This sweet syrup goes with recipes for Recipe #194607 and Recipe #194583. All recipes originated with Cooking Light.

1 1/2 cups sugar
750 ml ruby port or 750 ml other sweet red wine
2 cups fresh cranberries or 2 cups frozen cranberries
1 tablespoon thawed orange juice concentrate
1 teaspoon chopped peeled fresh ginger
3 garlic cloves, chopped

Steps:

  • Combine the sugar and the port in a Dutch oven. Bring to a boil, and cook for 4 minutes or until the sugar dissolves. Add the cranberries, orange juice, ginger, and garlic, and cook over medium heat until reduced to 3 cups (about 20 minutes).
  • Press the cranberry mixture through a fine sieve over a bowl, discarding solids.
  • Serve with Spice-Rubbed Smoked Turkey (Recipe #194607) and Roasted-Pear Stuffing (Recipe #194583).
  • Note: Cranberry Syrup can be stored, covered, in refrigerator up to 1 week.

2 1/2 cups cranberry juice
1 cup cranberries
3/4 cup light corn syrup
1/4 cup granulated sugar
1 pinch ground cinnamon (optional)

Steps:

  • In medium saucepan, mix all ingredients, stirring until sugar is dissolved.
  • Over medium-high heat, bring to rolling boil, then reduce heat to medium & boil 30-40 minutes or until reduced to about 2 1/2 cups.
  • IF YOU DO NOT WANT THE BERRIES IN THE SYRUP (I prefer leaving them in!), pour syrup through mesh strainer & discard cranberries!
  • Store syrup covered in glass container in refrigerator no longer than 7 days!

Steps:

  • Equal parts of sugar and water are warmed until dissolved, then add two parts of cranberries. Simmer for a couple of minutes, let it cool, then strain through cloth.
  • Can also be replaced with simple syrup and cranberry juice.
  • Store in refrigerator up to two weeks. If it last that long.

2 cups Bisquick
1 egg
1 cup milk
2 cups jellied cranberry sauce, separate 1/2 cup
butter
2 tablespoons light corn syrup

Steps:

  • Combine Bisquick, egg and milk in a mixing bowl and beat with mixer until smooth.
  • Fold in the 1/2 cup of cranberry sauce.
  • Heat butter, as needed in griddle and pour 1/4 cup of batter into pan to make pancakes.
  • When bubbles appear around the edges, flip over until done.
  • Meanwhile make the cranberry syrup. Heat the 1 1/2 cups of cranberry sauce left and the corn syrup in a saucepan on low heat for 10 minutes. Serve with the pancakes. Enjoy.

1 cup fresh cranberries
1 cinnamon sticks or 1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup pure maple syrup

  • In medium saucepan, combine juice, cranberries, cinnamon, and cloves, and simmer 15 minutes or until cranberries pop.
  • Add maple syrup, and simmer for an additional five minutes.
  • Serve warm.
