Tired of boring old meat loaf? Well give this one a try. My husband won't eat any other meat loaf but mine.

1 ½ pounds lean ground beef
½ cup crushed buttery round crackers
¾ cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
¼ cup ketchup
2 tablespoons steak sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
  • Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

1/2 cup crushed round buttery cracker
3/4 cup shredded cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
  • Bake in preheated oven 45 to 60 minutes, until no longer pink.

As it seems like eveyone's else's recipie is, this recipe was passed down through my mom. I like to use a combination of lean and not-so-lean ground beef for this recipe. Personally, I use a 2:1 ratio of 90% lean and 80% lean ground beef. I suppose some may prefer to include mushrooms in the meatloaf, but that has never suited me. Although it's a lot messier, mixing the recipe with your hands provides an even consistency. I always serve this meatloaf with my version of Beef Succotash.

2 1/2 lbs ground beef
2 -3 large eggs
1 teaspoon Lawry's Seasoned Salt (heaping)
1/2 teaspoon onion salt (heaping)
1/2 teaspoon black pepper
1 dash garlic powder
6 ounces mushroom gravy, Heinz Home Style Rich Mushroom Gravy (strained)
1 1/4 cups breadcrumbs
black pepper (optional)

Steps:

  • In a large bowl, mix ground beef and eggs.
  • Using a screen, add mushroom gravy to meat. I use a screen to strain mushrooms out of the gravy. Try to add as much gravy as possible without adding mushrooms.
  • Add season salt, onion salt, black pepper, and garlic powder. Mix well.
  • Add bread crumbs until meat forms a ball that doesn't stick to the bowl.
  • Shape into a loaf and place in a greased 3 quart loaf pan.
  • For a crispier crust (and more flavor) sprinkle top of loaf with black pepper.
  • Bake for 75 minutes at 375°F.
  • Remove meatloaf from pan, place on platter, and serve.

  • Preheat oven to 350*.
  • Combine all ingredients.
  • Mix well.
  • Pres firmly into 8in loaf pan.
  • Bake for 1 hr, 10 minutes.
  • Drain.
  • Let stand 10 minutes before serving.

This is the result of changes I had to make to a recipe I got from the Zaar. It was very good and I would like to be able to duplicate it again.

2 lbs ground beef
1 1/2 cups crushed saltines (1 row plus 8 crackers)
1 teaspoon salt
1 teaspoon Emeril's Original Essence, original
1 1/2 teaspoons beef bouillon powder
1/3 teaspoon black pepper
2/3 cup tomato sauce (or use tomato paste cut in half with water)
1 large sweet onion (vidalia, Walla Walla, or Texas sweet)
1/2-3/4 teaspoon canned garlic (from jar)
3 large eggs
1/2 cup ketchup
2 tablespoons packed brown sugar
1/2 cup water
1 1/3 tablespoons prepared mustard
1 1/3 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 325.
  • In a very large bowl put hamburger, crackers crumbled,salt, essence, boullion powder, and black pepper - set aside.
  • Cut onion into larger pieces and put it in the food processor with the garlic -- pulse until pieces are small. Dump onion mixture into the bowl with the meat.
  • Beat the three eggs (in the food processor if you don't want to dirty a bowl) and add them to the meat bowl.
  • Add the tomato sauce to the meat bowl and use your hands to mix all very well (I like to wear rubber gloves to save on clean-up time).
  • Divide meat mixture in half. Form into two loaves on the botton of your broiler pan or a roasting pan. Leave room between loaves for even baking.
  • In smaller bowl mix together with a fork; ketchup, brown sugar, water, mustard and cider vinegar. This is your topping -- Brush tops and sides of loaves with this before baking and again while baking.
  • Bake for 1 hour and 15 minutes to 1 hour and 25 minutes.
  • When I remove the pan from the oven I like to pour off the excess oil in the bottom of the pan. Let cool for about 5 minutes before serving. Slice thick and pieces should hold together well.

1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce
Glaze: 3T Ketchup,1T Honey,& 1/2 t Worch. OR Sub Chili Sauce for Ketchup, sub Cheese Crackers,pepper jack crackers, lemon juice
sub Minced Onion for soup mix
Don't forget that you can add pork and/or veal to receipe.
Green Chiles
Mushroom Gravy
1 Can Manwich
Caramelize Onions
TIP: Put 2 pieces of white bread under loaf to absorb grease...discard after cooking.

(no chopping) Mix thoroughly with hands (this is really a trade secret) shape into a flattened oval shape and cook on a rack over a 3" deep pan to catch the drippings. Cook at 350 degrees for 1 hour and 15 min. Let rest for 20 minutes before cutting. YUM! Our G'kids won't eat anything that has been near ketchup, (how weird is that?) So I came up with a variation that they absolutely love. No problem with getting them to eat veggies either. They use them to temper the moderate heat in this dish. Preheat oven to 350 degrees F (175 degrees C). 2. Mix items everything together, (I use the stand mixer.) Press mixture into a well greased bread pan. 3. Bake for about 30 minutes and drain off the grease. Brush the top with sweet chili sauce and return to the oven for 20 minutes. Let the loaf rest for at least 10 minutes. My favorite meatloaf recipe is chopped meat add diced onions with garlic powder, ketchup, mustard, worchestire sauce, eggs, bread crumb, parsley, oregeno. Then after I shape it I slice an opening in the top and put 3 slices of cheese in close it up and lay a few slices of bacon on top. I top it with tomato sauce but u can use gravy if u want. Comes out amazing! Growing up in Sweden my mom made stuffed meatloaf and that's what I make and have got many compliments for it. Use your basic recipe, eggs, breadcrumbs, onion ( I grate mine) garlic, salt, pepper. When it's all mixed I flatten it out on a cutting board and put a liberal amount of chopped ham or bacon, ( if you use bacon be careful with the salt) then slice sharp cheddar and put over the ham. Fold up the sides and ends, making sure it sealed tight so the cheese doesn't leak out. Bake and enjoy! I found the Interstate Meatloaf recipe so here it is: Classic Interstate Meatloaf recipe is ready in 1-2 hrs INGREDIENTS: 3 tablespoons unsalted butter 2 cups finely chopped onion 1 bell pepper finely chopped 1 celery rib finely chopped 1 teaspoon dried thyme crumbled 2 pounds ground beef 1/2 cup rolled oats 2/3 cup ketchup 2 eggs beaten 2 teaspoons salt 1 1/2 teaspoon black pepper 4 slices bacon halved ;In a skillet melt butter over medium heat. Add onion, bell pepper, celery and thyme. Cover and cook 10 minutes; stirring often. Remove from heat and cool. Heat oven to 350 degrees F. In a large bowl combine ground beef, onion mixture, oats, 1/3 cup of the ketchup, egg, salt and pepper. Mix thoroughly. Spoon mixture in to a large shallow baking dish. Shape it in to a flat loaf. We also had a restaurant, over 31 years. 1 1/2# hamburger, 1# pork sausage, 1 egg, 4 hard-boiled eggs, 3 slices white bread soaked in milk, then squeezed, small can tomato sauce, 1 clove garlic finally chopped, 1/2 onion grated, salt and pepper to taste. Mix all ingredients well (except hard boiled eggs) Pat out flat on wax paper. Lay four peeled hard-boiled eggs on top. Then roll meat around them into a loaf. Put in pan. Pour smalll can tomato sauce over loaf. Bake 350 about an hour. Serve hot or cold.
