ASIAN CHICKEN THIGHS

Asian Chicken Thighs image

The thick, tangy sauce makes this dish one of my favorite Asian chicken recipes. Serve the chicken over long grain rice or with ramen noodle slaw. -Dave Farrington, Midwest City, Oklahoma

Number Of Ingredients 15

Reduce heat; simmer, uncovered, until chicken is tender, 30-35 minutes, turning chicken occasionally., In a small bowl, mix cornstarch and cold water until smooth; stir into pan. Bring to a boil; cook and stir until sauce is thickened, about 1 minute. Sprinkle with green onions. If desired, serve with rice. Freeze option: Cool chicken. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little water if necessary.

CHINESE-STYLE BAKED CHICKEN THIGHS

Chinese-Style Baked Chicken Thighs image

Chinese-Style Baked Chicken Thighs. Four simple ingredients transform chicken thighs into this easy and delicious dish.

Provided by LindySez

Categories     Main Course     Poultry

Time 32m

Number Of Ingredients 6

8 bone-in chicken thighs or legs and thighs combined
1 teaspoon 5-spice powder
Salt and pepper (to taste)
1/2 cup hoisin sauce ((I like Lee Kum Kee))
Toasted sesame seeds ((optional))
Thinly sliced green onion tops ((optional))

Steps:

  • Heat oven to 400º F. Line a cookie sheet with foil and spray with cooking spray or lightly oil.
  • Season the chicken thighs (with or without skin) with the 5-spice powder and salt and pepper. Brush with hoisin sauce and place in the oven.
  • Bake for 30 - 40 minutes, or until cooked through.
  • Sprinkle sesame seeds and sliced onion on top, if desired.
  • **UPDATE** - One of the best parts of this recipe, as written, is the crunchy crisp delicious skin- it's almost candy-like. But since we have been trying to eat leaner more often I've been playing with this recipe a bit to make it cook better without the skin. If going skinless, lower the oven temperature to 375º and use a pan that has at least a 1-inch rim about it. This keeps the meat much moister while allowing the sauce to cook on to the meat.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken

Time 7h2m

Yield 6

Number Of Ingredients 13

1 (5 pound) whole chicken, cut in half
½ lime, juiced
1 tablespoon fish sauce
3 cloves garlic, crushed
1 tablespoon seasoned rice vinegar
1 tablespoon Chinese five-spice powder
2 teaspoons hot chile paste (such as sambal oelek)
2 teaspoons grated fresh ginger
1 teaspoon soy sauce
⅓ cup seasoned rice vinegar
½ lime, juiced
1 teaspoon fish sauce
1 teaspoon hot chile paste (such as sambal oelek)

Steps:

  • Score the skin side of each piece of chicken 2 to 3 times, about 1/8 inch deep.
  • Whisk together the the juice of 1/2 lime, 1 tablespoon fish sauce, garlic, 1 tablespoon rice vinegar, Chinese five-spice powder, 2 teaspoons hot chile paste, ginger, and soy sauce in a bowl. Pour into a resealable plastic bag. Add chicken, coat evenly with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator for 6 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove chicken halves from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Reserve marinade mixture in a small bowl.

  • Grill chicken, skin-side down, on the preheated grill for 2 minutes. Turn each piece, brush with reserved marinade mixture, and move to indirect heat.
  • Grill, brushing with glaze and turning ever 10-15 minutes, until well-browned and meat is no longer pink in the center, about 45 minutes total. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 180 degrees F (82 degrees C).
  • Drizzle vinegar lime juice mixture over the chicken and serve.

Grilled Five-Spice Chicken Thighs with Soy-Vinegar Sauce & Cilantro image

Provided by Pamela Anderson

Categories     Main Course

Yield 4-6

Number Of Ingredients 11

2 Tbs. Chinese five-spice powder
1 Tbs. plus 1 tsp. dark brown sugar
1 tsp. garlic powder
3/4 tsp. kosher salt
2 Tbs. soy sauce
2 tsp. rice vinegar
1 tsp. Asian sesame oil
1/4 tsp. crushed red pepper flakes
2-1/2 lb. boneless, skinless chicken thighs (about 8 large, 10 medium, or 12 small), trimmed of excess fat
2 Tbs. vegetable oil; more for the grill
3 Tbs. chopped cilantro

Turn and continue to grill until well marked on the other sides and cooked through, 5 to 6 min. longer for large thighs or 4 to 5 min. for medium and small thighs.
  • Move the thighs to a serving dish. Drizzle with about half of the soy mixture, sprinkle with the cilantro, and toss to coat. Let rest 4 to 5 min., tossing once or twice. Serve hot, warm, or at room temperature, with the remaining soy mixture passed at the table.

CHINESE FIVE SPICE CHICKEN (五香烤鸡)

Chinese Five Spice Chicken (五香烤鸡) image

Tender, juicy and thoroughly flavoured, Chinese five spice chicken brings roast chicken to a new level. Learn how to cook it perfectly.

Provided by Wei Guo

Categories     Main Course

Number Of Ingredients 9

1 free range chicken (about 1.8kg/4 lbs )
2 tsp salt
¾ tsp five spice powder
¼ tsp garlic powder/garlic granule
¼ tsp ground white pepper
1 tsp dark soy sauce
1 tsp Shaoxing rice wine (optional)
1 tbsp honey
½ tsp dark soy sauce

Steps:

  • Place the chicken over a large tray with the breasts down and the legs towards you. Find its backbone in the middle. Use kitchen scissors/shears to cut along both sides of the backbone, separating it from the ribs (see images for reference in the post above).
  • Flip over the chicken so that the breasts are facing up. Use the palm of your hand to firmly push the middle of the chicken until it's completely flattened.
  • Pat dry the whole chicken with kitchen paper to remove any moisture.
  • Mix salt, five spice powder, garlic powder and white pepper in a bowl. Rub half of the mixture over the cavity side.
  • Flip over the chicken. Mix dark soy sauce and Shaoxing rice wine. Rub it over the skin side. Then spread the rest of the dry mix. Massage to evenly distribute.
  • Leave to rest uncovered in the fridge overnight (12-24 hours).
  • One hour before cooking, take the chicken out of the fridge and allow it to come back to room temperature.
  • Preheat a fan-assisted oven at 390F°/200C°, or 425F°/220C° if using a conventional oven.
  • Use a roasting tray with a wire rack that fits inside. Fill the tray with some water (lower than the rack) and put the chicken on the rack (skin facing up). Place the tray in the middle of the oven. Leave to cook for 15 minutes.
  • Turn the oven down to 320F°/160C° (or 350F°/180C° if using a conventional oven). Continue cooking for a further 20 minutes. If your chicken is a little bigger or smaller, increase or reduce the time by 5 minutes or so (Check the water level in the tray and top up if necessary).
  • Take out the chicken. Mix honey and soy sauce then brush a thin layer over the skin. Put back into the oven. Cook for another 5 minutes.
  • Turn the heat back up to 390F°/200C° (or 425F°/220C° for a conventional oven). Take out the chicken and brush a second time. Roast for 5 more minutes to finish.
  • Check the doneness (see footnote to learn how). Then take the chicken out and leave to rest for 10 minutes before carving into small pieces to serve.

  • To make the spice rub, combine the garlic, ginger, vegetable oil, sesame oil, soy sauce, brown sugar, and 5 spice powder in a small bowl. Stir until combined. (Grate the ginger using a small holed cheese grater, or mince with a knife.)
  • Rub the spice mixture all over the chicken pieces, getting between the skin and meat whenever possible.
  • Dice the onion and place it in the bottom of the slow cooker. Pour the rice wine over the onion, then layer in the chicken pieces. Make sure the chicken pieces are closely packed in the cooker. Cover the slow cooker and cook on high for four hours.
  • After four hours, the chicken will be very soft and tender. Use tongs to carefully remove the chicken from the liquid in the slow cooker and place them on a baking sheet. Adjust your oven rack so that the top of the chicken will be 5 inches from the broiler (the broiler's heat element is usually on the roof of your oven). Broil the chicken on high for 5 minutes, or until the skin is brown and crispy. Keep a close eye on the chicken while it's under the broiler because every broiler is slightly different and it can burn quickly.
