • Preheat oven 350 degrees F.
  • Line 3 cookie sheets with parchment paper.
  • Put unsweetened coconut in bowl of food processor fitted with steel blade and add 1 1/4 cups sugar.
  • Process until mixture is finely ground and well combined.
  • Put egg whites in the clean bowl of electric mixer.
  • Set the bowl in a skillet with 1 to 1 1/2 inces of hot water.
  • Place over low heat and beat constantly with a whisk until warm and frothy.
  • (This will happen almost immediately; be careful not to overheat, or the whites will cook).
  • Transfer the bowl to the electric mixer, which has been fitted with the whisk attachment.
  • Add the salt to the whites and beat at high speed until they become white and thick.
  • With the machine running, add remaining 1 cup sugar in a steady stream and continue to beat until thick and shiny.
  • Add the honey and both extracts and continue to beat until stiff (the mixture will look like thick, shiny melted marshmallows).
  • Remove the bowl from the machine and using a sturdy rubber spatula, fold in the ground coconut mixture and 2 1/2 cups sweetened shredded coconut.
  • Combine gently but thoroughly.
  • Using a medium-sized ice cream scoop, scoop macaroon batter onto prepared baking sheets, in 3 rows of 3 per sheet.
  • Using your fingers, place a good pinch of the sweetened premium shred coconut on top of each mound, spreading gently to cover.
  • To correct the shape of a mound, use your fingers to gently prop up and round the batter, which will be soft.
  • Position oven rack on the center shelf.
  • Place macaroons in oven and reduce temperature to 325 degrees F.
  • Bake for 23 to 25 minutes or until light golden brown on the outside but still visibly soft on the inside.
  • Let sheet sit on a wire rack for 5 to 10 minutes.
  • Use a thin metal spatula to transfer the cookies.

Steps:

  • HEAT oven to 325 degrees F. Line baking sheets with foil. Spray foil with flour no-stick cooking spray.
  • COMBINE sweetened condensed milk, egg white, coconut and vanilla and almond extracts in large bowl; mix well. Drop by rounded teaspoonfuls onto prepared baking sheets.

80g caster sugar
150g desiccated coconut
1 tsp vanilla paste
90g dark chocolate

Steps:

  • Whisk together the egg whites and caster sugar in a large bowl for 2-3 mins until light and frothy, and the sugar has dissolved. Add the coconut, a pinch of salt and the vanilla, then stir until combined. Leave to stand for 10 mins.
  • Heat the oven to 170C/150C fan/gas 3½. Line a baking sheet with baking parchment. Scoop teaspoonfuls of the mixture and roll into compact balls, then arrange on the prepared baking sheet. Bake for 10-12 mins until golden.
  • Leave on the baking sheet to cool completely. Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn't touch the water, or in short 20-second bursts in the microwave. Tip the melted chocolate into a small bowl, then dip the bottom of each cooled macaroon into the chocolate and wipe off any excess. Arrange on a sheet of baking parchment, chocolate-side up, then put in the fridge for 20 mins, or until set. You can use any remaining melted chocolate to pipe in zigzags over the top, if you like, then leave to set.

1/4 tsp salt
1 14 oz can sweetened condensed milk
1 egg white (beaten until frothy)
2 tsp pure vanilla extract
24 chocolate kisses (unwrapped)

Steps:

  • Preheat the oven to 350°F. Line 2 large baking sheets with a silicone baking mat or parchment paper.
  • In a medium size mixing bowl, mix together the coconut, flour and salt.
  • Add the sweetened condensed milk, beaten egg white and vanilla. Mix well. The mixture will be stiff.
  • Use a 1 1/2-2 tablespoon cookie or ice cream scoop to divide the cookie dough leaving at least 2 inches apart on the baking pan. Bake for 16-18 minutes or until golden. (You can also drop using a tablespoon.)
  • Remove from the oven and let stand on the pan for 1-2 minutes, then gently press a candy kiss into the center.

30 g range egg yolks
30 g sweet potato starch
1 teaspoon ginger juice
1 teaspoon apple cider vinegar
1 1/2 teaspoons vanilla extract
2 tablespoons orange juice
25 g coconut oil
2 pieces egg whites
40 g coconut flour
1 tablespoon coconut flakes
30 g dried prunes
20 g dark chocolate
1 tablespoon coconut milk

  • Preheat the oven to 350°F.
  • Beat yolks and erythritol until foamy.
  • Add in the sweet potato starch and keep on mixing well until creamy.
  • Keeping on mixing, add in the vanilla extract, apple cider vinegar, orange juice and a pinch of stevia, baking soda and sodium bicarbonate.
  • Add in the whites, mix well and lastly add in the coconut flour.
  • When the batter is smooth and rather solid, transfer it into a pastry bag.

1 (14 ounce) package sweetened, flaked coconut
⅓ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon vanilla extract
½ teaspoon almond extract
1 pinch salt
3 egg whites, room temperature
8 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line a baking sheet with parchment paper.
  • Blend coconut, sugar, flour, vanilla extract, almond extract, and salt in a food processor until combined, about 30 seconds.
  • Beat egg whites in a bowl until soft peaks form.
  • Fold coconut mixture into egg whites until just combined.
  • Wet your hands. Roll spoonfuls of coconut mixture between palms to golf ball-size cookies; arrange on the prepared baking sheet.
  • Bake cookies in the preheated oven until coconut is slightly golden and toasted, about 15 minutes. Transfer to a wire rack to cool, 30 minutes.
  • Line baking sheet with new piece of parchment paper.

3-4 sheets of rice paper
100g dessicated coconut
100g caster sugar
2 (medium-sized) egg whites
1tbsp plain plour
1 pinch of salt
1tsp vanilla extract
75g dark chocolate

Steps:

  • Preheat oven to 160C/fan.
  • Line a baking tray with greaseproof paper and then the rice paper
  • Mix the dessicated coconut, sugar, flour, salt, vanilla extract and egg whites togther in a bowl. The mixture should be 'gloopy' and sticky.
  • Spoon the mixture into rounded 'dollops' onto the rice paper and cook in the oven, on the middle shelf, for 14-16 minutes until the macaroons are lightly golden brown. Allow to cool.
  • Melt the dark chocolate over a bain-marie or in the microwave, then drizzle over the macaroons.

¼ teaspoon almond extract
1 ½ teaspoons vanilla extract
¼ teaspoon fine salt
1 large egg white
3 cups shredded unsweetened coconut
1 (4 ounce) bar semisweet chocolate, chopped, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine condensed milk, almond extract, vanilla extract, salt, and egg white in a bowl. Whisk until thoroughly combined. Add about 2 1/3 cups shredded coconut. Mix with a spatula until mixture is sticky and holds together. Form into balls using a sorbet scoop.
  • Roll balls in remaining coconut. Space macaroons evenly onto a silicone-lined baking sheet.
  • Bake in the preheated oven until golden, about 20 minutes. Let cool to room temperature, at least 20 minutes.
  • Meanwhile, place 3/4 of the chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and stir in the rest of the chocolate until it melts.
  • Dip the base of each cooled macaroon about 1/8 inch into the chocolate. Place cookies, chocolate-side down, on parchment paper. Let chocolate harden completely.

3 large egg whites
1/2 cup sugar
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1 14-ounce package sweetened shredded coconut

Steps:

  • Preheat the oven to 325 degrees F and line a baking sheet with parchment paper. Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined; fold in the coconut.
  • Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto the baking sheet. Use your fingers to form into pyramids. Bake until golden brown around the edges, 20 to 25 minutes. Let cool 10 minutes on the baking sheet, then transfer to a rack to cool completely.

These are some yummy cookies that my mom was able to get the recipe for from a cafeteria in Provo Utah. We were there for a wedding of a family member, and went to go get some cookies, and these were one of them. These are the best macaroons I have ever had, and you honestly can get a tummy ache if you eat too many. They are rich and satisfying, and wonderful with a cold tall glass of milk. You can also add a tsp of almond extract, if you like.

1 (18 1/4 ounce) package white cake mix
2 1/4 cups sweetened flaked coconut
1/2 cup butter, softened
2 eggs
18 raw almonds, optional but recommended (optional)

Steps:

  • Mix the first four ingredients on low speed for 1 1/2 minutes.
  • Stop and scrape bowl down, and mix again on low for another minute. Dough will be thick.
  • Put a scoop on greased baking sheet, press down with the back of a spoon, and place one almond on top in the middle.
  • Bake for 10-12 minutes, or until the edges are slightly brown.

And I know that most of the times, when you look for paleo desserts at the grocery store, you can only find treats that are mostly made with almond meal and therefore they are not suitable for those with nut allergies. Finding the perfect dessert that can suit everybody's allergies can be quite tough. As always, making your own paleo dessert recipes is the key to success.In this AIP Coconut Macaroon recipe you'll find all the most delicious, grain and dairy free ingredients, that marry each other in an explosion of flavor! You want a quick, fun fact to prove you how delicious these AIP Coconut Macaroon Kisses are?! Get this: the day I baked them I was in Cremona, Italy and I brought them to the pop up office my team rented for 2 weeks (yes, since we are digital, we can do this and lots of other cool things, but this is a different story ;) ... After they tried them, everybody's biggest complain was: "Why didn't you make more of them?! Do you think it's fair to tease us and only let us have a couple of pastries each?" Man, they were upset! ...But I can't say I wasn't flattered!! :)What Makes this Macaron Recipe Special? Coconut Flour & a Touch of Italy! I think what makes these grain free macaroons so special is the combination of the typical coconut treat with the Italian tradition of "Baci" (that in Italian means "kisses"). 30 g erythritol
30 g sweet potato starch
1 teaspoon ginger juice
1 teaspoon apple cider vinegar
1 1/2 teaspoons vanilla extract
20 g orange juice
25 g coconut oil
2 egg whites
1/2 teaspoon baking soda
40 g coconut flour
1 tablespoon coconut flakes
30 g dried prunes
20 g dark chocolate
1 tablespoon coconut milk

Steps:

  • Preheat the oven to 350°F.
  • Beat yolks and erythritol until foamy.
  • Add in the sweet potato starch and keep on mixing well until creamy.
  • Keeping on mixing, add in the vanilla extract, apple cider vinegar, orange juice and a pinch of stevia, baking soda and sodium bicarbonate.
  • Add in the whites, mix well and lastly add in the coconut flour.
  • When the batter is smooth and rather solid, transfer it into a pastry bag.
  • Line a baking pan with parchment paper and squeeze out dollops of batter on the pan, swirling the pastry bag around so you can give it a circular shape.
  • Sprinkle your AIP Coconut Macaroons with shredded coconut and bake for 18-20 minutes.
  • When the AIP Coconut Macaroons are ready, take them out of the oven, place them on a griddle and let them cool down while you prepare the Prune Chocolate Filling.
  • Blend the dried prunes together with the coconut milk until creamy.
  • Melt the dark chocolate over very low heat. When melted, add in the blended prunes and mix well until smooth.
  • Scoop a teaspoon of Prune & Chocolate Filling on the bottom of one of the AIP Macaroons and sandwich another one on top. Continue until finished and enjoy your amazing grain free dessert!

  • Preheat the oven to 350° and line 2 baking sheets with parchment paper. In a medium bowl, combine the coconut with the sweetened condensed milk and vanilla. In another bowl, using an electric mixer, beat the egg whites with the salt until firm peaks form. Fold the beaten whites into the coconut mixture.
  • Scoop tablespoon-size mounds of the mixture onto the baking sheets, about 1 inch apart. Bake in the upper and middle thirds of the oven for about 25 minutes, until golden; shift the sheets from top to bottom and front to back halfway through baking. Transfer the baking sheets to racks and let the cookies cool completely.
  • Dip the bottoms of the macaroons into the melted chocolate, letting any excess drip back into the bowl. Return the cookies to the lined baking sheets. Drizzle any remaining chocolate on top and refrigerate for about 5 minutes, until set.
