2 Tbs Vegetable Oil
10 Ounce Boneless Chicken Breast (Cubed)
1 Tbs Minced Garlic Clove
1/4 cup Asparagus
1 Tbs Sriracha or Any Red Hot Sauce
2 Tbsp Soy Sauce (Gluten free variety)
1 Tbs Brown Sugar
1 Tbs Fish Sauce
Salt and Pepper to Taste
Chopped Green Onion for Garnish

Steps:

  • Soak rice noodles in warm water for 15-20 minutes/as per package instruction.
  • In a pan or wok heat oil.
  • Add chicken pieces. Fry for 30 Seconds.
  • Add minced garlic. Stir for 30 seconds.
  • Then add asparagus followed by hot red sauce, soy sauce and brown sugar.
  • Add soaked rice noodles.
  • Season with fish sauce.
  • This fish sauce is gluten free, doesn't have any added water, or preservatives.
  • Toss everything well on high heat, until the noodles is coated well.
  • Sprinkle chopped Green Onion.
  • Serve immediately.

1/2 lb rice noodles
2 tablespoons oil
6 garlic cloves, minced
1 lb boneless skinless chicken, thinly sliced
1 tablespoon chili-garlic sauce
1 tablespoon fish sauce or 1/2 teaspoon salt

1 tablespoon brown sugar
1/2 lb asparagus spear, cut into 2 inch pieces

Steps:

  • Pour noodles into bowl and cover with VERY HOT tap water. Soak for 15-20 minutes.
  • Heat oil in large skillet over medium-high heat.
  • Add garlic and stir fry until golden.
  • Add fish sauce or salt and chicken.
  • Stir fry until done.

4 boneless, skinless chicken thighs (about 1 pound)
3 tablespoons canola oil
Salt and freshly ground black pepper
2 tablespoons minced garlic
1/4 cup cilantro leaves
2 limes, 1 zested and 2 juiced
2 tablespoons seasoned rice vinegar
2 tablespoons canola oil
1-inch chunk ginger, peeled and grated (about 1 tablespoon)
1 lime, zested and juiced
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 cup chicken stock
Salt and freshly ground black pepper
1 tablespoon Thai green curry paste
1 tablespoon seasoned rice vinegar
3 scallions, white and green parts, chopped, for garnish
1 pound spaghetti, cooked al dente and sprayed with canola oil spray
1 carrot, shredded
1/4 cup crushed roasted peanuts

Steps:

  • For the chicken: Combine all the ingredients in a nonreactive bowl and let stand at room temperature for 20 minutes. Prepare a grill pan to medium-high heat and place the chicken thighs on the pan, cooking for 4 minutes per side.
  • For the noodles: In a medium saute pan over medium heat, add the canola oil. Add the ginger, lime zest and juice, garlic, red pepper flakes and chicken stock. Stir all to combine and sprinkle with salt and pepper. Add the curry paste, seasoned rice vinegar and scallions. Reduce the heat to low and simmer for 2 minutes.
  • Place the noodles in a large serving bowl along with the carrots and crushed peanuts and toss well to combine. Add the cilantro chicken and serve.

1/4 cup neutral oil, like corn or canola
1/3 pound boneless chicken, shredded or cut into small dice
1/2 to 1 cup bean sprouts
1/2 cup sugar snap or snow peas, slivered
1/2 cup shiitake mushroom caps, sliced
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons rice wine or white wine
1 egg, lightly beaten
3 or 4 scallions, trimmed and slivered, for garnish

Steps:

  • Cover noodles in hot water while preparing the other ingredients. Heat a pot of water until steam rises.
  • Put all but a tablespoon of the oil in a wok or large skillet, and turn heat to high. When it smokes, add the chicken, and stir until it loses its color; it doesn't cook through. Remove with slotted spoon.
  • Add bean sprouts, peas and shiitakes. Stir until wilted and beginning to brown. Add sauces and wine. Remove from the pan.
  • Drain noodles, and dip them in the boiling water with tongs or in a strainer for about 5 seconds. Drain. Add remaining oil and the egg to pan, still over high heat. Stir to scramble. Add drained noodles and cooked ingredients, and toss, lifting (scrape, if necessary) repeatedly until all are mixed together and hot. Garnish, and serve.

1 cup or more fresh shiitake mushrooms, sliced

2 to 3 cups fresh bean sprouts
1/2 cup chicken stock (or simulated chicken stock for vegetarians)

2 1/2 tablespoons oil
2 teaspoons cornstarch dissolved in 3 tablespoons soy sauce
STIR-FRY SAUCE:
1 tablespoon soy sauce (use wheat-free soy sauce for gluten-free diets)
1 teaspoon dark soy sauce (gluten-free diets substitute 1 tablespoon wheat-free soy sauce)
1 tablespoon fish sauce (vegetarians substitute 1 1/2 tablespoons soy sauce)

Steps:

  • Marinate the chicken or tofu by pouring the cornstarch/soy sauce mixture over and stirring well. Set aside. Soak rice noodles in a pot of hot water 5 to 12 minutes, or just until noodles are soft enough to eat, but still firm and a little bit 'crunchy' (they will finish cooking later). Drain and briefly rinse noodles with cold water to keep from sticking. Set aside. Combine all stir-fry sauce ingredients, mixing them together in a cup. Set aside. Heat a wok or large frying pan over medium-high heat. When hot, add 2 tablespoons oil and swirl around, then add the garlic, ginger, chicken or tofu (together with the marinade), mushrooms, and a few tablespoons of stock. Stir-fry 5 minutes, or until chicken or mushrooms are cooked. When pan becomes dry, add a little more chicken stock, 1 t 2 tablespoons at a time - enough to keep the ingredients sizzling. Stir-fry in this way until the sauce is well distributed throughout the noodles (1 to 2 minutes). Add bean sprouts, continuing to stir-fry another minute. Remove from heat and taste-test for salt/flavor, adding 1 tablespoon more fish sauce or soy sauce if not salty enough. If too salty, add another squeeze of lime juice. To serve, lift noodles out of the wok or frying pan and mound on a serving platter. Sprinkle with fresh coriander and garnish with wedges of fresh-cut limes. 1/2 cup roasted cashews, chopped
1/2 cup toasted coconut
1/2 cup chopped fresh cilantro
6 hot Thai chiles, minced (optional)

Steps:

  • Heat water for noodles and cook pasta 6-8 minutes (stir-fryable) or according to package directions.
  • Drain noodles, rinse under cool water and allow to drain; cut into smaller pieces if desired.
  • Meanwhile, toast coconut if necessary.
  • Using a whisk, mix together ingredients for sauce: coconut milk, peanut butter, soy sauce, fish sauce, garlic, curry powder, brown sugar, and cayenne pepper.
  • Heat oil in large pan until almost smoking.
  • Add chicken and stir-fry until almost done and nicely browned.
  • Add bell pepper and cook 1-2 minutes.
  • Add mushrooms and cook until they are tender.
  • Add chopped scallions, basil, and the juice of the lime and cook briefly.
  • Stir in sauce mixture and allow to heat.
  • Add cooked noodles and chopped cilantro and toss until thoroughly coated.
  • Allow to heat through then remove from heat.
  • Serve garnished with toasted coconut, chopped cashews, and minced chiles.

½ red bell pepper, chopped
½ cup chopped onion
½ cup chopped mushrooms
3 cloves garlic, minced
2 teaspoons minced fresh ginger
1 teaspoon red pepper flakes, or more to taste
1 large skinless, boneless chicken breast, sliced
½ (14.5 ounce) can chicken broth
½ cup peanut butter
½ cup chopped peanuts
¾ cup 1-inch pieces fresh green beans
½ (8 ounce) package egg noodles

Steps:

  • Heat vegetable oil in a saucepan over medium heat. Add red bell pepper, onion, mushrooms, garlic, ginger, and red pepper flakes; cook and stir until softened, about 5 minutes. Transfer to a plate.
  • Cook and stir chicken in the same saucepan until no longer pink in the center, about 5 minutes. Return red bell pepper mixture to the saucepan. Add chicken broth, peanut butter, and peanuts. Simmer over low heat, stirring occasionally, until sauce is smooth, about 5 minutes.
  • Bring a pot of salted water to a boil. Add green beans and egg noodles; cook until egg noodles are tender, about 6 minutes. Drain. Stir green beans and egg noodles into the chicken and sauce mixture.

2 cups shredded cabbage
1 cup julienned carrots
1/2 cucumber, peeled, quartered and sliced lengthwise
1 red bell pepper, cored, seeded and cut into thin strips
1/4 cup chopped scallions
2 cups chopped skinless roasted chicken
1/4 cup chopped fresh basil
1/4 cup chopped fresh mint
1/4 cup fresh lime juice
1/4 cup seasoned rice vinegar
3 tablespoon sugar
4 teaspoon fish sauce
1/4 teaspoon Asian chile paste
1 tablespoon peanut oil

Steps:

  • Bring lightly salted water to a boil in a medium pot; cook noodles 3 minutes. Place cabbage in a colander and drain noodles over cabbage; immediately rinse with cold water. Drain again. Toss cabbage and noodles in a bowl with carrots, cucumber, pepper, scallions and chicken. Whisk basil, mint, juice, vinegar, sugar, fish sauce, chile paste and oil in another bowl; drizzle over noodle mixture; toss and divide among 4 bowls.

3/4 lb rice noodles
3 tablespoons vegetable oil
1 teaspoon garlic powder
1/2 lb white button mushrooms
1 1/2 lbs boneless skinless chicken breasts, thinly sliced
1 1/2 tablespoons sriracha sauce
1 1/2 tablespoons fish sauce
3 tablespoons soy sauce
1 1/2 tablespoons brown sugar
1 lb broccoli floret

Steps:

  • Slice chicken.
  • Clean and slice mushrooms.
  • Heat oil in skillet on medium.
  • Place rice noodles into bowl & cover with very hot water.
  • Add garlic and mushrooms to skillet & cook until mushrooms are almost tender (~3 minutes).
  • Add fish sauce and chicken to skillet.
  • Fry until chicken is done.
  • Add soy sauce, sriracha and brown sugar. Stir until sugar is dissolved.
  • Add Broccoli.
  • Drain Noodles.
  • Transfer chicken/broccoli mixture out of pan (leaving juices) & add noodles to pan.
  • Fry noodles for 3-4 minutes.
  • Add noodles to chicken/broccoli mixture & toss.
  • Serve hot.

1/3 cup stir-fry sauce
2 tablespoons honey
1/4 teaspoon crushed red pepper flakes
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 medium sweet red pepper, julienned
1 medium onion, cut into thin wedges
1 tablespoon minced fresh cilantro
1 to 2 teaspoons sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small bowl, combine the stir-fry sauce, honey and red pepper flakes; set aside., In a large skillet, saute chicken in oil until browned and no longer pink. Add red pepper and onion; cook for 2 minutes or until vegetables are crisp-tender. Stir in sauce mixture. Add cilantro and cook for 1 minute., Drain pasta; toss with sesame oil. 4 ounces dried rice noodles, medium size
1/4 cup vegetable oil
2 -3 cloves finely minced garlic
3 tablespoons chopped raw shrimp
3 tablespoons ground lean pork
1 teaspoon sugar
1 tablespoon fish sauce
1 teaspoon soy sauce
2 teaspoons hot chili sauce
2 beaten eggs
2 tablespoons tamarind paste
1/4 cup bean sprouts
1 sliced scallion
2 tablespoons coarsely ground salted peanuts or 2 tablespoons unsalted peanuts
2 tablespoons green onions, sliced

Steps:

  • Soak the noodles in hot water for 20 minutes, or until soft; drain.
  • Heat oil in a wok or large skillet, saute until golden.
  • Add in the shrimp and ground pork, and stir-fry until lightly browned.
  • Add the sugar, fish sauce, soy sauce and chili sauce, stir-fry until the sugar dissolves.
  • Pour in the beaten eggs, let them set slightly then stir to scramble.
  • Add in the noodles and stir-fry for about 2 minutes.
  • Push noodles to side of wok or skillet then add in the Tamarind sauce, cook for 1 minute.
  • Add in the bean sprouts, scallions, and stir-fry until bean sprouts are slightly cooked (about 1 minute).
  • Stir the noodles down to middle of wok and stir-fry until well mixed.
  • Sprinkle with chopped peanuts and sliced green onions before serving.

1/4 cup vegetable oil
3 purchased roasted chicken breast halves, boned, skinned, shredded

1 cup red bell pepper strips
1/2 cup thinly sliced red onion

Steps:

  • Cook noodles in small pot of boiling salted water until tender, about 3 minutes. Drain; cut noodles in several places with scissors. Spread out on platter.
  • Puree next 7 ingredients in blender. With machine running, gradually add oil and blend until dressing is smooth. Season to taste with salt and pepper.
  • Combine chicken, cabbage, carrot, pepper, onion, and cucumbers in large bowl. Toss with enough dressing to coat. Arrange atop noodles, sprinkle with peanuts, and serve, passing remaining dressing alongside.

2 tablespoons sesame oil, divided

1 (8 ounce) package snow peas, trimmed and halved
2 carrots, julienned
3 tablespoons mild curry powder
4 green onions, sliced
2 tablespoons soy sauce
¼ cup unsalted, dry roasted cashews

Steps:

  • Place chicken stock in a saucepan over medium-high heat and bring to a boil, about 5 minutes. Remove from heat, add vermicelli noodles, and toss until noodles have softened slightly. Cover and let soak for 5 minutes, stirring occasionally.
  • Meanwhile, heat 1 tablespoon sesame oil in a wok over high heat. Add chicken in batches, and cook until golden on the outside and no longer pink on the inside, 3 to 5 minutes per batch. Transfer chicken to a plate.
  • Heat remaining 1 tablespoon sesame oil in the wok. Add onion; cook and stir until soft, about 2 minutes. Add snow peas, carrots, and curry powder; cook and stir for 2 minutes.
