Crispy and juicy chicken pieces flavored with garlic and coriander. The Thai Fried Garlic Chicken is absolutely lip-smacking. Check out my quick and easy version of the popular Thai street food.

250 gms boneless chicken breasts
Oil for deep frying
1 tsp fried garlic for garnish
1 tsp chopped green coriander leaves for garnish
2 tbsp chopped garlic
5 tbsp chopped coriander stems
10 crushed black peppercorns
1 tbsp oyster sauce
1 tbsp fish sauce
1 tsp light soy sauce
2 tsp cumin powder
1/4 tsp turmeric powder
1/2 tsp sugar
1 cup cornflour
1/2 cup rice flour

Steps:

  • Cut the chicken breast into bite-sized pieces.
  • Coarsely blend the garlic and coriander stems.
  • To marinate the chicken, add the coarsely ground paste, crushed black peppercorns, oyster sauce, fish sauce, light soy sauce, cumin powder, turmeric powder, and sugar. Mix well and keep aside to marinate for 10-15 minutes.
  • Mix together cornflour and rice flour for dredging in a large bowl. Season it with a teaspoon of salt.
  • Add in the marinated chicken and mix until the pieces are well coated. Dust off the excess flour.
  • Heat oil for deep frying. Fry the chicken pieces on medium heat until cooked and golden brown.
  • The Thai Fried Garlic Chicken is ready to serve. Garnish with fried garlic and chopped coriander leaves. Serve hot with red chili sauce.

3 tablespoons garlic, roughly chopped
2 teaspoons coriander, roots
1/4 teaspoon salsify
3 red fresh chili peppers, chopped
1 tablespoon caster sugar
1 teaspoon ground turmeric
1 teaspoon curry powder
3 tablespoons fish sauce
1 1/2 kg chicken thigh fillets
vegetable oil (for frying)
1/4 cup coconut milk, to serve (optional)

Steps:

  • Pound the garlic,coriander root and salt in mortar and pestle.
  • Add the chilie peppers, sugar, turmeric and curry powder and pound to a fine paste.
  • Add the fish sauce to the paste and marinate the chicken for 2 hours.
  • Heat a little veg oil in a wok/large saucepan,add the chicken and fry until a good crust forms.
  • Reduce the heat and continue stir-frying until the chicken is cooked through.
  • Serve with coconut milk spooned over the top--optional.

This may sound like a lot of garlic, but the end result is delicious. This is my favorite chicken recipe as it is so easy and full of wonderful Thai flavours. Cook this in a ridged grill pan and serve with green ginger rice and fiery corn.

4 boneless chicken breasts
4 cloves garlic, sliced thinly or crushed
1 tablespoon fresh ginger, grated or finely chopped
1 limes, juice and rind of
3 tablespoons sunflower oil
1 tablespoon dark soy sauce
1 -2 red chile, de-seeded and thinly sliced
1/2 tablespoon dried coriander
1/4 cup cashews
2 portabella mushrooms, sliced

Steps:

  • Cut gashes into chicken, through skin if present
  • Mix all the ingredients for the marinade in a deep glass bowl
  • Put the chicken pieces in the bowl, making sure to coat each piece thoroughly and press into gashes
  • Cover and leave the chicken in the marinade at least 2 hours; mix it around at some point during this time using 2 forks
  • Next cook the chicken with the cashews and mushrooms in a foil-lined oven pan at the top of a hot oven (250c) for 20-30 minutes, or grill/broil it, or cook on the BBQ at medium heat for 15-20 minutes until cooked through
  • Keep basted with the marinade while cooking
  • Serve with buttered rice, perhaps some wild rice mixed in, along with fresh greens and a salad
