Restaurant worthy! Use to marinate pork, chicken or fish...don't forget wings. One recipe yields enough marinade for approximately one pound of meat.

Number Of Ingredients 5

2 teaspoons black peppercorns, ground fresh (can sub tricolored mix)
5 -6 large garlic cloves, coarsely chopped
1/4 cup coarsely chopped cilantro, with tender stems
2 tablespoons soy sauce or 1 teaspoon Thai fish sauce
1 tablespoon mild vegetable oil (or amount to desired consistency)

Steps:

  • With a mortar and pestle, grind together ground peppercorns and garlic. Add cilantro and work into a paste. Stir in soy sauce (or fish sauce) and vegetable oil until evenly mixed. This may, also, be done in a small food processor or food grinder. Keeps up to 4 days.
  • In a 1-gallon ziplock bag, combine marinade and chicken, pork or fish pieces, messaging to evenly coat; chill 1-2 hours or overnight. Please, don't forget to season with salt before grillling.

3/4 cup roasted peanuts
4 Serrano chiles
3 cloves garlic
1 tablespoon minced ginger
Juice of 3 limes
2 tablespoons fish sauce (3 Crab brand)
1/2 cup peanut oil (Lion and Globe brand)
1/2 tablespoon salt
1 tablespoon sugar
2 cups Thai basil leaves
1 cup cilantro leaves
1 cup mint leaves
Canola oil
12 large shrimp, peeled, deveined, tail on
Salt and black pepper to taste
1 head baby romaine chiffonade

Steps:

  • In a food processor: puree peanuts, chiles, garlic, ginger, lime juice, fish sauce, oil, salt and sugar until smooth. Do not overmix as you can heat the mixture. Add the herbs and puree smooth. Check for seasoning. Oil shrimp on both sides and season. Grill on both sides for about 5 minutes total.
  • Place a layer of romaine on a plate. Lay 3 grilled shrimp on top and liberally drizzle with pesto.

I searched for something similar, but could find nothing, so I finally came up with this. I've used my own pesto recipe (Recipe #242383) and store bought pesto, and both work well. One cup of marinade is enough for four boneless, skinless chicken breasts

1/4 cup pesto sauce
1/4 cup lemon juice
2 garlic cloves, smashed
fresh ground black pepper

Steps:

  • Mix all ingredients together.
  • Marinate chicken for at least an hour, more is better! For shrimp, don't marinate too long--the lemon will "cook" the shrimp. It doesn't ruin it, but it changes the texture a bit.
  • Brush marinade on meat while it's cooking. (Discard garlic chunks).
  • Works well with chicken, shrimp, and firm white fish. I think it would be good with pork tenderloin, but I haven't made that yet!
